LAMB - SLOW ROASTED LAMB SHANKS WITH GARLIC AND ROSEMARY

Lamb - Slow Roasted Lamb Shanks with Garlic and Rosemary image

Slow-roasted lamb shanks are such a great cold weather meal. They are full of flavor, and extremely easy to make. This recipe has only a few ingredients, but thanks to the long, slow cooking, it results in succulent, fork-tender lamb.

Provided by qwertz

Categories     Main Dish

Time 4h

Yield 4

Number Of Ingredients 7

2 Lamb Shanks (approx. 14 oz each)
olive oil
Salt
Black Pepper fresh ground
5 cloves fresh Garlic (up to 6 cloves) sliced and crushed
5 sprigs fresh Rosemary (up to 6 sprigs)
5 sprigs fresh Thyme (up to 6 sprigs)

Steps:

  • Preheat oven to 450? F (205? C). Line an oven baking dish or pan with foil and place the lamb shanks within. Sprinkle olive oil over the flesh to coat so the spices stick (1-2 tbsps), and then sprinkle with salt and pepper. Roast uncovered in the hot oven for 30 minutes. Remove the pan and turn oven down to 200? F (93? C). Spread the Garlic, Rosemary and Thyme evenly around the Lamb shanks. Close the foil to seal in all juices and then wrap again in foil to ensure that it is well sealed. Cook slowly for three (3) hours in the slow oven. Scrape off the spices and serve. Strain the juice and pour over the meat. Serve with favourite potatoes and vegetables. Tender and delicious!

Time 8h30m

Yield 4-6 serving(s)

Number Of Ingredients 18

6 lamb shanks, about 14 ounces each
salt and pepper
1 onion
1 large turnip (or rutabega)
1 carrot
2 celery ribs
1 head garlic
1/4 cup olive oil
1 bunch thyme
1 rosemary sprig
1 teaspoon fennel seed
1 teaspoon coriander seed
1 teaspoon whole black peppercorn
1 bay leaf
3 parsley sprigs
1 (750 ml) bottle dry white wine
1 quart chicken broth or 1 quart lamb stock
chopped parsley (to garnish) (optional)

Steps:

  • Preheat the oven to 475 degrees.
  • Rub the shanks with salt and pepper, then place them meaty-side up in a roasting pan.
  • Roast for 25 minutes, or until nicely browned.
  • Remove from oven.
  • Reduce oven temperature to 250 degrees.
  • Heat the olive oil in a large saute pan over medium-high heat.
  • Add the vegetables and garlic and saute, stirring occasionally, for 15 minutes, or until the vegetables soften, then caramelize.
  • Stir in the thyme, rosemary, fennel and coriander seeds, the peppercorns, bay leaf and parsley.
  • Increase the heat to high, add the wine and deglaze the pan, scraping up all the browned bits from the bottom of the pan.
  • Boil until the liquid has reduced by one third.
  • Pour over the lamb, spreading the vegetables over, but not completely covering, the shanks.
  • Add enough of the water, chicken broth or lamb stock to almost cover the meat.
  • Cover the pan with aluminum foil and roast for 7 hours, basting with the pan juices every hour or so, and adding liquid as needed.
  • Remove the foil during the last 30 minutes of cooking.
  • At this point, the lamb should be fork-tender and falling off the bone.
  • Remove the shanks from the pan and let cool to room temperature.
  • Strain the braising liquid, pushing on the vegetables to get all of their goodness and skim off the fat. Best to refrigerate overnight and skim off the solidified fat.
  • When ready to serve, slowly reheat the shanks in the braising liquid.
  • To serve, roast your favorite root vegetables and spoon onto serving plates, center a lamb shank on each plate and spoon a little of the braising liquid over the top.
  • Garnish with parsley, if desired.

Categories     Main Course

Time 2h45m

Number Of Ingredients 8

4 lamb shanks
2 Tbsp olive oil ((extra virgin))
1 tsp each, salt & pepper
1 tsp herbes de provence
1 cup chicken broth ((or lamb broth))
6 cloves garlic ((peeled and crushed))
3 sprigs rosemary
3 sprigs oregano

Steps:

  • Place the lamb shanks into a 9x13 baking dish, or any oven-safe dish that can fit them all snugly. Rub or brush them with olive oil on all sides, then season generously with a blend of salt, pepper, and herbes de provence.
  • Place the baking dish in the oven while it heats to 450°F (232°C). Roast at high heat for 15 minutes, then remove the lamb from the oven and reduce the oven temperature to 325°F (163°C).
  • Add the chicken broth, cloves of garlic, and fresh herbs to the baking dish and cover it with aluminum foil. Overlap the foil so it seals securely and the steam is kept in the dish.
  • Return the lamb shanks to the oven and roast for 2 hours. Remove the lamb from the oven when done and serve right away. Spoon the pan juices over the lamb shanks when serving.

SLOW-ROASTED ROSEMARY GARLIC LAMB SHANKS

Slow-Roasted Rosemary Garlic Lamb Shanks image

This rosemary garlic lamb shanks recipe has only a few ingredients, but thanks to the long, slow cooking, it yields flavorful fork-tender meat.

Provided by John Mitzewich

Categories     Entree     Dinner

Time 2h45m

Number Of Ingredients 7

4 lamb shanks
2 tablespoons olive oil
Salt (to taste)
Fresh ground black pepper (to taste)
6 cloves garlic (unpeeled, the skin pierced with the tip of a knife)
6 sprigs fresh rosemary
1 cup chicken broth

Steps:

  • Gather the ingredients. Preheat the oven to 450 F.
  • Place the shanks in a roasting pan just large enough to fit them in one layer and rub with the olive oil . Season generously with salt and pepper, or to taste.
  • Roast for 20 minutes to get a nice brown color. Remove from the oven and turn the temperature down to 325 F.
  • While waiting for the oven to cool down, spoon out any excess fat and scatter the garlic cloves and rosemary over and around the lamb.
  • Wrap the braising or roasting pan very tightly with several layers of heavy-duty aluminum foil (remember: you want as tight a seal as possible), and return to the oven. Roast the lamb for an additional 2 hours. Resist the temptation to open the foil and check on it until the 2 hours are up because you'll increase the risk of the meat becoming too tough.
  • Remove the foil, pour in the chicken broth, and turn the heat up to 400 F. Roast for 15 minutes, and remove. The lamb shanks are done cooking when they are nicely browned and fork-tender.
  • Transfer the lamb shanks to a serving platter and spoon over the juices, garlic cloves, and rosemary.

ROSEMARY LAMB SHANKS

Rosemary Lamb Shanks image

This is our favorite recipe for lamb shanks. I always double the sauce because we love to have some over mashed potatoes. The sauce takes a while to make, so you can make it a day ahead if you like. From the Bijou Cafe, Sarasota FL, courtesy of Bon Appetit.

Categories     Lamb/Sheep

Time 2h20m

Yield 6 serving(s)

Number Of Ingredients 13

2 tablespoons olive oil
6 (14 ounce) lamb shanks, trimmed
2 carrots, 1/4-inch diagonal slices
2 stalks celery, 1/4-inch diagonal slices
1 large onion, thinly sliced
3 garlic cloves, chopped
2 cups dry red wine
1 cup low sodium chicken broth, canned
1 cup canned beef broth
2 tablespoons fresh rosemary, chopped or 2 teaspoons dried rosemary
2 bay leaves
2 teaspoons cornstarch
rosemary sprig, for garnish

Steps:

  • Preheat oven to 375ºF.
  • Heat oil in heavy large Dutch oven over medium-high heat. Season lamb shanks with salt and pepper. Working in batches, add lamb to Dutch oven; brown on all sides, about 8 minutes per batch. Transfer lamb to plate. Add carrots, celery, onion and garlic to Dutch oven; saute until light brown, about 4 minutes. Add 1 3/4 cups wine; bring to boil, scraping up any browned bits, about 2 minutes. Add both broths, rosemary and bay leaves. Return lamb to Dutch oven; cover. Cook in oven until lamb is very tender, stirring occasionally, about 1 hour 30 minutes.
  • Transfer lamb shanks to platter. Tent with foil. Strain cooking liquid, reserving vegetables. Discard bay leaves. Return liquid to Dutch oven. Boil liquid until reduced to 1 1/2 cups, about 10 minutes. Mix remaining 1/4 cup wine with cornstarch until smooth. Add to cooking liquid and simmer until thickened, stirring frequently, about 5 minutes. Return lamb and vegetables to Dutch oven. (Can be prepared 1 day ahead. Cover and refrigerate.).
  • Simmer lamb until heated through. Season to taste with salt and pepper. Arrange lamb and vegetables on platter. Spoon sauce over. Garnish with rosemary sprigs and serve.
