1 pound cranberries (thawed if frozen)
1 cup dried cranberries
1 1/2 cups sugar
2 teaspoons vanilla extract
3 firm pears (such as Bosc), peeled and cut into 1/2-inch pieces
1/2 teaspoon ground cinnamon
Pinch of ground allspice
1 cup plus 2 tablespoons all-purpose flour
1 cup pecans, chopped
1/4 cup old-fashioned rolled oats
1/4 teaspoon salt
1 stick unsalted butter, melted

Steps:

  • Preheat the oven to 375 degrees F. Combine the fresh and dried cranberries in a large bowl. Add 1 cup sugar, 3 tablespoons water and the vanilla and toss to coat. Lightly smash with a potato masher or fork to burst some of the cranberries. Add the pears, cinnamon, allspice and 2 tablespoons flour and toss to coat. Transfer to a 3-quart baking dish.
  • Make the topping: Mix the remaining 1 cup flour, the pecans, oats, the remaining 1/2 cup sugar and the salt in a medium bowl, then stir in the melted butter. Use your fingers to pinch the topping into small clumps and sprinkle it over the fruit.
  • Bake until the fruit is bubbling and the topping is golden brown, about 40 minutes. Serve warm or at room temperature.

1/4 cup packed brown sugar
1/8 teaspoon ground cinnamon
Pinch of ground allspice
1 tablespoon cold butter or no-trans-fat margarine, cut into small pieces
3/4 cup old-fashioned or quick-cooking oats
1/4 cup dried cranberries
2 tablespoons chopped walnuts

Steps:

  • Heat oven to 350°F. Coat an 8-inch square baking dish with cooking spray.
  • Arrange pear slices over bottom of dish. In small bowl, stir together sugar, cinnamon, and allspice. Sprinkle mixture over the pears. In small bowl, cut butter into oats with fork until finely crumbled. Add cranberries and walnuts. Toss to mix. Sprinkle evenly over pears.
  • Bake about 40 minutes or until bubbling.

1 cup Gold Medal™ all-purpose flour
1/2 cup packed brown sugar
2 tablespoons old-fashioned oats
1/2 teaspoon ground cinnamon
6 tablespoons butter, cut into pieces
3/4 cup coarsely chopped pecans, toasted
4 cups chopped peeled pears (2 lb)
3/4 cup granulated sugar
2 bags (1.75 oz each) sweetened dried cranberries, chopped
2 tablespoons cornstarch
2 tablespoons honey
2 cups chopped peeled apples (about 1 lb)

Steps:

  • Heat oven to 375°F. Spray 2-quart casserole with cooking spray.
  • In food processor, place flour, brown sugar, oats and cinnamon. Cover; process until oats are coarsely chopped. Add butter. Cover; process until mixture is combined. Transfer to small bowl. Stir in pecans. Cover; refrigerate while making filling.
  • In 3-quart saucepan, stir together 1 cup of the pears, 3/4 cup granulated sugar, the cranberries, cornstarch and honey. Cook over medium-high heat about 3 minutes, stirring occasionally, until mixture is thickened. Remove from heat; stir in apples and remaining 3 cups pears. Spoon into casserole. Crumble chilled topping over fruit mixture.
  • Bake 35 minutes or until filling is bubbly and topping is golden. Cool 15 minutes. Serve warm.

This yummy fall recipe comes from the food section of the Oregonian newspaper. It is written for fresh or frozen cranberries, not dried. I have increased the amount of orange juice to 1/2 cup based on a review - I made the dish with the new, increased amount, and it was perfect. Because it's somewhat tart, I prefer serving with vanilla ice cream, but sweetened whipped cream is good, too.

2 cups cored diced pears
1 cup granulated sugar
1/2 cup orange juice (preferable fresh-squeezed, from orange used for peel)
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice or 1/4 teaspoon ground mace
1/4 cup brown sugar, packed
3 tablespoons all-purpose flour
1 teaspoon grated orange peel
1/4 cup butter, cut into small cubes
3/4 cup old-fashioned oatmeal or 3/4 cup quick-cooking oatmeal, uncooked
3/4 cup chopped walnuts
whipping cream (optional)
ice cream (optional)

Steps:

  • Preheat oven to 350.
  • Lightly grease a 1 1/2 quart casserole dish.
  • Combine fresh or frozen cranberries, pears, sugar, orange juice, cinnamon, and allspice or mace; mix well. Spoon into prepared dish.
  • In a medium bowl, combine brown sugar, flour, and orange peel; cut in butter until crumbly. Stir in oatmeal and nuts. Sprinkle mixture over fruit.
  • Bake 50 minutes, or until golden brown.
  • Let sit for a few minutes until the bubbling stops. Serve with vanilla ice cream or whipped cream!

I created this to have a little bit healthier dessert and use some fresh pears I had. My family enjoyed it, and I wanted to post it before I forget! Make sure to use ripe, juicy pears. Great served with whipped cream or vanilla ice cream.

3 large pears, peeled and sliced
1/2 cup fresh cranberries
1 teaspoon cornstarch
1/8 cup packed brown sugar
1 teaspoon vanilla
1/2 cup whole wheat pastry flour
3/4 cup oats (old fashioned is good)
1/8 teaspoon salt
1/4-1/2 cup packed brown sugar
3 tablespoons butter, melted
1/2 teaspoon vanilla

Steps:

  • In a bowl, toss pears with cornstarch. Add in cranberries, vanilla and brown sugar and stir gently to coat pears. Pour into an 8x8 pan.
  • Mix dry ingredients for topping. Stir in melted butter and vanilla. Crumble over fruit mixture.
  • Cover with foil and bake at 350 degrees for 20 minutes. Uncover and bake for 15-20 minutes more or until topping is lightly golden and pears are tender. Serve warm with vanilla ice cream or whipped cream, if desired.

1 package(s) (3.4 oz.) vanilla flavor instant pudding
1/2 cup(s) sugar, divided
1 teaspoon(s) ground cinnamon
10 - fresh pears, peeled, cut into 3/4-inch thick slices
1 cup(s) fresh or frozen cranberries
6 tablespoon(s) butter, melted, divided
12 - vanilla wafers, coarsely crushed
1/4 cup(s) sliced almonds

Steps:

  • In a small bowl, mix dry pudding mix, 1/4 cup of the sugar, and cinnamon until well blended. Mix the fruit in a large bowl with 1/4 cup of the melted butter. Add the pudding mixture and mix lightly.
  • Spoon into the slow cooker; cover with lid. Cook on LOW for 3 to 4 hours.
  • While the mixture is cooking, combine the crushed wafers, nuts, remaining sugar and butter in a shallow microwaveable dish. Microwave on HIGH for 1 minute; stir. Microwave another 1-1/2 to 2 minutes or until golden brown, stirring every 30 seconds. Cool.
  • Just before serving, sprinkle the dessert with crumb mixture. Top each serving with whipped topping, if desired--or vanilla ice cream!
  • NOTE: do NOT cook on the HIGH setting of the slow cooker. This will cause the fruit to break down and become mushy.
