This is a lemon herb garlic chicken dish which is made in a slow cooker to contain it's natural flavours. When we served it the meat fell away from the bone. If you wish to increase the celery and carrot you may do so without dramatically change the flavour of the dish. I normally remove the skin off the drumstick, which I recommended with this dish but feel free to leave it on. Everyone enjoyed it in our house hold, hope you will enjoy it.

20 g butter
1 kg chicken drumstick, with bone
1 stalk celery, chopped
1 carrot, chopped
1 1/4 cups chicken stock, liquid stock
1 lemon, juice of, freshly squeezed
1 spring onions or 1 green onion, finely sliced
3 garlic cloves, sliced
2 tablespoons fresh parsley, chopped
1 teaspoon dried oregano, ground
salt, to taste
ground black pepper, to taste

Steps:

  • In a hot non-stick pan, add butter and melt.
  • Add chicken drumstick and brown or seal chicken.
  • Place celery & carrot on base of crock pot/slow cooker.
  • Add brown chicken drumstick into the crock pot/slow cooker, making sure the chicken drumstick are not sitting on top of each other (must be laying side by side). Pour left over juices in the pan into the crock pot/slow cooker.
  • Pour chicken stock and lemon juice on top of drumstick.
  • Sprinkle onions, garlic, parsley, oregano, salt and black pepper on top of the chicken drumstick.
  • Cover and cook on 'Low' setting for 6-8 hours. (Depending on you crock pot/slow cooker, mine tenders to cook quickly even on the slower setting).
  • Serve with juices on rice or with crusty bread.

1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds skinless, boneless chicken breast halves
2 tablespoons butter
¼ cup water
3 tablespoons fresh lemon juice
2 cloves garlic, minced
1 teaspoon chicken bouillon granules
1 teaspoon chopped fresh parsley

Steps:

  • In a bowl, mix the oregano, salt, and pepper. Rub the mixture into chicken. Melt the butter in a skillet over medium heat. Brown chicken in butter for 3 to 5 minutes on each side. Place chicken in a slow cooker.
  • In the same skillet, mix the water, lemon juice, garlic, and bouillon. Bring the mixture to boil. Pour over the chicken in the slow cooker.
  • Cover, and cook on High for 3 hours, or Low for 6 hours. Add the parsley to the slow cooker 15 to 30 minutes before the end of the cook time.

1 5 lb whole chicken
5 heads of garlic (top 1/2 inch sliced off)
Sea salt and freshly cracked pepper (to taste)
1 lemon (halved)
1 onion (cut into wedges)
Olive oil (to taste)

Steps:

  • Preheat the oven to 300 degrees.
  • Rinse the chicken and pat it dry with paper towels.
  • Rub the skin of the chicken all over with one of the garlic heads.
  • Season the cavity with sea salt and freshly cracked pepper, to taste.
  • Place the garlic head in the cavity (that you just rubbed over the chicken).
  • Place half a lemon and an onion wedge in the cavity.
  • Drizzle some olive oil over the chicken and rub it evenly over the entire bird.
  • Season the whole bird with sea salt and freshly cracked pepper, to taste.
  • Place the remaining garlic heads in a large Dutch oven along with the remaining onion wedges and the other lemon half cut into wedges.
  • Place the chicken on top of the veggies in the Dutch oven.
  • Pour one cup of chicken broth into the bottom of the Dutch oven.
  • Place into the oven and roast, basting every 30 minutes, for the first 2 hours.
  • Stop basting and continue roasting for another 30-60 minutes, or until the chicken is cooked through and the juices run clear. The inner thigh temperature should be 165-170 degrees.
  • Remove from the oven and allow to rest for 15 minutes.
  • While the chicken is resting, pour the pan juices into a small saucepan over medium heat. Simmer for 7-10 minutes or until it thickens.
  • Taste and season with sea salt and freshly cracked pepper, to taste.
  • Serve the chicken with the roasted garlic bulbs and the pan sauce. Enjoy.

1 tsp dried thyme
1/2 tsp dried parsley

2.5 tbsp olive oil ((or melted butter), plus extra for drizzling)
3 garlic cloves (, minced)
1 large lemon (, all zest + all juice)
1 tbsp cornflour/cornstarch mixed with 1 tbsp water
1 extra lemon (, just in case)

Steps:

  • Rub - Mix Rub ingredients. should be fairly thick and sludgy. Adjust with extra oil if too thick.
  • Loosen Skin: Use upside spoon to loosen skin of chicken (see video). Spoon most of the Rub under the skin, leaving about 1 tbsp mostly oil for the skin. Use hands or spoon on skin to spread the paste - doesn't need to be perfect.
  • Stuff used lemon inside the chicken.
  • Put rack inside slow cooker (Note 3), place chicken on top. Spread with remaining sludge, sprinkle with a pinch of salt and pepper.
  • Slow cook 5 hours on low or 3 hours on high, or until juices run clear or internal temperature is 75C / 165F using a meat thermometer. (Note 4 for other cook methods)
  • Brown skin: Remove chicken from slow cooker, drizzle with a bit of extra oil. Grill/broil on medium high for 5 to 10 minutes to brown the skin (~25cm /10" from heat source). Or oven 240C/450F for 10 min.
  • Spoon over pan juices, then serve with Lemon Sauce! (No need to rest chicken)

2 tablespoons kosher salt
1/2 teaspoon freshly ground black pepper
1 (5 pound) chicken
4 heads garlic, top 1-inch cut off
2 tablespoons olive oil
1 medium lemon, halved
1 medium yellow onion, quartered
1 cup low-sodium chicken broth

Steps:

  • Heat the oven to 375 degrees F and arrange a rack in the middle.
  • Mix together salt and pepper in a small bowl and set aside. Pat chicken dry and rub all over with 1 of the garlic heads. Rub all over (under skin too) with oil and season with salt and pepper. Place 1 garlic head and 1 lemon half in the chicken cavity.
  • Arrange remaining garlic, lemon, and onion on the bottom of a 3 to 4-quart baking dish to create a bed. Place chicken on top, add broth to baking dish, and cover tightly with foil. Roast until chicken reaches 135 to 140 degrees F on an instant-read thermometer, about 1 hour.
  • Remove foil, brush chicken with pan juices, and increase oven temperature to 450 degrees F. Roast, basting occasionally, until temperature of chicken on inner thigh is 165 degrees F, skin is golden brown, and juices run clear, about 30 to 40 minutes more.
  • Let rest 10 minutes before carving. Meanwhile, pour pan juices into a small saucepan and simmer over medium heat until thickened, about 7 to 10 minutes. Taste and adjust seasoning, as desired. Carve chicken and serve each portion with 1 head of garlic and pan sauce.

1 whole chicken, based on the size of your slow cooker - a 1.3kg chicken should just about fit into a 3.5L slow cooker - while a 6.5L would probably fit a 2kg chicken
4 lemons
10 cloves garlic, 8 whole and 2 halved
4 sprigs fresh rosemary

Steps:

  • Remove any giblets etc. from the cavity of the chicken, sometimes in a small bag.
  • Stuff chicken with 1 sprig of rosemary, 1 lemon (quartered) and 4 cloves garlic.
  • Season all sides of the chicken with salt and pepper.
  • Remove both ends of a lemon, cut in half to create very thick slices.
  • Line the bottom of the slow cooker with 4 lemon slices, 4 whole garlic cloves and a sprig of rosemary.
  • Put the chicken in the slow cooker.
  • Cut 2 garlic cloves in half and put all four pieces on top of the chicken along with the 2 remaining lemon slices.
  • Garnish with 1-2 more sprigs of rosemary. Put the lid on the slow cooker and set to high for 4 hours.
  • Place cooked chicken under the grill (broil) for 10 minutes to crisp the skin (optional).
  • Allow chicken to rest for 10 minutes before carving and serving. Leftover juices in the slow cooker are mostly lemon juice with a bit of chicken fat and can be used sparingly as a strongly flavoured sauce.

I cannot claim this recipe as my own. Its actually a Nigella Lawson recipe (thanks Lifestyle Channel in Australia!!!). It is a super easy and extremely tasty one-pot recipe. I make it summer and winter, but I can see why it is good for summer due to the lightness of the dish. Perfect with either the full contingency of roast veg or equally with a nice light salad, cold or warm.

1 roasting chicken, cut into 10 pieces
1 head garlic, separated into unpeeled clove
2 lemons, unwaxed and cut into 8 pieces
fresh thyme
3 tablespoons olive oil
150 ml white wine

  • Pre-heat the oven to 160ºC.
  • Put the chicken pieces into a roasting tin and add garlic cloves, lemon chunks and the thyme; just roughly pull the leaves off the stalks, leaving some intact for strewing over later.

1 cup half and half

1 tablespoon chicken base (optional, but delicious!)

Steps:

  • In a large cast iron skillet add 1 tablespoon of butter to melt on medium high heat.
  • Add the kosher salt, black pepper and Italian seasoning to the chicken and add it to the pan.
  • Cook on each side for 4-6 minutes.
  • Add the chicken to your slow cooker.
  • Cover with lemon juice, lemon zest, garlic and the rest of the butter in pieces (I added the lemons in the before picture just for reference. Don't cook the lemons in the slow cooker).
  • Cook on low for 4 hours or on high for 2 hours.
  • In a large measuring cup add the half and half, cornstarch and chicken base and whisk well.
  • Add the liquid, mix, and cook an additional hour on high.

  • Let the chicken get up to room temp before you start and gently pat off any excess moisture with kitchen paper. Pre heat the oven to 300F / 150ºc.

  • Roast the chicken for about 1 1/2 hours, or until the juices from the cavity run clear and the chicken is browned and crisp. Let the chicken rest in the roasting pan for 15 minutes.
  • Tilt the chicken to drain the juices from the cavity into the pan; transfer the chicken to a carving board. Pour the pan juices into a bowl and skim the fat from the surface. Strain the juices into a small saucepan and keep warm over low heat. Carve the chicken and serve with the pan juices.
