GUAJILLO-BRAISED BEEF SHORT RIB TACO
Everyone has his or her favorite Tacolicious taco, but this is mine, hands down. These short ribs cooked slowly with guajillos break down into the perfect braised meat: rich, a tad spicy, and appropriately messy-a true sign of greatness. You can ask your butcher to bone the ribs for you, or you can just cook them with the bone in and then bone them before shredding the meat. You'll need 5 pounds of bone-in short ribs to yield the required 3 pounds of meat. This dish can be on the spicy side, so if you're really sensitive to heat, cut back a little on the chiles.

- Preheat the oven to 325°F.
- Working in two batches if necessary to avoid crowding, lightly toast all of the chiles in a dry, heavy skillet over medium heat for 30 seconds on each side, until fragrant but not blackened. Set them aside on a plate.
- Heat 2 tablespoons of the oil in a Dutch oven or other heavy pot with a lid over medium-high heat. When the oil is hot, working in batches to avoid crowding, add the meat and sear for about 3 minutes on each side, until the pieces have formed a uniformly browned crust. Add more oil to the pot as needed to prevent scorching. As the pieces are ready, set them aside on a plate.
- Add the onion to the same same pot over medium heat and cook, stirring occasionally, for about 5 minutes, until it starts to brown. Add the garlic and cook for an additional 2 minutes.
- Pour in the beer, add the toasted chiles, and turn down the heat to low. Simmer uncovered, stirring occasionally, for about 5 minutes, until the chiles have softened and are pliable. Remove from the heat and let cool.
- Transfer the contents of the pot to a blender and reserve the pot. Add the cumin, pepper, oregano, salt, and water to the blender and blend the mixture on high speed until smooth and the consistency of cream, adding more water if needed to thin the mixture a bit.
- Return the seared meat to the pot and pour in the chile mixture. Cover, transfer to the oven, and cook, stirring occasionally, for 3 to 4 hours, until the meat is fork-tender.
- Remove from the oven and, using tongs or a couple of forks, shred the meat in the pot. Taste and adjust the seasoning with salt if needed. Serve with the tortillas, onion, cilantro, salsa, and lime.
SHORT RIB TACOS
Whenever we go to Houston to visit family, we like to track down cabeza-cow's head, cooked slowly, resulting in extremely tender meat that's excellent in tacos. Cabeza is hard to find in Seattle, so I use short ribs to replicate the texture. - Preheat oven to 325°. In an ovenproof Dutch oven, heat oil over medium-high heat. Sprinkle beef with salt and pepper; brown in batches. Remove with tongs., Reduce heat to medium. Add carrots and onion to drippings; cook, stirring frequently, until starting to brown, 3-5 minutes. Add cocoa; toast, stirring frequently, until aromatic, 1-2 minutes. Add tomato sauce and beer, stirring to loosen browned bits from pan. Bring to a boil; simmer 2-3 minutes. , Return ribs to pan; add water, if necessary, to cover. Bake, covered, until meat is tender, 2-1/2 to 3 hours. Remove from oven; drain, reserving juices. When cool enough to handle, remove ribs from pan and remove meat from bones; discard bones. Shred meat with 2 forks. Skim fat from reserved juices. Return meat and juices to Dutch oven; heat through. Serve on tortillas with pico de gallo and queso fresco.

BARBACOA PULLED-BEEF TACOS

- Pour the vinegar and lime juice into a large bowl (it should be able to hold all the beef ). Whisk in the chipotle paste, garlic, spices, herbs, sugar and some seasoning. Mix in the beef, ensuring it's well-coated, then cover and leave to marinate for 1-2 hrs, or chill overnight.
- Heat the oven to 160C/140C fan/ gas 3. Put the beef on a plate, then tip the marinade into an ovenproof casserole, along with any bits that have stuck to the bowl. Pour in the stock and bring to a simmer. Add the beef and simmer for 1 min, then cover and cook in the oven for 2 hrs.
- If the beef isn't tender enough to shred, cook for 15 mins more, then check again. Leave until cool enough to handle, then lift onto a board using a slotted spoon. Bring the sauce to the boil and reduce to about 300ml. Meanwhile, roughly shred the beef, discarding any fat or gristle. Stir back into the sauce to reheat, then serve in the casserole dish with the tacos, coriander and toppings on the side for everyone to help themselves.

- Bring a small pot of water to a boil. Add the dried ancho chiles, reduce the heat and simmer until softened, about 15 minutes. Drain and discard the liquid.
- Place the softened chiles on a cutting board to remove the stems, seeds, and ribs. You can easily peel the skin off as well, but you don’t have to. Place the peppers in a blender and add the onion, garlic, brown sugar, apple cider vinegar, cumin, salt, pepper, cayenne, and beef broth. Puree until smooth.
- Pat ribs dry and generously season on all sides with kosher salt and pepper. Heat the oil in a large heavy skillet over medium-high heat. Brown the ribs in 2 batches, turning every minute or so, 6-7 minutes per batch. Transfer the browned ribs to a 7-8 quart slow cooker.
- Pour the pureed sauce over the ribs. The sauce will reach about halfway or so up sides of the meat. Cover and cook on low for 7-9* hours until very tender and falling off the bone (if using boneless ribs, cook on low 6-8 hours).

- In a large skillet, heat the oil over medium-high heat. Begin to brown the beef ribs in batches until browned on both sides, about 3 to 4 minutes per side. Place them inside a large slow cooker once they’ve browned.
- In a blender, combine the chipotle peppers in adobo sauce, garlic, tomato paste, lime juice, apple cider vinegar, cumin, salt and beef stock. Blend until the sauce is homogenous. Transfer to the slow cooker and pour over the beef. Add half of the chopped onion, reserving the remaining half for serving, and the bay leaves.
- Remove the ribs from the sauce. Remove any excess fat from the ribs; discard the bones and shred the meat. Using a slarge spoon, skim the fat from the surface of the sauce in the slow cooker. Transfer the meat back to the slow cooker and combine with the sauce.

- Season both sides of short ribs with a good amount of salt and pepper. Heat a little bit of olive oil in a large skillet over medium-high heat, sear all sides of the short ribs for 1-2 minutes, remove from heat.
- In a small bowl, mix together the chili powder, paprika, garlic powder, cayenne pepper, and a little bit of salt. Rub spice mixture onto the short ribs.
- Add 1 tablespoon olive oil to the crock pot, place short ribs in the crock pot and pour in the beer and juice of one lime. Cook on low for 8-10 hours*, occasionally turning the ribs over every couple of hours. Cook until meat is falling off the bones. Remove ribs from the crock pot and shred into a bowl.
- In a small bowl, toss together some of the shredded cabbage with a teaspoon olive oil, 1 tablespoon lime juice, and a little bit of salt and pepper.
