SLOW COOKER PULLED PORK
Slow Cooker Pulled Pork is one of the easiest, most delicious family meals. Cooked low and slow in the crock-pot in a tangy, sweet, and slightly spicy homemade barbecue sauce that is simply irresistible.

- In a small bowl, mix together the salt, paprika, garlic powder, onion powder, pepper, and chili powder.
- Remove pork roast from packaging and pat dry with a paper towel. Rub the spice mixture all over the pork roast.
- Lay out the diced onion on the bottom of the slow cooker and then place the seasoned pork on top of the onion.
- Combine the juice, vinegar, honey, and tomato sauce and pour over the pork loin.
- Cover and cook on low for 8-10 hours.
- Remove the pork roast from the slow cooker and place into a large bowl. Shred the pork loin with 2 forks or a kitchen mixer.
- Strain cooking sauce over a large bowl to remove onions. If you want to strain off the fat that accumulated prior to pouring liquid over pork, simple place liquid in the freezer for 5-10 minutes, then scoop the solidified fat off the liquid before thickening.
- If you would like to thicken the barbecue sauce, turn the slow cooker to high and cook the sauce for 30 minutes.
- Return the meat back to the slow cooker to stir into the juices.
- Serve on a bun with or without coleslaw, in a lettuce wrap, on a pizza.

- Mix all of the ingredients for the mop in a bowl, whisking until well combined. Pour about 1/4 of the mop into the slow cooker.
- Mix all of the ingredients for the dry rub in a small bowl.
- Place the pork, fat cap side up, into the slow cooker. Sprinkle the dry rub over the pork and rub it all over the pork, ensuring to get every side except the bottom half, which is sitting in the wet mop.
- Place the lid on the slow cooker and cook on low for 6-8 hours, or until it reaches a temperature of 190º F.
- Once the pork is ready, transfer it to a large serving dish and let it sit for about 15-20 minutes.
- Remove the fat cap and discard it. Then, with two forks, shred the pork until it's completely pulled. Transfer the pulled pork back to the slow cooker, and drizzle it with the rest of the mop; stir to coat.
- Serve with fresh buns and tangy apple slaw.
SLOW-COOKER BBQ PULLED PORK SLIDERS WITH SLAW

- For the BBQ pork: Whisk together the smoked paprika, salt, garlic powder and onion powder in a large bowl. Add the pork shoulder and turn to coat.
- Heat the oil in a large saute pan over low heat and cook the pork, turning occasionally, until all sides are golden, 8 to 10 minutes.
- Remove the pork to a plate. Combine the onions with the chili sauce, vinegar, brown sugar and 1 cup water in a slow cooker and whisk together. Add the pork shoulder, cover and cook on low until the pork is hot and cooked through, 8 to 10 hours.
- Remove the pork to a cutting board and set aside. Pour the liquid into a medium saucepan. Bring to a boil and cook over high heat until reduced by half or the sauce is thick, 8 to 10 minutes.
- Meanwhile, shred the pork with 2 forks or chop into pieces. Put back in the slow cooker and top with the reduced sauce, to taste.
- For the slaw: Whisk together the mayonnaise, mustard, vinegar, sugar, salt and pepper in a large bowl. Add the cabbage and carrots and toss until coated.
- To serve, place the pulled pork on the bottom buns, top with the slaw, then close the sliders.

- Pour the vegetable oil into the bottom of a slow cooker. Place the pork roast into the slow cooker; pour in the barbecue sauce, apple cider vinegar, and chicken broth. Stir in the brown sugar, yellow mustard, Worcestershire sauce, chili powder, onion, garlic, and thyme. Cover and cook on High until the roast shreds easily with a fork, 5 to 6 hours.
- Remove the roast from the slow cooker, and shred the meat using two forks. Return the shredded pork to the slow cooker, and stir the meat into the juices.
- Spread the inside of both halves of hamburger buns with butter. Toast the buns, butter side down, in a skillet over medium heat until golden brown. Spoon pork into the toasted buns.

SLOW COOKER PULLED PORK

- Put the onion slices at the bottom of the slow cooker. In a small bowl mix together 1 tbsp salt with 1 tsp ground black pepper, the smoked paprika and cinnamon. Put the flour onto a plate then rub the spice mixture over the pork.
- Heat the oil in a large frying pan and roll the spiced pork in the flour before putting it into the pan to sear it on all sides. Once the meat is starting to pick up a golden colour pop it on top of the onion slices in the slow cooker.
- In a large jug combine all the ingredients for slow cooking the pork then pour over the meat. Pop the lid on and cook on the low setting for 8 hours.
- When you're ready to serve, take the meat out of the slow cooker leaving the cooking liquor behind. Put the cooked meat on a roasting tray or large shallow bowl and pull it into bite-size chunks and shred with 2 forks. Ladle a little of the cooking juices over the pork and mix together.
- Toss the fennel and apple slices in the lemon juice and season well then serve along with the pulled pork in bread rolls. Spread the rolls with a little English mustard and mayonnaise if you like.

- Combine rub ingredients in a small bowl. Remove any twine from the pork. Rub the spice mixture all over the pork, using your hands. I suggest placing pork on a baking sheet to catch any fallout.
- In a slow cooker, add the Worcestershire sauce, chili powder, chicken broth, garlic, ground cumin, liquid smoke, and brown sugar. Stir until combined. Add the pork into the slow cooker and cover. Set on low and cook for 10 hours.
- When the pork is done, take it out of the slow cooker and place it on a cutting board. Using two forks, shred it. Depending on your piece of meat, you may need to remove larger fatty pieces. I like to keep some of the smaller fatty pieces as they make the sandwiches taste even better. Place the shredded pork on a plate, bowl, or in a storage container. Spoon some of the leftover cooking liquid onto the pork and toss. It's up to you how much/how little you use. If you're not going to top your sandwiches with BBQ sauce, I suggest adding more of the liquid.
