Steps:
- Heat the oil in a large, deep sauté pan or saucepan. Tip in the onion and thyme sprigs and fry for 2-3 mins. Then add the carrots and fry together for 5-8 mins, stirring occasionally until the vegetables start to brown. Stir in the mince to break it down. Fry for 1-2 mins until no longer pink. Stir in the flour, scraping the bottom of the pan in case the meat sticks, then cook for another 1-2 mins. Pour in the stock and stir until thickened. Stir in the tomatoes, tomato purée, lentils and Worcestershire sauce and season with pepper. Reduce the heat and simmer, covered, for 45 mins, stirring occasionally.
- Meanwhile, prepare the topping. Drop all the potatoes into a large pan of boiling water. Bring back to the boil, then simmer for 12-15 mins or until the potatoes are tender. Drain well in a colander then tip back into the pan. Mash with a masher or, briefly, with an electric hand mixer until smooth. Beat in the crème fraîche and milk with a wooden spoon until light and fluffy. Heat oven to 200C/180C fan/gas 6.
- Spoon the meat into a 1.5 litre pie dish and remove the thyme sprigs. Top with the mash and smooth over with a knife. Use a fork to create a ridged pattern on top. Place the dish on a baking sheet and bake for about 20-25 mins until piping hot and the filling starts to bubble around the edges. If the top is not brown enough, pop it under the grill for 5 mins or so until the mash is crisp and golden. Let it sit for 5 mins then serve.

Steps:
- Preheat oven to 375 degrees F.
- Heat the olive oil and 2 tablespoons of the butter in a large skillet over medium heat. Add the onion, carrots, celery, mushrooms, garlic, half the salt, and oregano. Cook until vegetables are tender, about 10 minutes. Stir in the tomato paste and cook until mushrooms are soft and tomato paste has turned brick red, about 8 minutes more. Stir in the beef, the broth, the remaining salt, the Worcestershire, and some pepper, breaking up any large clumps of meat, cook until the meat is no longer pink, about 3 minutes.
- Transfer the meat and vegetables to a 2-quart oval casserole dish and spread the mashed potatoes over the top, leaving a 1/4-inch boarder around the edge. Make a decorative pattern on the top of the potatoes, if desired. Sprinkle with cheese, if using, and dot with the remaining tablespoon of butter. Bake until potatoes brown and the juices bubble around the edge, about 40 minutes. Let cool for 10 minutes before serving.
- Put the potatoes in a saucepan with cold water to cover by about 1-inch and add the salt. Bring to a simmer over medium-high heat, uncovered, until the potatoes are tender but not mushy, about 15 minutes. At the same time, combine the milk and butter in a small saucepan and warm over low heat until the butter is melted. Remove from the heat and cover to keep warm.
- Drain the potatoes and return to the saucepan. Toss the potatoes over medium heat until dry. Add the heated milk mixture and mash the potatoes until just slightly chunky, then stir in the parsley and season with salt and pepper, to taste.

- Heat oil in large frying pan and saute the onions until softened, then add the garlic and heat for 2 minutes.
- Raise the heat and add the ground beef. Cook quickly to brown, stirring occasionally. Once browned, add the carrots, celery, and pepper, paprika, garlic powder, worchestershire sauce, salt & pepper and cook several minutes.

- On top of the meat mixture, spread the peas on half of the casserole and the corn on the other half (or whichever vegetables you prefer). Pipe or spread the potatoes on top of the vegetables.
- Increase the oven to 400F and cook for 15 - 20 minutes until till golden brown. You can choose to finish it off under the broiler for a few minutes for a really crisp brown topping.

Steps:
- Peel the potatoes and cut into 1/2-inch dice. Place in a medium saucepan and cover with cold water. Set over high heat, cover and bring to a boil. Once boiling, uncover, decrease the heat to maintain a simmer and cook until tender and easily crushed with tongs, approximately 10 to 15 minutes. Place the half-and-half and butter into a microwave-safe container and heat in the microwave until warmed through, about 35 seconds. Drain the potatoes in a colander and then return to the saucepan. Mash the potatoes and then add the half and half, butter, salt and pepper and continue to mash until smooth. Stir in the yolk until well combined.
- Preheat the oven to 400 degrees F.
- While the potatoes are cooking, prepare the filling. Place the canola oil into a 12-inch saute pan and set over medium high heat. Once the oil shimmers, add the onion and carrots and saute just until they begin to take on color, approximately 3 to 4 minutes. Add the garlic and stir to combine. Add the lamb, salt and pepper and cook until browned and cooked through, approximately 3 minutes. Sprinkle the meat with the flour and toss to coat, continuing to cook for another minute. Add the tomato paste, chicken broth, Worcestershire, rosemary, thyme, and stir to combine. Bring to a boil, reduce the heat to low, cover and simmer slowly 10 to 12 minutes or until the sauce is thickened slightly.
- Add the corn and peas to the lamb mixture and spread evenly into an 11 by 7-inch glass baking dish. Top with the mashed potatoes, starting around the edges to create a seal to prevent the mixture from bubbling up and smooth with a rubber spatula. Place on a parchment lined half sheet pan on the middle rack of the oven and bake for 25 minutes or just until the potatoes begin to brown. Remove to a cooling rack for at least 15 minutes before serving.

Add the heavy cream, 1 tablespoon salt, and a few grinds of black pepper, and cook until warm, about 1 minute. Return the potatoes to the pan with the cabbage and add the cheese. WHAT TO SERVE WITH SHEPHERD’S PIE? 13 SAVORY SIDE DISHES
From eatdelights.com

- Corn Salad. Corn salad is a dish that has it all. It’s colorful, flavorful and textured with sweet corn kernels as the base while cucumbers are crisp in every bite balanced by juicy tomatoes.
- Condensed Milk Bread. Recently, I came across a type of Japanese bread called “Condensed Milk Bread” that is especially light and fluffy. This bread has the same qualities as a cloud in its taste and texture; it can be eaten plain or with something heavy like shepherd’s pie to balance out the meal.
- Baked Beans. I love the perfect balance of a creamy shepherd’s pie! I would recommend serving it with some sweet and smoky baked beans to give your taste buds an extra boost.
- Mushy Peas. Mushy peas may not sound appetizing at first, but they are a terrific side dish. They pair well with fish and chips—they also complement the flavors of shepherd’s pie!
- Beet Salad. Beets, arugula, feta cheese, and cranberries – just imagine the color, texture, or flavor! This is definitely not your typical boring salad.
- Green Beans. The beauty of the green beans in shepherd’s pie is unmatched. This dish has a wonderful crunch and just the right flavor with added toasted almonds for that extra punch!
- Roasted Brussel Sprouts. I think we can all agree that no one is ever happy to see a Brussels sprout. But I’m here today with some good news: steamed, grilled, raw, and especially roasted.
- Irish Soda Bread. Irish soda bread is the perfect food to enjoy when you are looking for a quick and filling meal. It has an outside crust that’s crunchy, while on the inside it’s moist with dense texture which makes this easy-to-make recipe not only delicious but also quite satisfying!
- Roasted Cauliflower. Cauliflower is a staple in many cuisines, but it can be pretty bland. Luckily there are ways to spice things up! Simply pop your cauliflower into the oven with some olive oil and salt- pepper, you’ll soon have an incredibly delicious side dish that goes well on just about anything from Shepherd’s Pie for dinner tonight or as a healthy snack at work tomorrow morning.
- Yorkshire Pudding. Yorkshire pudding is a delicious British dish, with crispy outsides and tender insides. It’s perfect for any meal! The batter for this dish consists of flour, milk, eggs, and salt- so easy to make (and you don’t even have to buy any special ingredients).

- Pour beef mixture into a large, oven-proof casserole dish then top with mashed potatoes and sprinkle with garlic salt.
- Place casserole dish on a large sheet pan (in case the sauce overflows) then bake for 20-30 minutes, or until top is golden brown. Scoop onto plates then serve.

- Into a large pot add olive oil and heat for 30 seconds on medium-high heat. Add your onions and cook for around 5 minutes or until soft and translucent. Add in your garlic, basil, oregano, cumin, cinnamon and cloves. Stir until onion is well coated and turn heat to low to cook and marry for around 3 minutes. Stir often to avoid burning.
- Into the pot add your tomato puree, tomato paste and vegetable stock paste. Give this all a good stir and then increase heat to high before adding your lentils and Yves Ground Round. Let them sautéed in the pan for two minutes before adding your water. Stir, stir, stir, bring to a boil then simmer for 20 minutes until thick and luscious like a traditional meat sauce. Set aside once done.
- While your “meat” sauce is simmering prepare your mashed potatoes by boiling water in a large stockpot. Season your water and cook your potatoes till very tender, could take 15 minutes or so. Strain your potatoes but absolutely do not rinse and return to pot. Add the remainder of the ingredients and mash till extremely rich and creamy! Remember, when adding your liquid that you must have a more solid mash to add on top of the first layer! Set aside.

- Preheat the oven to 400F/205C. Peel and cubed the potatoes and place them into a large pot of salted water. Bring the potatoes up to a boil and cook them for approximately 15 minutes, or until fork tender and soft.
- Meanwhile, begin preparing the ground lamb filling. Preheat a large frying pan over medium-high heat and add a drizzle of cooking oil; I like to use avocado oil. To the hot pan, add the ground lamb. Brown the lamb for 7 to 9 minutes, until well browned all over; break the meat into small pieces as it’s cooking with a spatula. Season the lamb generously with salt and ground black pepper. Transfer the browned lamb into a bowl and set aside.
- Into the same pan, add a couple tablespoons of butter and reduce the heat to medium. Into the melted butter, add the diced onion and carrots. Sauté the mixture for about 4 minutes, until the veggies are softened. Next, add in the minced garlic and cook for 1 minute, then add the peas and corn.
- Return the browned lamb into the pan and season the filling with fresh thyme, rosemary, parsley and paprika. Season the filling to taste with salt and black pepper; I use about 1 tsp salt and 1/2 tsp pepper. Next, add in the red wine and Worcestershire sauce; let the liquids reduce for about 1 minute. Add the tomato paste and ketchup/tomato sauce next and stir until well combined.
