Slow Cooker Maple Dijon Chicken and Sweet Potatoes image

Chicken, sweet potatoes and brussels sprouts drizzled with a sauce made with maple syrup, dijon mustard, rosemary and olive oil. A simple one pot recipe with a delicious flavor!

1 1/2 pounds boneless skinless chicken breasts or thighs, cut into cubes
1 pound sweet potatoes, cut into 1 inch cubes
1 pound brussels sprouts, whole, washed and ends trimmed off
3 Tbsp dijon mustard
3 Tbsp real maple syrup
1 tsp dried rosemary
1 tsp kosher salt
1/2 tsp black pepper
2 Tbsp olive oil

Steps:

  • In a small bowl whisk together the dijon, maple syrup, rosemary, salt, pepper and oil. Drizzle the mixture over the chicken and vegetables. Toss to coat.
  • Cover the slow cooker and cook on low for 4-6 hours or until chicken and vegetables are cooked through.
  • Stir and serve.

2 large boneless, skinless chicken breasts
Salt and pepper
3 Tbsp maple syrup (drizzled over chicken)
3 medium sweet potatoes (peeled and cubed)
1 lb. bag baby carrots
1 small onion

Steps:

  • Place the chicken the base of the slow cooker. Season with salt and pepper. Drizzle the maple syrup all over the chicken.
  • Place the cubed sweet potatoes, baby carrots or carrot sticks and chopped red onion over the top. Sprinkle a little more salt and pepper over it all.
  • Set the slow cooker on low and let cook for 8 hours.
  • Serve Slow Cooker Chicken with Sweet Potatoes and Baby Carrots.
  • To pack into gallon size freezer baggie: Labelandfollow the same order and directions in the first 2 bullets to fill the bags. Remove as much air as you can and seal. Freeze up to 6 months in your fridge freezer or 12 months in a deep freezer.
  • Tothaw, place the bags in the fridge overnight. Or quick thaw in a bowl of warm water.

This slow cooker Soy Maple Glazed Chicken and Sweet Potatoes dish is packed with flavor. Don't be scared by the two tablespoons of sriracha it calls for ... it becomes pretty mild after cooking for so many hours, and you'll hardly even notice it's there!

1 1/2 pounds chicken drumsticks
1 1/2 pounds bone-in, skin-on, chicken thighs
1 1/2 pounds sweet potatoes (cut into 1" thick wedges)
1/2 cup chicken broth
1/3 cup pure maple syrup
2 tablespoons soy sauce
2 tablespoons sriracha ((it's not that spicy after being in the slow cooker for so long!))
1/2 teaspoon salt
2 tablespoons butter (or olive oil)
2 tablespoons whole-wheat flour

Steps:

  • Use kitchen shears to cut off and remove the big pieces of skin from the chicken (it helps reduce the amount of fat rendered into the sauce). No need to do a perfect job here.
  • Place chicken in the bottom of the slow cooker. Layer sweet potato wedges on top.
  • Whisk together the chicken broth, syrup, soy sauce, sriracha, and salt. Pour over top of the sweet potatoes and chicken. Cook on low for 5 to 6 hours, or high for 3 to 4 hours, until the chicken is tender and almost falling off the bone.
  • Preheat the oven broiler to high. Remove and run the cooking liquid (from the bottom of the slow cooker) through a fine-mesh strainer, you should have about 2 cups. Skim the fat off the top and discard, if desired.
  • Heat the butter or olive oil in a small pot or saucepan over medium heat. Whisk in the flour and cook while stirring to help break up any clumps until it browns, but does not burn, 2 to 3 minutes. Whisk in the cooking liquid and lightly boil over medium-low heat, while stirring occasionally, until it reduces by half into a glaze, 5 to 10 minutes.
  • Meanwhile, line a baking sheet with foil and use a slotted spoon or spatula to carefully transfer the chicken and sweet potatoes in one layer (without letting the pieces break apart).
  • Pour/brush the thickened cooking liquid on top of the chicken and potatoes and place under the broiler until bubbly and dark brown, 6 to 8 minutes, and serve immediately.

1 small to medium acorn squash, peeled, seeded, and cut into 2-inch pieces
2 sweet potatoes, peeled and cut into 2-inch pieces
2 leeks, rinsed and chopped
5 (5-ounce) skinless chicken breast halves (with or without bone)
Salt and ground black pepper
1 cup orange marmalade
1/2 cup reduced-sodium chicken broth
1/2 cup orange juice
1 tablespoon hoisin sauce
1 tablespoon maple syrup
1/4 cup chopped fresh parsley leaves
1 to 2 tablespoons finely chopped fresh rosemary leaves

Steps:

  • Place squash and sweet potatoes and leeks in the slow cooker. Season chicken all over with salt and black pepper and place on top of vegetables in slow cooker. In a medium bowl, combine orange marmalade and remaining ingredients. Pour mixture over chicken and vegetables. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
  • Serve 4 of the chicken breast halves with squash and potatoes on the side and extra sauce spooned over top (reserve remaining chicken for pizza). Top with parsley and rosemary just before serving.

1 ½ pounds sweet potatoes, peeled and cut into 1-inch pieces
1 pound chicken tenders
2 teaspoons steak seasoning (such as Montreal Steak Seasoning®)
2 tablespoons vegetable oil
½ cup maple syrup
½ cup sliced green onions

Steps:

  • Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash the potatoes, and set aside.
  • Sprinkle chicken tenders with steak seasoning; heat the oil in a large skillet over medium heat, and cook the chicken tenders until the meat is lightly browned and no longer pink inside, 5 to 8 minutes per side. Remove the chicken, and set aside. Stir the maple syrup into the skillet, scraping up and dissolving any browned flavor bits from the skillet. Bring to a boil, simmer for 2 minutes, and stir in the green onions.
  • To serve, place the mashed sweet potatoes onto a serving platter, top with the chicken tenders, and pour the maple sauce over the chicken.
