STUFFED SALSA VERDE POTATOES WITH LEFTOVER TURKEY
I needed to use some leftover turkey, and had a lot of potatoes, Anaheim chile peppers, and salsa verde that I had made. I think it turned out pretty good.

Steps:
- Preheat an oven to 450 degrees F (230 degrees C). Prick potatoes several times with a fork and place onto a baking sheet.
- Bake in the preheated oven until potatoes are easily pierced with a fork, 50 minutes to 1 hour. Remove from the oven and allow to cool slightly; leave oven on.
- Mix turkey, salsa, and chile pepper together in a bowl.
- Make a slice in the top of each potato and scoop out the inside. Place in a bowl and mash. Add turkey-salsa mixture, sour cream, cream cheese, butter, salt, and pepper; mix to desired consistency. Fill potatoes with mixture and sprinkle Mexican cheese on top.
- Return to the oven and bake until heated through, about 15 minutes.

TURKEY & POTATOES EMPANADAS WITH SALSA VERDE
These empanadas are an unusual and tasty game day appetizer. Onion, cumin, and fennel mixed with the turkey add so much flavor to the stuffing. We really loved dipping these into the salsa verde. The salsa verde adds a bit of tanginess to the empanadas. So yummy!

Steps:
- 1. Preheat oven at 400 degrees. Line a large cookie sheet with parchment paper set aside.
- 2. On stovetop on medium-high heat in a small non-stick pan sprayed with cooking spray add ground turkey, onion, cumin, and fennel seeds. With a spatula break up meat while cooking and cook until meat is no longer pink. Let cool completely.
- 3. In a mixing bowl mix the ground chicken with the chopped potatoes. Mix until well incorporated.
- 4. Unroll pie crust and cut each into 4 pieces.
- 5. Place 1/3 cup of turkey and potatoes mixture in the middle of each crust piece. Fold crust over filling and pinch the edge to secure filing with a sharp knife make small cuts on top of each empanada to let steam escape. Place on cookie sheet.
- 6. Beat egg and brush each empanada with egg wash. Bake in oven 35 minutes.
- 7. Let empanadas rest 5 minutes before serving with salsa verde and sour cream.
CRISP POTATOES WITH SALSA VERDE DRIZZLE
Steps:
- Peel the potatoes and slice them into thin 1/8-inch thick slices. Put them into a large bowl and toss with the thyme, rosemary, and olive oil; season with salt and pepper. Place a large skillet onto the grill and coat the bottom with olive oil. Place the slices into the pan, overlapping them in 1 layer until the entire surface is covered with potatoes. Drizzle some more olive oil over the top. Cook over medium-high heat until the bottoms are browned and crisp. Turn the potatoes over and cook the other side until they are browned and crisp.
- In a food processor add the olives, capers, garlic, and parsley. Process, adding some olive oil in a thin stream, until you have a smooth puree. Mix in the lemon juice and adjust the seasoning with salt and pepper.
- Coat the bottom of a large platter with some of the salsa, pile the potatoes on top, and drizzle on some more salsa.
CROCK POT TURKEY VERDE
I do love green chilies. I was happy to find this simple recipe for green (verde) chile turkey. This is not too spicy and makes wonderful wrap sandwiches. I also use it for main dish servings with mashed potatoes.

- Place the turkey breast half in a 3-1/2 quart crockpot.
- Combine remaining ingredients, stirring, and pour over the turkey.
- Cover crockpot and cook on LO heat for 8 to 10 hours.
- To serve: cut the turkey into slices and wrap (with some sauce) in the warmed tortillas.

BEEF AND POTATO EMPANADAS WITH SALSA PICANTE
Yet another traditional Colombian dish that I learned to make from my mother-in-law. To eat, put a little bit of the picante on each bite. It's one of my favorite meals.**Just a note, until the elves edit this for me, it should be 1/2 lb hamburger meat, not 1 lb. Sorry about that!**

Steps:
- To Prepare the Salsa Picante.
- Prepare the day before you plan to make the empanadas.
- In a medium sized container with a lid, mix all ingredients for the salsa picante.
- Cover tightly, and put in the fridge for at least overnight, preferably a bit longer, in order to let the flavors blend.
- Keep refrigerated until ready to serve.
- To Prepare the Filling.
- In large skillet, sauté hamburger meat, onions, and garlic over medium heat until the hamburger meat is crumbled up and browned.
- In a large pot, combine the browned meat mixture with the remaining filling ingredients.
- Cover mixture with 1/2 inch of water and bring to boil.
- Let boil for one minute, then cover and turn heat to low.
- Simmer, stirring occasionally, for approximately 15-20 minutes, or until the potatoes are tender and the water is absorbed.
- If the water boils out before the potatoes are tender, add more water, 1/4 cup at a time until the potatoes are tender and the water is all absorbed.
- When the filling is ready, turn off heat and allow to cool to room temperature.
- To Prepare the Dough:.
- While the filling mixture is cooling, combine all the dough ingredients in a large bowl.
- Knead until smooth and form.
- When the filling mixture is cooled to room temperature, divide dough into 6 equal parts.
- Roll each part up into a ball, and shape into a circle, approximately 1/8" inch thick (I use my hands for this, I find that a rolling pin only sticks to the dough).
- In the center of each circle, place approximately 2 Tbsp of filling.
- (Leave a margin of about 1/4-1/2" around the filling, in order to fold the empanada).
- Fold the dough in half, so it covers the filling.
- Pinch the edges together.
- If there are any cracks in the dough, or around the edges, simply put a little bit of water on your finger and smooth the cracks together.
- Deep fry the empanadas in hot vegetable oil until the outsides are golden brown.
- Serve with Salsa Picante.

- Mix turkey with chilled gravy in small bowl. Roll out 3 pastry sheets to 12-inch-long rectangles on floured work surface. Cut out 2 six-inch rounds from each pastry sheet, using small plate as guide (6 rounds total). Place each round on one 8- to 9-inch parchment square.
- Spoon 2 1/2 tablespoons mashed potatoes onto half of each pastry round; press lightly to flatten, leaving 1/2-inch border. Top with 2 to 3 tablespoons stuffing, then about 1/3 cup turkey mixture.
- Brush glaze around filling on 1 pastry half. Fold plain pastry half over filling, stretching dough to cover. Seal edges with fork tines. Repeat to form 5 more empanadas. Transfer empanadas (still on parchment squares) to 2 rimmed baking sheets (3 on each sheet), spacing 2 inches apart. Chill empanadas 20 minutes.
- Preheat oven to 425°F. Press edges of empanadas again with fork tines. Brush empanadas with egg-white glaze and cut small slits in top to allow steam to escape. Bake empanadas 10 minutes. Reduce heat to 350°F and bake empanadas until puffed and golden, 25 to 35 minutes longer. Serve empanadas, passing cranberry sauce alongside.
