Ingredients

5 pounds white boiling potatoes, cooked, diced and cooled
4 to 5 hardboiled eggs, finely chopped
1 cup chopped celery
1/2 cup sweet pickle relish
1/2 cup finely chopped onion
2 cups mayonnaise
2 tablespoons brown mustard
2 tablespoons sugar
Salt and pepper

Steps:

Place the potatoes in a large bowl. Add the eggs, celery, relish and onions.
Mix the mayonnaise, mustard and sugar in a small bowl. Slowly pour the mayonnaise mixture into the potatoes - don't put it all at once - and mix together until moist. You might not use all of the 2 cups of the mayonnaise mixture (it depends on the potatoes). Add salt and pepper to taste.

1 shallot, finely chopped
1 ½ teaspoons honey
1 teaspoon Dijon mustard
¼ teaspoon salt
¼ cup extra-virgin olive oil
2 tablespoons fresh lemon juice
2 tablespoons rice vinegar
16 cups arugula

Steps:

Combine shallot, honey, mustard, and salt in a jar with a lid; add olive oil, lemon juice, and vinegar. Cover jar with lid and shake until dressing is thickened.
Place arugula in a bowl and drizzle dressing over greens; toss to coat.

1/2 cup olive oil
1/4 cup apple cider vinegar
1 tablespoon pure maple syrup or honey
1 tablespoon Dijon mustard
1 teaspoon poppyseeds
Kosher salt and freshly ground black pepper
3 heads assorted Butter lettuces, leaves separated
1 Granny Smith apple, quartered, cored and thinly shaved

Steps:

Add the oil, vinegar, maple syrup, mustard and poppyseeds to a glass jar with a lid. Season with salt and pepper, then vigorously shake to combine.
Add the lettuce and shaved apples to a serving bowl. Lightly dress with the vinaigrette and toss to combine.

This recipe came from my husbands granny. This is not a sweet relish salad! It is so creamy and amazing if you like dill potato salad.

6 -7 red potatoes (size of large egg)
2 hard-boiled eggs
1/2 cup onion, chopped
1/2 cup celery, chopped
1/2 cup red pepper, chopped
1/2 teaspoon dill weed
1 tablespoon prepared mustard
1/3 cup mayonnaise
1/3 cup sour cream
1/8 cup red wine vinegar (if using alternative vinegar it might be stronger)
1 dash salt
1 dash pepper
1 dash garlic powder

Steps:

Wash and peel potatoes. Cut into bite size pieces and boil.
Drain and add all ingredients.
Mix together and chill before serving.
