1 fully cooked spiral-cut bone-in ham (7 lb.)
1 jar (10 oz.) apricot jam
1/2 cup packed brown sugar
1/4 cup GREY POUPON Dijon Mustard
2 Tbsp. cornstarch
2 Tbsp. water

Steps:

  • Place ham in 6-qt. or larger slow cooker sprayed with cooking spray.
  • Mix jam, sugar and mustard until blended; spoon over ham. Cover with lid.
  • Cook on LOW 3 to 4 hours or until ham is heated through.
  • Transfer ham to platter, reserving jam mixture in slow cooker, cover ham to keep warm. Turn slow cooker to HIGH. Whisk cornstarch and water until blended; whisk into reserved jam mixture. Cook, uncovered, 10 to 15 min. or until thickened, stirring occasionally.
  • Spoon half the jam mixture over ham. Serve ham with remaining jam mixture on the side.

The secret of this tender honey-baked ham is slow cooking. I start it in a low temp oven around 6 p.m. the night before if used for breakfast. If used for dinner, it can be started later in the evening, turned off and restarted the next morning. Don't use a spiral-sliced ham because it will dry out.

1 cup firmly packed brown sugar
½ cup honey
¼ cup molasses
¼ cup orange juice
2 teaspoons Dijon mustard
10 (10 pound) shank ham

Steps:

  • Blend brown sugar, honey, molasses, orange juice, and mustard together in a saucepan over medium-low heat until thickened, about 45 minutes. Remove from heat. Let glaze sit until flavors blend, 8 hours to overnight.
  • Preheat oven to 225 degrees F (110 degrees C). Place ham in a roasting pan.
  • Bake in the preheated oven, checking occasionally, about 10 hours. If ham begins to darken at that point, cover with aluminum foil. Continue baking, about 2 hours more.
  • Increase oven temperature to 275 degrees F (135 degrees C). Bake, coating ham thoroughly with the glaze mixture every 30 minutes, about 2 hours more. Remove from the oven and let stand 15 to 20 minutes before slicing. Serve any remaining glaze with ham, if desired.

1/2 cup apricot jam
1/2 cup Dijon mustard
1/2 cup packed light brown sugar
Freshly ground black pepper
One 4- to 5-pound spiral-cut ham

Steps:

  • Whisk together the jam, mustard, sugar and 1/4 teaspoon black pepper in a small pot. Bring the mixture to a boil to melt the sugar, whisking occasionally. Reduce the heat to a simmer until the mixture thickens, about 2 minutes. Remove from the heat, and reserve.
  • Add 3/4 cup water to the insert of a 6-quart slow cooker. Place the ham in the insert on its side, and brush lightly with the glaze. Cover, and cook on low until the ham is hot throughout, 6 to 7 hours. Refrigerate the remaining glaze.
  • When the ham has about 10 minutes left to cook, reheat the glaze in a small saucepan over medium-low heat, stirring frequently.
  • Transfer the ham to a carving platter or serving dish, and brush with enough glaze to make a glossy, sticky coating. Slice, and serve with the remaining glaze on the side.

1 onion, thickly sliced
10 cloves, plus extra for studding
1 medium gammon joint, approx 1.3kg
1.5 litre bottle ginger beer
1 tbsp English mustard
3 tbsp ginger preserve

Steps:

  • Put the onion and 10 cloves in the base of the slow cooker then nestle in the gammon joint. Pour over the ginger beer then cover and cook on LOW for 7 hours until the gammon is tender, but still holding its shape. You can cool then chill the gammon at this stage if you prefer.
  • Heat the oven to 200C/180C fan/ gas 6. Carefully remove the skin from the gammon leaving a layer of fat behind. Score the fat in a diamond pattern with a sharp knife, making sure you don't cut into the meat, then stud the centre of each diamond with cloves.
  • Mix the mustard and ginger preserve in a bowl, spoon or brush over the gammon then bake for 20 mins until golden and sticky. If roasting from cold you will need to add another 20 mins to the cooking time.
