I know everyone has a slow cooker chili recipe that they say is the best... Well here is another one that I am adding to the list. I believe this one carries a good challenge to all of those out there. This has been a favorite always of my family and friends, so let me know what you think and let's create a melting pot for the perfect slow cooker chili dish. Serve topped with sour cream, shredded Cheddar cheese, chopped chives, hot sauce, and sliced jalapenos (or habanero if you like the heat).

1 tablespoon olive oil
½ large onion, coarsely chopped
2 teaspoons finely chopped fresh garlic
1 ½ pounds ground beef
2 tablespoons chili powder
1 tablespoon ground cumin
½ teaspoon kosher salt

2 (15 ounce) cans black beans, rinsed and drained
2 (15 ounce) cans red kidney beans, rinsed and drained
2 (14.5 ounce) cans diced tomatoes and green chile peppers, undrained

Steps:

  • Heat oil in a large skillet over medium-high heat. Add onion and garlic; cook, stirring frequently, until softened, 4 to 5 minutes. Stir in ground beef, chili powder, cumin, salt, and pepper. Cook, stirring occasionally, until beef is lightly browned and crumbly, 5 to 8 minutes.
  • Transfer beef mixture to a slow cooker. Stir in black beans, kidney beans, and diced tomatoes and chiles. Cover and cook on Low, stirring occasionally, 8 to 10 hours.

1 Tablespoon olive oil
2 lbs. sirloin steak, excess fat trimmed and remainder cut into cubes
1 large yellow onion, chopped
1 green pepper, chopped
1 28 ounce can diced tomatoes, undrained
1 28 ounce can tomato sauce
1 4 ounce can green chilies
1 15 ounce can kidney beans, rinsed and drained
1 15 ounce can black beans, rinsed and drained
2 teaspoons chili powder
1 teaspoon cumin
1/2 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
1 teaspoon oregano
4 cloves garlic
Pinch sugar
Salt and pepper
Sour cream, cheese, and Fritos, for serving

Steps:

  • Preheat the slow cooker on high heat while you prepare the remainder of the ingredients.
  • Heat the oil in a large skillet over medium high heat. Season the sirloin with salt and pepper, then add it to the oil and allow to brown, undisturbed, for several minutes. Flip and brown on the remaining sides. Transfer the steak to the slow cooker and return the skillet to the burner over low heat. Use the juice from one of your cans of diced tomatoes or a small amount (1/4 cup) of water to deglaze the pan. Pour the liquid into the hot pan and use a spatula to scrape up any brown bits. Transfer to the slow cooker.
  • Add the remaining ingredients (besides those used for serving) to the slow cooker and stir. Cook on low for 8 hours (preferred method) or on high for 4 hours.
  • Serve with sour cream, cheese, Fritos and/or cornbread.

1 1/2 cups onions, chopped

2 (14 1/2 ounce) cans diced tomatoes
1 (16 ounce) jar salsa
1 (15 ounce) can tomato sauce

Steps:

  • Heat oil in a large sauté pan over medium heat; add steak, onion and garlic. Cook over medium heat until steak is browned and onion and garlic are translucent.
  • With a slotted spoon, remove steak, onion and garlic to a slow cooker, leaving juices behind in pan. Add one cup water, celery, beans, tomatoes with juice, salsa, tomato sauce and seasonings to slow cooker; stir. Cover and cook on low setting for 8 hours.
  • Shortly before serving time, whisk together flour, cornmeal and remaining 1/3 cup water until smooth. Add mixture to simmering chili; stir for 2 minutes, until thickened. Garnish as desired.

While searching for an authentic Texas Style Chili, I discovered this recipe from http://recipes.suite101.com/article.cfm/cowboy_steak_chili. There are so many chili recipes with many variations for all types of taste buds, but this one really knocked my socks off. While the chili recipe above will stand up even if all you add is chili powder, this mix will give it more complex depth of flavor. The idea comes from Cowboy Steak, where the essential "Cowboy" element is ground coffee. Was this the result of a creative campfire cook. Or some happy chuck wagon mistake? You can also use this seasoning to make Cowboy Steak. If you do, it is traditional to add onion powder and garlic powder to the mix. You may want to mix up enough to use later as a dry rub for ribs or chops or even chicken. If you do, bloom the mixture just before using. The only change I made was to cook the chili for 8 hours on low in the crock pot before serving. I truly believe that one of the secrets to good chili is a looooooonnnnngggg cooking time. YEEHAA

Steps:

  • Turn the crock pot on to low.
  • Prepare the Cowboy Steak Seasoning following the separate recipe posting.
  • Roll cubed steak around in the seasoning mix until they are thoroughly coated.
  • In a large, heavy fry pan over medium high heat, brown off the bacon (if using) until crisp.
  • Remove and drain on paper towels or clean newspaper, reserving the drippings.
  • Brown the coated cubes of steak in the bacon drippings (or oil), working in batches if necessary.
  • Transfer browned steak to the crock pot.
  • Add the chorizo or pork and cook it down, stirring, for about 5 minutes.
  • Transfer the chorizo or pork to the crock pot.
  • Add all the "aromatics" to the fry pan and sweat them down, stirring frequently, about 5 minutes.
  • Transfer them to the crock pot.
  • Stir in all the "other good stuff" and the reserved bacon to the crock pot.
  • If there's not enough liquid to cover, add some beef stock or more beer. Put the lid on. Cook for @ 7 hours and then give it a taste and adjust the seasoning if needed and let it simmer at least another hour. The longer the better!

3 tbsp olive oil
500g beef mince
1 onion , finely chopped
1 celery stick , finely chopped
1 large red pepper , thickly sliced
2 garlic cloves , finely grated
2 tsp ground cumin
1 tsp smoked paprika
2 tsp dried oregano
2-3 tbsp chipotle chilli paste
3 tbsp tomato purée
400g can chopped tomatoes
400ml beef stock
2 x 400g can black beans , drained
4 small squares dark chocolate
tortilla chips or cooked rice and soured cream, to serve

Steps:

  • Set the slow cooker to low. Heat 1½ tbsp oil in a large, non-stick pan over a high heat and fry the mince for 10-12 mins or until evenly browned. Tip into the slow cooker.
  • Heat the remaining oil in the pan. Fry the onion, celery and pepper for 10 mins or until softened. Add the garlic, cumin and paprika and fry for 1 min. Tip into the slow cooker.
  • Stir in the oregano, chipotle paste, tomato purée, tomatoes and stock. Season. Cover and cook for 6-8 hrs.
  • Stir in the beans and chocolate during the final 30 mins of cooking. Serve with a bowl of rice or tortilla chips and a dollop of soured cream.

Steps:

  • Lay the beef chunks in the bottom of the slow cooker and sprinkle the diced onion over. If you want to add fresh chilli for some head, add this now. Adjust the seeds for desired hotness.
  • Sprinkle over the chilli powder, cumin, salt and cayenne pepper. Note: You can adjust these quantities based on your personal taste.
  • Add the drained kidney beans, then cover these with the chopped tomatoes - ensuring all the contents are covered.
  • Turn the slow cooker to low and cook for 6 - 7 hours. After cooking, use a fork to break apart the meat. Note: I tend to cook overnight, then leave the next day for the flavours to infuse.
  • Serve warm with desired toppings.
