- Pour the vegetable oil into the bottom of a slow cooker. Place the pork roast into the slow cooker; pour in the barbecue sauce, apple cider vinegar, and chicken broth. Stir in the brown sugar, yellow mustard, Worcestershire sauce, chili powder, onion, garlic, and thyme. Cover and cook on High until the roast shreds easily with a fork, 5 to 6 hours.

- Remove all string from the roast and trim away excess fat. Place the chili powder in a bowl; blend in the oil, chili, pepper, cumin, coriander, paprika, allspice, salt and garlic to make a paste. - Mix paprika, brown sugar, chili powder, cumin, salt, black pepper, oregano, sugar, white pepper, and cayenne together in a small bowl.
- Massage spice rub into the pork roast. Wrap tightly in a double layer of plastic wrap; refrigerate for at least 3 hours.

- Rinse and dry the pork shoulder, rub all over with salt and pepper.
- Combine the Rub ingredients then rub all over the pork.
- Place the pork in a slow cooker (fat cap up), top with the onion, jalapeño, minced garlic (don't worry about spreading it) and squeeze over the juice of the oranges.

- Rub the pork with salt and pepper, and then set aside while you prepare the remaining ingredients. (See notes below if you plan to sear the pork first).
- Heat oil in a wide skillet over medium heat. Add the onions and garlic then cook, occasionally stirring, until they are sweet and browned around the edges. Stir in the tomato paste, chili powder, and cumin. Cook, stirring until the tomato paste turns from bright red to orange in color; about 3 minutes. Add the water, apple cider vinegar, and fish sauce and cook for about 1 minute, scraping up the browned bits on the bottom of the pan.

- In a small mixing bowl whisk together salt, pepper, brown sugar, paprika, garlic powder, and cayenne pepper.
- Place pork shoulder in a baking dish and rub entire roast with dry rub mixture, pressing mixture over the roast. Cover roast with plastic wrap and allow to rest in the refrigerator at least 2 hours, or overnight.
- In a medium mixing bowl combine apple juice, apple cider vinegar, Worcestershire and liquid smoke.

PULLED PORK BARBECUE BISCUIT CUPS

- Gather the ingredients.
- Preheat oven to 400 F. Lightly spray 10 muffin cups with baking spray or grease them lightly.

- My Note: Here's the deal folks! Most would agree that using a pork tenderloin for pulled pork is not a good idea. Cheaper cuts of pork work just the same and have tons of flavor! I used a 4 pound shoulder cut (also called Boston butt). It was only $5, whereas a 2 pound cut of tenderloin was $10! I cooked in the slow cooker for 7 hours, pulled it apart and mixed with Sweet Baby Ray's Hot and Spicy sauce, and then cooked for another hour. I served them on Kaiser rolls with coleslaw and homemade fries.
- I followed the recipe only adding a couple of things. Before placing the tenderloin in the slow cooker, I rubber salt, pepper, and garlic salt on it. I then used a fork to poke holes in the tenderloin so the juices could be soaked up. I added the root beer and let it cook on low for 5 1/2-6 hours. I then drained and pulled the pork apart easily with a fork. I returned the pork to the slow cooker and added the BBQ sauce and let it continue to cook on low for another 1-1 1/2 hours.
- I tweaked this reciped just a bit and the result was really good! I knew a 2 lb tenderloin would never be enough for my family of 6, so on the advice of the butcher at my grocery store, I used a 4 lb shoulder (it had a small bone in it, but it slid out easily after cooking on low for 10 hours. I mixed 1/2 cup of Bull's Eye Original Barbeque sauce with 2 cups of root beer then poured it over the roast, sprinkled it with a generous amount of dried minced onion, then drizzled some additional barbeque sauce over the roast. Halfway through cooking, I turned the roast over, added more minced onions and another drizzle of sauce. After 10 hours in the crock, I removed the roast, let cool slightly and then shredded it. I mixed in the rest of the barbeque sauce, some salt and a little water to moisten it and served it on a bun. The result was a restuarant quality pulled pork sandwich that my whole family enjoyed!

- Pat dry the pork roast with paper towels, then coat the roast completely in oil, and begin to cover in copious amounts of the spice mixture. The hard part is now over!! Put it in the slow cooker and let it cook for approximately 6-7 hours on high or 10-12 hours on low.
- This cooking process requires a bit of trust. If, at 5 hours along, you test your roast for and it's easy-to-shred, it's done. If it's too tough, it's not done yet! Let it cook the full amount of time. It should reach an internal temperature of 160-190 degrees, depending on the size and type of roast and whether or not you have the bone-in. (some slow cookers bake much quicker than others and that's why it's best to check a few times)
- Since it is a shoulder roast and not a tenderloin, there will be more fat. You will need to separate the fat from the meat when shredding. I like to move the roast to a casserole dish to shred the meat while removing any chunks of fat. I also like to strain the chunks out of the broth. Shred all the meat, strain the broth and then add the meat back into the slow cooker.
