- Heat oil in a large Dutch oven over medium-high. Add sausage; cook about 6 minutes, stirring occasionally, until lightly browned. Add onion, celery, bell pepper, garlic, and jalapeno. Cook 5-6 minutes, stirring frequently, until vegetables are softened. Add rice and cook, stirring constantly, 30 seconds.
- Add stock, tomatoes, salt, and cayenne pepper. Bring to a boil; cover, reduce heat to medium-low, and simmer until rice is just tender, 10 minutes. Add shrimp, cover, and cook until shrimp turn pink, about 4 minutes. Remove from heat. Stir in scallions and lemon juice. Garnish with additional scallions.

- In a small saucepan, bring water and broth to a boil. Stir in the bulgur, chili powder and 1/4 teaspoon Creole seasoning. Reduce heat; cover and simmer for 15 minutes or until tender., Meanwhile, in a large skillet, brown sausage in 1 teaspoon oil. Remove and keep warm., In the same skillet, saute onion and green pepper in remaining oil until tender. Add garlic; cook 1 minute longer. Stir in the beans, tomatoes, shrimp, Worcestershire sauce, sausage and remaining Creole seasoning. Cook for 3-5 minutes or until shrimp turn pink. Fluff bulgur with a fork; serve with sausage mixture.

Steps:
- Heat oil in heavy large skillet over medium-high heat.
- Add shrimp and sausage and saute until shrimp just turn pink, about 3 minutes.
- Using slotted spoon, transfer shrimp and sausage to plate.
- Add mushrooms to same skillet and saute until tender, about 4 minutes.
- Stir in cream and worcestershire sauce.
- Simmer until sauce thickens, about 3 minutes.
- Return shrimp and sausage to skillet and simmer until shrimp are cooked through, about 1 minute.
- Season to taste with salt and pepper.
- Divide shrimp and sausage mixture between 2 plates.
- Spoon sauce and mushrooms over.
- Sprinkle with fresh parsley and serve.

SHRIMP AND SMOKED SAUSAGE CORNBREAD CASSEROLE
To save time prepare the cornbread recipe up to 2 days in advance or prepare and freeze the cornbread until ready to use in the recipe, I have only made this stuffing using this cornbread recipe so I cannot say how it would be using another cornbread recipe, I use andouille sausage for this but any dry smoked sausage will do, I prefer andouille --- if your shrimp is small you can leave the shrimp whole, I also add in cayenne for heat :)

- For the cornbread; (the cornbread can be prepared up to a day in advance) set oven to 425 degrees.
- Generously grease a 10-inch oven-proof skillet.
- Place the buttered skillet in the oven to 5 minutes to heat.
- In a bowl combine the cornmeal, flour, sugar, baking powder and salt.
- In another bowl combine the eggs, melted butter and buttermilk; add to the dry ingredients; stir JUST until moistened.
- Transfer the batter to the hot skillet.
- Bake at 425 degrees for about 20-25 minutes, or until golden.
- Cool the baked cornbread and then cut into 1-inch cubes.
- Arrange in a single layer in a 15 x 10-inch baking sheet.
- Bake at 350 degrees for about 15-20 minutes or until lightly browned; set aside.
- For the casserole; butter a 13 x 9-inch baking dish.
- Melt butter in a large skillet over medium heat; add in onion and celery, saute for about 5 minutes or until softened (add in the garlic the last 2 minutes of cooking).
- Add in the uncooked shrimp, sausage, green onions, corn and jalapeno pepper; cook stirring constantly until the shrimp JUST begins to turn pink; remove from heat (the shrimp will still be raw).
- Stir in cumin with cilantro and cayenne (if using) milk and 3 beaten eggs; mix to combine.
- Add in the cubed cornbread; gently mix with a wooden spoon (it does not matter if the cornbread breaks!).
- Season with seasoned salt (or white salt and black pepper).
- Spoon the mixture into prepared baking dish.
- Bake for about 30-35 minutes at 350 degrees.
SMOKED SAUSAGE AND SHRIMP JAMBALAYA
My Louisiana-native boyfriend loves this!! Inspired by a combination of recipes, but tweaked to my own tastes, this makes a medium spicy, saucy jambalaya. I used white sushi rice for an extra creamy, almost risotto-like texture. The addition/omission of the hot pepper and amount of hot sauce will determine the heat factor. You can omit the wine and use all stock if you'd like. Delicious with hot garlic bread!

- Sprinkle shrimp with creole seasoning, set aside.
- Saute smoked sausage in half the oil til browned. Set aside.
- In the same pan, saute onion, peppers and celery in remaining oil until the onion turns translucent (about 5-7 minutes).
- Add garlic, tomato, bay leaves, worcestershire, and hot sauce, saute 2 minutes.
- Add rice, saute 2 more minutes.

CAJUN SHRIMP CAKES WITH ANDOUILLE SAUSAGE
These are fantastic! I use about 1 tablespoon of recipe#186029 in place of the seasoned salt. This recipe will give you about 14-16 patties, you can reduce to half if desired to give you 7-8 patties and use only a small egg. If you cannot fine Andouille sausage, then use kielbasa or smoked dry sausage. Use cooked shrimp for this. Plan ahead the total chilling time before cooking the cakes is 2-1/2 hours. I serve these with the lemon ailoi from my recipe#136361 For coating the outside cakes you can use panko.

- Place the shrimp and chopped sausage in a food processor and process using on/off turns until coarsely chopped.
- In a skillet melt butter over medium heat; add in the onion, bell pepper and garlic, sauté stirring for about 4 minutes or until softened; transfer to a large bowl.
- Add in shrimp and sausage to the vegetable mixture.
- Stir in mayo, egg, 1 cup breadcrumbs, green onions, mustard, seasoned salt and black pepper; cover the mixture and chill for a minimum of 2 hours.
- Form the mixture into 15 (1-1/2-inch thick) patties.
- Place the remaining 2 cups breadcrumbs in a shallow bowl.
- Coat each patty with the crumbs patting with hands to adhere.
- Transfer to a cookie sheet or large plate.
- Cover and chill for 30 minutes or up to 24 hours.
- Heat the butter with oil in a large skillet over medium-low heat.
- Add in the shrimp cakes and cook about 6 minutes on each side or until browned.

It was originally a "random stir-fry" because I simply used what I had in my refrigerator. I also experimented with Worcestershire sauce this time. It's not a traditional ingredient that we would use for stir-fry. I did love the outcome. The combination of onions, bell peppers, turkey sausage and shrimps makes this dish look colorful and go very well with rice. Plus, it is healthy!

- In a wok, heat grape seed oil over medium high.
- Stir-fry onion and ground black pepper until onion becomes transparent. Add turkey sausage and stir-fry for about 3 minutes.
