SLOW-COOKER SWEET CORNBREAD BLACKBERRY COBBLER

- Spray 4 1/2-quart slow cooker with baking spray with flour.
- Pour blackberries into slow cooker. Sprinkle berries with flour and 3 tablespoons of the sugar; stir gently to coat. In small bowl, mix remaining sugar, melted butter, cornbread mix and cinnamon. Spread dough on top of blackberries.
- Cover; cook on High heat setting 2 to 3 hours or until dough on top is set and blackberries are saucy. To serve, spoon hot cake from slow cooker, and top with ice cream or whipped cream.

BLUEBERRY CORNBREAD COBBLER
Gooey blueberries topped with creamy cornbread. Recipe merged and modified from corn casserole. I found myself with an abundance of blueberries and the same company that adored the corn casserole we had last week. I'd already prepared dinner for the evening but quickly threw together this dish at the last minute. It baked perfectly throughout our meal. We chose to top with whipped cream although ice cream would be just as fine. We prefer it slightly underdone in the center, gooey even. Hope you enjoy.

- Melt 1/2 c butter in 9 x 13" glass dish.
- Mix together 1 1/2 c sugar, flour& baking powder.
- Add milk& lightly whisk.
- Pour batter on top of melted butter in baking dish.
- On med.
- heat, cook the blackberries and 1 1/4 c sugar until mixture begins to boil.
- Add blackberries to top of batter and bake in 350 deg preheated oven until batter begins to brown (approx. 20 mins) Cover with as much brown sugar topping as desired.

- Add the rinsed blackberries to the slow cooker. Sprinkle over the 1/4 cup sugar, 1 Tablespoon cornstarch and 2 Tablespoons melted butter. Stir these items together. If you don't want whole berries in your cobbler and want a pureed sauce, take a potato masher and squish the berries at this step.
- In a medium-sized bowl, add the dry ingredients listed in the cobbler layer above (flour, sugar, baking powder and salt) stir. Then add the wet ingredients (vanilla, milk and melted butter). Stir until combined, some lumps are fine, do not over mix.
