TURKEY TACO SOUP

1 tablespoon olive oil
1 pound lean ground turkey
1 cup diced yellow onion
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
Kosher salt and fresh ground black pepper to taste
1 cup frozen corn, defrosted
15 ounce can black beans, rinsed and drained
15 ounce can pinto beans, rinsed and drained
4 ounce can diced green chiles
28 ounces can fire roasted tomatoes
3 cups low sodium chicken broth
1 lime, juiced
Shredded cheese, avocado, cilantro, green onions, plain Greek yogurt for toppings

Steps:

  • Heat the olive oil in a large pot over medium-high heat. When the oil is hot add in the diced onion, ground turkey, spices, salt and pepper. Using a wooden spoon break up the turkey into crumbles. Brown the turkey and onion until the turkey is no longer pink.
  • Add the corn, beans, green chiles, fire roasted tomatoes and chicken broth to the pot. Stir everything together and bring it to a boil. Once boiling, cover the soup with a lid and turn the heat down to medium-low. Let the soup simmer for 30 minutes.
  • Taste the soup and adjust the seasoning as needed. Squeeze in the lime juice and serve topped with shredded cheese, cilantro, diced avocado, green onions and plain Greek yogurt or sour cream.

Madison's Favorite Slow Cooker Beef Tacos image

Taco night happens once a week in my house, these are the BEST ground tacos made from scratch! We make this taco recipe with beef or turkey, it's delicious both ways.

2 pounds 93% lean ground beef
1 tablespoon cumin
2 teaspoon kosher salt
2 teaspoon chili powder
2 teaspoon paprika
1 teaspoon dried oregano
1 small onion (minced)
2 cloves crushed garlic
1/4 cup minced red bell pepper
1/2 cup water
1 cup tomato sauce
1 bay leaf
16 corn taco shells
2 cups shredded romaine lettuce
1 cup shredded cheddar
2 plum tomatoes (diced)

Steps:

  • Brown the beef in a large nonstick skillet over high heat, breaking it into smaller pieces as it cooks. When no longer pink add 2 teaspoons of the cumin along with the remaining dry spices, onion, bell pepper and garlic, stir and cook 2 to 3 minutes until soft, then transfer to the slow cooker along with 1/2 cup water, bay leaf and tomato sauce. Cover and cook on high 3 hours or low 6 to 8. Discard the bay leaf and add the remaining teaspoon of cumin.
  • Heat the taco shells according to the directions, then assemble placing 1/4 cup beef in each shell, topped with lettuce, 1 tablespoon cheese and tomato.
  • Press saute, add the beef and cook breaking it into smaller pieces as it cooks. When no longer pink add 2 teaspoons of the cumin along with the remaining dry spices, onion, bell pepper and garlic, stir and cook 2 to 3 minutes until soft.
  • Add 1/2 cup water, bay leaf and tomato sauce. Cover and cook on high pressure 20 minutes; natural release. Discard the bay leaf and add the remaining teaspoon of cumin.
  • Heat the taco shells according to the directions, then assemble placing 1/4 cup beef in each shell, topped with lettuce, 1 tablespoon cheese and tomato.

1 green bell pepper, finely chopped

1 1/2 tablespoons low-sodium soy sauce
1 tablespoon ancho chile powder

Steps:

1 tbsp maple syrup or honey
1 tsp salt
Ground black pepper (to taste)

Steps:
