1/3 cup sliced celery
1/4 cup chopped onion
1 Tbsp. butter or margarine
1 Tbsp. flour
1 cup chopped tomatoes
1 can (6 oz.) tuna, drained, flaked
2 oz. VELVEETA, cut up
1/4 tsp. dried basil leaves
1-1/2 cups hot cooked rice

Steps:

  • Cook and stir celery and onion in butter in large skillet on medium heat until crisp-tender. Add flour; stir until well blended.
  • Add tomatoes, tuna, VELVEETA and basil; cook until VELVEETA is completely melted, stirring occasionally.
  • Serve over the rice.

1 ½ cups instant rice
1 ½ cups water
1 clove garlic, minced
2 tablespoons finely chopped onion
½ teaspoon salt
½ teaspoon freshly ground black pepper
1 (5 ounce) can tuna, drained
½ cup mozzarella cheese, shredded
¼ cup tomatoes, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan, mix water, garlic, onion, salt and black pepper. Cover and bring to a boil. Let boil for 1 minute, then stir in the rice. Cover and remove from heat. Let stand for 5 minutes.
  • Line the bottom of a 9x5 inch loaf pan with half of the rice. Top with drained tuna, cheese, tomatoes and the remaining rice.
  • Bake in a preheated oven for 20 minutes.

4 skinless chicken thighs, or more to taste
1 pinch Creole seasoning, or more to taste
2 tablespoons butter
1 (15 ounce) can diced tomatoes with green chile peppers
1 cup water
1 (8 ounce) can tomato sauce
1 (6.8 ounce) package Spanish-style rice mix

Steps:

  • Season chicken thighs with Creole seasoning.
  • Melt butter in a skillet over medium heat; cook chicken in the melted butter until browned, 3 to 4 minutes per side. Transfer chicken to a plate. Add tomatoes with green chile peppers, water, tomato sauce, and Spanish-style rice mix to the same skillet; stir well. Return chicken to the rice mixture and bring to a boil. Reduce heat, cover skillet, and simmer until chicken is no longer pink in the center and rice is tender, about 40 minutes. Serve on a platter with chicken atop the rice.

2 tablespoons olive oil
4 garlic cloves, minced
2 large onions, chopped
2 stalks celery, chopped
1 green bell pepper, chopped
1 teaspoon cayenne pepper
2 cups seafood stock or shrimp stock
1 (28-ounce) can whole tomatoes, in thick puree
Dash Worcestershire sauce
Dash hot sauce
2 bay leaves
Kosher salt and freshly ground black pepper
2 pounds large shrimp (about 32), shelled and deveined
4 tablespoons green onions, sliced for garnish

Steps:

  • Heat a large heavy Dutch oven over medium heat. Add oil. Cook garlic, onions, celery, and green bell peppers. Cook until softened, about 5 minutes. Stir in cayenne and let caramelize. Add the seafood stock, tomatoes, Worcestershire, hot sauce, and bay leaves. Season with salt and pepper. Simmer for 35 minutes. Add shrimp and cook about 4 more minutes, until they are bright pink and cooked through. Garnish with green onions.

2-1/2 cups cooked rice (extra long grain preferred)
1 10-oz bag frozen seasoning blend (pre-chopped onion, bell pepper, and celery)
1/2 cup butter
1 pound shrimp, raw, peeled and deveined
1 teaspoon minced garlic
1 teaspoon Cajun seasoning, or to taste (Tony Chachere's or Slap ya Mama)
1/2 teaspoon black pepper
1 10.5 oz can cream of mushroom soup
1 10.5 oz can cream of cheddar soup

Steps:

  • Cook the rice according to package directions. Let cool slightly.
  • Preheat oven to 350F. In a large pan, saute the onion, bell pepper, and celery mixture in the butter for 5 minutes.
  • Add the shrimp, garlic, cajun seasoning, and black pepper. Simmer for about 5 more minutes.
  • Add the soups and cooked rice. Mix well. Taste test and add additional seasoning, if desired.
  • Pour into casserole dish. Bake covered at 350F for 30 minutes.
