Put away the knives because you won't need them if you make this fork tender, juicy lamb recipe. This succulent lamb is not gamey and is easy enough for everyday while still being impressive enough to honor your guests. If you like lamb, I cannot recommend this recipe enough.

3 lb Leg of lamb roast (I used boneless. Fat & elastin trimmed - this gets rid of the strong gamey taste most people fuss about.)
2 tsp Salt (*enough to generously rub into the meat. I used about 2 tsp.)
1 tsp Black pepper (*enough to generously pepper to meat. I used about 1 tsp)
2 tbsp Olive oil (*enough to sear the lamb in.)
10 garlic cloves
2 tsp rosemary (dried)
1 tsp thyme (dried)
1 cup Red Wine
1 cup broth (beef or chicken broth)
2-3 bay leaves
1 Onion (Sliced)
2 Celery Sticks (* Optional for flavor -sliced)
1 carrot (* Optional for flavor- sliced)
Parsley for garnish

Steps:

  • Trim the thick outer fat and elastin from the lamb. You can unroll the boneless leg of lamb and trim the inside too of desired. This is where the gamey flavor in lamb comes from. See post.
  • If time allows let lamb set on the counter for 1 hour, until it is room temp. If not, continue.Pat lamb dry and season generously with kosher salt and black pepper, getting into all of the crevices.
  • Coat the bottom of a large skillet with olive oil, cast iron is ideal. Heat skillet over medium heat until hot. Add the lamb and sear well on all sides. This takes 5-8 minutes. Work in batches if you have several pieces of meat instead of one roast. Remove from heat until cool enough to handle.
  • Cut a slits into the lamb on all sides and insert a clove of garlic in each of the slits. Cut large cloves in half if the cloves are unreasonably large.
  • Rub or pat the rest of the spices into the lamb with your hands.
  • Add Onion,bay leaves, carrot and celery (if using) to the bottom of a large slow cooker (crock pot). Add wine and broth and add the seared & spiced lamb on top.
  • Cover slow cooker and set on low for 5 to 6 hours or on high for 3-4 hours until lamb is fork-tender and it easily falls apart. You can either discard the bay leaves and vegetables or serve them on the side if desired (Not included in the nutrition. They are included in the pot mostly for flavor.)
  • Transfer to a serving platter and add the resulting rich broth to a gravy boat on the side to serve. Keeps chilled for 3-4 days.

Flavorful, fall-apart tender boneless leg of lamb, seasoned Greek-style with loads of garlic, rosemary, oregano. Let your slow cooker do all the magic as this lamb leg cooks along with pearl onions in a special wine broth. See notes if you need braising instructions instead. 3 lb/ 1.360 kg Bone less leg of lamb, fat trimmed
Kosher salt
Black pepper
Early Harvest Greek extra virgin olive oil
12 garlic cloves (6 thinly sliced and 6 minced)
2 tsp / 2.3 g dry rosemary
2 tsp fresh thyme (from 4 or 5 springs)
1 tsp dry oregano
3/4 tsp sweet paprika
Juice of 1 lemon
1 lb pearl onions, peeled (or shallots, if you prefer)
1 cup dry red wine
1/2 cup low-sodium broth (beef or chicken broth is fine)
Parsley for garnish

Steps:

  • Pat lamb dry and season generously with kosher salt and black pepper on all sides (if you have the time, set it aside at room temperature for up to 1 hour, otherwise continue on)
  • Coat the bottom of a large skillet (I used my cast iron skillet) with a little bit of extra virgin olive oil. Heat skillet over medium heat until oil is shimmering but not smoking. Add the lamb and brown well on all sides (increase heat to medium-high if needed); about 7 minutes. Remove from heat and let cool enough to handle.
  • Cut a few slits into the lamb on both sides and insert a slice of garlic in each of the slits.
  • Now make a wet garlic spice rub for the lamb. In a small bowl, combine the minced garlic, rosemary, thyme, oregano, and paprika. Add lemon juice and 3 tbsp extra virgin olive oil. Coat lamb on all sides with the garlic spice rub.
  • Add pearl onions (or shallots) to the bottom of a large slow cooker (crock pot). Add wine and broth, then add the spiced lamb on top.
  • Cover slow cooker and set on high for 3 to 4 hours or on low for 5 to 6 hours until lamb is fork-tender and you can easily pull it apart.
  • Transfer to a serving platter adding the cooking juice on top or to the side to serve along. (See sides to serve along in the notes)

2 tbsp olive oil
1.3kg boneless leg of lamb , tied
30g unsalted butter
2 tbsp plain flour
300ml lamb stock
200ml red wine
2 red onions , cut into wedges
2 garlic cloves , sliced
5 sprigs of thyme
5 sprigs of rosemary
mashed potatoes and steamed veg, to serve

Steps:

  • Heat the oil in a large non-stick frying pan. Add the lamb and brown on each side for 4-5 mins. Set the slow cooker to low. Melt the butter in a saucepan until foaming, then stir through the flour. Whisk in the stock gradually until incorporated, add the wine and bring to the boil. Set aside.
  • Put the onion, garlic, thyme and rosemary into your slow cooker and sit the lamb on top. Pour over the lamb gravy. Put the lid on and cook for 8 hrs or until soft and tender.
  • Remove the lamb and set, covered, on a plate. Strain the liquid into a pan and simmer until slightly thickened. Serve the lamb thickly sliced or shredded (it'll be quite soft) with mashed potatoes, green veg and the gravy.

1/3 cup canned black olives, chopped
4 cloves garlic
1 tablespoon ground cumin
1 teaspoon chili powder
1/4 teaspoon cayenne pepper
2 tablespoons lite olive oil (or virgin)
3 1/2 lbs leg of lamb, bone in

Steps:

  • Preheat the oven to 350F, lightly oil a shallow roasting pan.
  • In your blender (food Processor), with the metal blade blend the olives, garlic, spices and oil.
  • Blend until almost pureed.
  • Smear all over the lamb leg, place roast in the pan and roast for apprx 1 hour (apprx 20 minutes per lb.) or until the internal temp reaches 155F.
  • Let it rest for 10 minutes before carving.

1 tablespoon extra-virgin olive oil
1 (4 pound) leg of lamb
1 large sweet onion, sliced
5 cups water
½ cup soy sauce
2 cloves garlic, minced
1 (1 ounce) package dry onion soup mix
2 tablespoons butter
2 tablespoons all-purpose flour

Steps:

  • Heat oil in a large skillet over medium-high heat. Add lamb and cook until outside is browned, about 5 minutes per side. Remove to a plate and add onion to the oil in the skillet. Saute until lightly browned, about 5 minutes.
  • Place onion in the bottom of a slow cooker pot and place the lamb roast on top. Mix water, soy sauce, garlic, and onion soup mix together and pour over the roast. Cook on Low for 8 to 10 hours.
  • Remove roast, cover lightly with foil, and let rest for 20 minutes before carving. Mix butter and flour into a paste. Add small pieces of this paste to the hot cooking liquid, mixing well to incorporate. Cook until sauce reaches desired thickness, 5 to 6 minutes.
  • Slice roast thinly and serve with gravy.

shoulder of lamb , about 2kg
1 garlic bulb , cloves separated but the skin left on
about 30g anchovies
2 tbsp olive oil
10 tomatoes , left whole
6 carrots , peeled but left whole
handful fresh sage
handful fresh rosemary
handful fresh thyme
tzatziki , chickpea salad and flatbreads, to serve

Steps:

  • Heat oven to 160C/140C fan/gas 3 and sit a shelf as low as possible. Pierce the lamb all over with a small knife, then fill each slit with a garlic clove and half an anchovy fillet. Rub all over with the oil, then season.
  • Heat a flameproof casserole dish and sear the lamb all over until well browned. Take off the heat, remove the lamb from the dish and tip in the tomatoes, carrots, sage and rosemary. Sit the lamb on top and scatter over the thyme.
  • Cover the dish, slip it onto the bottom shelf of the oven and cook for 4-5 hrs until pull-apart tender. Carefully lift the lamb from the dish, discard the herbs and roughly squash the tomatoes into the juices. Sit the lamb back in the dish and serve in big shredded chunks with tzatziki, chickpea salad and flatbreads for mopping up the juices.

2 tbsp olive oil or rapeseed oil
1kg diced lamb shoulder
2 onions, halved and sliced
5 garlic cloves, crushed
thumb-sized piece ginger, peeled and grated or finely chopped
1 tbsp ground cumin
1 tbsp ground coriander
1 tsp ground cinnamon
pinch saffron (or turmeric, to add colour)
½ large or 1 small preserved lemon, skin only, finely chopped
1 tbsp tomato purée
600ml hot beef stock or lamb stock
1 tbsp honey
1 lemon, zested, plus a squeeze of juice
80g pitted Kalamata olives
handful chopped mint, coriander or parsley (or a combination)
couscous or rice, to serve

Steps:

  • Set the slow cooker to low. Heat 1 tbsp oil in a pan and brown the lamb in batches, transferring to the slow cooker as you go. Add the remaining oil and the onions to the pan and cook for 8-10 mins until softened. Tip in the garlic and ginger and stir for 1-2 mins, then add the spices, preserved lemon and tomato purée. Warm through, then tip into the slow cooker. Swirl some water around the pan, then pour into the slow cooker along with the stock. Season, cover and cook for 6-8 hrs.
  • Once the meat is really tender, turn the heat up to high. Add the honey, lemon and olives and cook for 20-30 mins. Top with the herbs and serve with couscous or rice.
