1 beef flank steak (2 pounds)
1 medium onion, chopped
1 garlic clove, minced
1 tablespoon butter
1-1/2 cups soft bread crumbs (about 3 slices)
1/2 cup chopped fresh mushrooms
1/4 cup minced fresh parsley
1/4 cup egg substitute
3/4 teaspoon poultry seasoning
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup beef broth
2 teaspoons cornstarch
4 teaspoons water

Steps:

  • Flatten steak to 1/2-in. thickness; set aside. , In a nonstick skillet, saute onion and garlic in butter until tender. Add the bread crumbs, mushrooms, parsley, egg substitute, poultry seasoning, salt and pepper; mix well. , Spread over steak to within 1 in. of edge. Roll up jelly-roll style, starting with a long side; tie with kitchen string. Place in a 5-qt. slow cooker; add broth. Cover and cook on low for 8-10 hours., Remove meat to a serving platter and keep warm. Skim fat from cooking juices; pour into a small saucepan. , Combine cornstarch and water until smooth; stir into juices. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove string before slicing steak; serve with gravy.

1/4 cup chopped red peppers
1/4 cup finely chopped oil-packed sun-dried tomatoes
1/2 tsp. dried oregano leaves
1 beef flank steak (2 lb.), pounded to 1/4-inch thickness
1-1/2 cups CLASSICO Tomato and Basil Pasta Sauce

Steps:

  • Mix all ingredients except steak and pasta sauce until blended.
  • Place steak, top side down, on work surface; spread with cheese mixture to within 2 inches of edges. Roll up steak, starting at one short end. Tie closed with kitchen string.
  • Place in slow cooker sprayed with cooking spray; top with pasta sauce. Cover with lid.
  • Cook on LOW 4 to 6 hours. Remove and discard string before serving roll-up.

2 cups seasoned stuffing mix
1 cup beef broth
2 tablespoons butter, melted
2 tablespoons grated parmesan cheese
2 lbs flank steaks
2 tablespoons Dijon mustard
2 tablespoons oil
salt and pepper
1 (1 ounce) package brown gravy mix
2 cups beef broth

Steps:

  • Slightly score flank steak on each side at 1 inch intervals.
  • Combine stuffing with beef broth, butter and cheese.
  • Spread mustard over flank steak, then spread stuffing over steak and roll up like a jelly roll.
  • Tie with string.
  • Rub with oil sprinkle with salt and pepper on the outside and put into crock pot.
  • Mix gravy and water.
  • Pour over meat.
  • Cover and cook low, 8 hours.
  • Remove meat from crock pot. Stir gravy well to blend (Some of the stuffing mix will come out of the flank steak while it is cooking and this will thicken the gravy a bit more).
  • Slice into serving sized pieces.
  • Serve with gravy on the side to put on the steak and potatoes if you are serving them.

1 cup chopped onion
1 cup chopped celery
1/4 cup minced fresh parsley

1 1/2-2 lbs round steaks (1 large piece, I also use bracciole if available, you want a large thin piece of meat that would be )
1 teaspoon salt (to taste)
1 teaspoon garlic powder
1/2 teaspoon black pepper
2 cups prepared stuffing
1 (10 1/2 ounce) can cream of mushroom soup
1 (1 1/4 ounce) envelope dry onion soup mix
1 (10 1/2 ounce) can water (use soup can)

Steps:

  • Pound the salt, garlic powder and black pepper into the steak.
  • Lay the stuffing on top of the steak and roll up jelly-roll style.
  • Place toothpicks in steak to hold in place.
  • Place the steak in the crock pot.
  • Mix the cream of mushroom soup, dry onion soup mix and water in bowl until smooth.
  • Pour over the steak in the crock pot.
  • Cook on low for about 6 hours.
  • Thicken the broth for gravy if you like.
  • Serve with mashed potatoes, if desired.
  • Slice the steak into serving pieces.

This is a delicious flank steak. The stuffing makes it much more filling, but there's never any left over! Can also be cooked in the microwave. 2 tablespoons vegetable oil

1/2 cup parsley, chopped
2 tablespoons chives, chopped
1 tablespoon tomato paste
1/2 cup dry breadcrumbs

3 strips bacon, chopped
3/4 cup finely chopped onion
1 cup hot beef broth, or more, to desired consistency

Steps:

  • Lightly salt and pepper both sides of the flank steak.
  • Spread one side with mustard.
  • To prepare stuffing, heat vegetable oil in a frypan, add onion and cook for 3 minutes until lightly browned.
  • Add mushroom pieces and cook for 5 minutes.
  • Stir in parsley, chives, tomato paste, and bread crumbs, then season with salt and pepper and paprika.
  • Spread stuffing on mustard side of the flank steak, roll up jelly-roll fashion and tie with thread or string.
  • To prepare gravy, saute bacon in a Dutch oven until partially done.

2 (10 ounce) packages frozen leaf spinach, thawed
1/4 cup fresh parsley, chopped
1/4 cup grated asiago cheese
2 tablespoons capers, rinsed and drained
2 tablespoons balsamic vinegar
1 garlic clove, minced
1/4 teaspoon red pepper flakes
coarse salt & freshly ground black pepper
1 (1 lb) flank steak
1 teaspoon olive oil

Steps:

  • Heat broiler with rack set 4" from heat. Line a rimmed baking sheet with aluminum foil; set aside. Place spinach in a clean kitchen towel, and squeeze out as much liquid as possible.
  • In a medium bowl, combine spinach,parsley, cheese, capers, vinegar, garlic, and red-pepper flakes. Season with salt and pepper; toss to combine. Cut and open steak by laying meatl on a cutting board, with the grain of the steak running horizontally. Using a long sharp knife, cut the meat almost in half horizontally, opening it llike a book but stopping before going all the way through.
  • Cut several 12" pices of kitchen string twine; space evenly underneath steak. Spread spinach mixture down center of meat. Roll steak over mixture, pressing firmly to compact the filling as much as possible, tie twine to secure roll. Cut roll in half crosswise. Place halves, seam side down, on prepared baking sheet, rub with oil, and season with salt and pepper.
  • Broil until browned, 8-10 minutes for medium-rare; let rest, loosely covered with foil, 10 minutes. Remove string, and slice steak into 1/2"rounds.

5 tablespoons olive oil, divided
½ (8 ounce) package sliced fresh mushrooms
¼ cup diced celery
¼ cup chopped sun-dried tomatoes (not oil-packed)
3 cloves garlic, minced
¾ (15 ounce) jar roasted red peppers, drained
1 cup plain dry bread crumbs
¼ cup minced fresh parsley
2 tablespoons capers
½ teaspoon salt
¼ teaspoon crushed red pepper flakes
⅛ teaspoon ground black pepper
½ pound thinly sliced prosciutto
½ pound thinly sliced provolone cheese

Steps:

  • Place flank steak in the freezer for 20 minutes.
  • Meanwhile, heat 1 tablespoon olive oil in a skillet. Add mushrooms, celery, sun-dried tomatoes, and garlic; saute until softened, about 5 minutes. Remove from the heat and place in a large bowl.
  • Pat roasted red peppers dry. Chop and add to the vegetable mixture. Add bread crumbs, parsley, 2 tablespoons olive oil, capers, salt, pepper flakes, and black pepper. Mix to combine.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Remove steak from the freezer and season with salt and pepper. Turn the long side of the steak towards you and place on a flat work surface. Roll steak up tightly starting at the small end. Use kitchen twine to tie steak in 1-inch increments taking care to tie tightly at both ends. Season with more salt and pepper and brush with remaining 2 tablespoons olive oil. Place steak carefully on a broiler pan.
  • Bake in the preheated oven until an instant-read thermometer inserted into the center reads 145 degrees F (63 degrees C) for medium-rare, 160 degrees F (71 degrees C) for medium, or 170 degrees F (77 degrees C) for well done, 35 to 40 minutes. Turn on the broiler and broil for an additional 10 minutes.
  • Remove from the oven and let stand for 10 minutes before slicing and serving.
