ROAST VEGETABLE CALZONE
Big enough to feed the entire family with some to spare. This calzone is a flavorful combination of grilled zucchini, artichoke heats, roasted red pepper, grilled eggplant, sundried tomatoes, and feta cheese.

- Preheat oven to 350 degrees F.
- Cut up the vegetables in large chunks. Toss with olive oil, salt & pepper, and spread evenly on a baking tray.
- Roast the vegetables in the oven for 10 to 15 minutes, or until just cooked. Remove from the oven and allow to cool.
- Dived the fococcia dough in half. Roll out one half of the dough into a large circle that will fit your largest baking tray, approx 18 inches. Score the daough with a fork to avoid bubbling and parbake for 5 minutes in the oven. Allow to cool.
- Once the vegetables have cooled, put them in a large mixing bowl with the cheeses, and mix gently.
- Spread the vegetable/ cheese mix evenly on the parbaked fococcia round. Add a little extra cheese to the top. Egg wash the edge.
- Roll out the other half of the dough into a circle a little larger than the base. Cover the vegetables so that a little hangs over the edge. Roll up the edge of the top dough to the edge of the bottom.
- Egg Wash the top. Sprinkle with mixed herbs and poppyseeds. Place olives around the edge of the calzone for decoration.
- Bake for 25-30 minutes, or until nice and golden brown. Allow to cool.
- Slice between the olives and serve.

ROASTED TOMATO, MOZZARELLA AND PESTO CALZONES
The secret to crispy calzones: Bake them in a very hot oven, and use drier ingredients in the filling to prevent the dough from becoming soggy. Slow-roasting the tomatoes for the filling concentrates their flavor and pulls out their juices, while pesto adds punch without contributing too much moisture. Fresh mozzarella is just right for many things, but it's too wet for a calzone, so use drier whole-milk mozzarella instead. If you prefer to use store-bought pizza dough, you'll need three (8-ounce) balls for this recipe.

- Make the dough: In the bowl of a stand mixer fitted with the dough hook attachment (or in a large bowl with a wooden spoon), combine the water and sugar. Sprinkle yeast on top and let stand 5 minutes until foamy. With the mixer on low speed, add the flour, salt and olive oil, and mix until combined. Increase speed to medium and mix until the dough comes together in a smooth ball. Cover the bowl with plastic wrap and let stand in a warm place until doubled in size, about 1 hour.
- While the dough rises, prepare the tomatoes: Heat oven to 300 degrees. Arrange tomatoes cut-side down on a rimmed baking sheet. Drizzle with olive oil, scatter with garlic and season generously with salt. Bake for 40 to 45 minutes, until the tomato skins are wrinkly. Let cool slightly, then use your fingers to pull the skins off each tomato. (Count the number of tomato pieces now, then you'll have an easier time dividing them among the 6 calzones.) Discard skins, then transfer tomatoes and garlic to a strainer set over a bowl. (You won't need the accumulated juices for this recipe, but save them - you can whisk them with a bit more olive oil and vinegar for a vinaigrette.)
- Gently punch down the dough and transfer to a not-floured work surface. Divide into 6 pieces, each about 4 1/4 ounces/120 grams. Working with one piece of dough at a time, cup the dough ball on a work surface (almost as though you were forming a cage around the dough). Rotate your hand in clockwise circles, exerting a bit of pressure on the top of the dough ball, until it's a smooth sphere. Repeat with the remaining balls of dough and let stand 15 minutes, loosely covered with plastic wrap or a clean dish towel. (The dough can be prepared up to this point, transferred to a baking sheet, covered with greased plastic wrap and refrigerated overnight. Let come to room temperature before proceeding.)
- If you have a large pizza stone, place it in the oven and heat oven to 500 degrees. (If you don't have a pizza stone, lightly oil a rimmed 13-by-18-inch baking sheet). Working with one piece of dough at a time, roll into an 8-inch circle using a rolling pin. Spoon 1 1/2 tablespoons pesto in the center of the dough and use the back of the spoon or an offset spatula to spread it in a thin, even layer, leaving a 1-inch border. Pile 2/3 cup mozzarella on half of the dough, then top with some of the tomatoes. Fold the dough in half, over filling, then roll and crimp the edge of the dough together to seal. Repeat with the remaining dough, pesto, mozzarella and tomatoes until all 6 calzones have been formed. Brush each calzone with egg wash and sprinkle with flaky salt.
- With a large spatula, transfer the calzones to the pizza stone (or baking sheet) and arrange them diagonally to fit. Bake until puffed and deep brown, 18 to 23 minutes. (Tent with foil if the tops become too dark before the rest of the dough is browned.) Remove from the oven and let cool 5 minutes before serving.
VEGGIE CALZONES

- In a large skillet, saute mushrooms, onion and green pepper in oil until tender. Add tomatoes; cook and stir 3 minutes. Stir in tomato paste; set aside. Combine cheeses and set aside. , On a lightly floured surface, divide dough into eight pieces. Roll each piece into a 7-in. circle. Spoon a scant 1/2 cup of vegetable mixture and 1/4 cup of cheese mixture over one side of each circle. Brush edges of dough with water; fold dough over filling and press edges with a fork to seal. ROASTED VEGETABLE AND FETA CALZONES
These are flavorful and healthy calzones. This is a guide but consider other vegies to combine. I make my own dough but you can buy the freezer kind for a quicker meal. You may top them with the sauce of your choice or leave as is for a delightful lunch or dinner!

- Combine 1st 8 ingredients on a 15 X 10 X 1" jellyroll pan; stir well, and spread evenly.
- Bake at 425F for 45 minutes, stirring every 15 minutes.
- Spoon vegetables into a bowl, stir in cheese and basil.
- Divide dough into 8 equal portions.
- Working with 1 portion at a time (cover the rest of the dough so it doesn't get dry), roll each portion into 7" circle on a lightly floured surface.
- Spoon 1/2 cup vegetable mixture onto half of each circle; moisten edges of the dough with warm water- if you have those handy calzone molds this it the time to pull them out and fold them over-- otherwise continue with these directions on how to do it without!
- Fold dough over filling; press edges together with a fork to seal.
- Place calzones on a baking sheet coated with cooking spray Combine egg white and water; brush over calzones.
- Bake at 375F for 20 minutes or until golden.
- Let cool on a wire rack.
- Serve warm or at room temperature.

- Make the dough. Mix the flour, yeast and salt together in a large bowl. Mix together the sugar, olive oil and warm water then make a well in the centre of the dry ingredients. Pour the sugar and water into the well. Gradually mix the wet and dry ingredients together and then turn out onto a floured work surface. Knead for 10 minutes. Flour the outside of the ball of dough then place in an oiled bowl. Leave to prove for an hour.
- Heat the oven to 220°C/410°F. Spread the vegetables (except for the artichoke) on a baking sheet and drizzle with olive oil. Season and place in the oven for 25 minutes.
- While the vegetables are roasting make the sauce. Heat the olive oil over a medium heat. Add the onion, garlic, plenty of salt and 40ml of water. Once the water has evaporated pour in the tin of tomatoes and cook down until it's almost dry. Mix in the tomato puree, chilli powder and oregano and leave to cook a little more until it has a thick consistency. Place in a bowl with the vegetables and mix thoroughly.
- Turn the oven up to 225°C/440°F. Place the dough on a floured surface and split into 4 equal portions. Roll each portion out into a circle (approx 25-30cm) and fill half with the vegetable mixture, top with slices of mozzarella, fold over the dough and crimp the edges to seal. Repeat with the other three calzones then place on baking sheets and bake for 20 minutes. Serve sprinkling with a little grated parmesan if desired.

- Place a baking stone on the lowest oven rack;* preheat oven to 450°F. In a 15x10x1-inch baking pan, combine eggplant, zucchini, sweet pepper, mushrooms, and onion. Drizzle with oil; toss gently to coat. Roast on the center oven rack, uncovered, for 15 to 18 minutes or until tender, stirring once. Cool slightly.
- For filling, in a large bowl combine roasted vegetables, walnuts, rosemary, salt, and black pepper. Add cheese; toss gently to combine.
- On a lightly floured surface, roll one portion of Pizza Dough into a 13x10-inch oval. Spread half of the filling crosswise over half of the oval, leaving a 1-inch border. Fold dough over filling; pinch edges together to seal. Cut a few slits in top of calzone to allow steam to escape. Brush lightly with milk.
- Sprinkle a baking sheet or pizza peel with cornmeal. Place calzone on baking sheet or peel. (When the baking sheet or peel is moved back and forth, the calzone should move freely.) Use the baking sheet or peel to transfer calzone to preheated baking stone.
