SLOW COOKER BEEF AND BEAN CHILI



Slow Cooker Beef and Bean Chili image

Number Of Ingredients 20

2 teaspoons avocado oil or olive oil
1½ pounds lean ground beef or bison (may substitute ground turkey)
1 medium onion, diced
4 cloves garlic, minced
1 bell pepper, any color, diced
1 small jalapeño pepper, finely diced (seeds and membranes removed for less heat)
3 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon smoked paprika
¼ teaspoon salt, plus more to taste
¼ teaspoon ground black pepper
2 (15-ounce) cans no-salt-added tomato sauce
1 (14-ounce) can fire-roasted diced tomatoes
1 (4-ounce) can diced green chiles
1 (15-ounce) can no-salt-added kidney beans, drained and rinsed
1 (15-ounce) can no-salt-added pinto beans, drained and rinsed
1 (15-ounce) can no-salt-added black beans, drained and rinsed
¾ cup low-sodium beef broth (may substitute water or chicken broth)
1 tablespoon cocoa powder
¼ teaspoon ground cinnamon

Steps:

  • Heat a large skillet or Dutch oven over medium heat. Add the oil. When the oil starts to shimmer, add the onion, garlic, bell pepper, and jalapeno. Sauté, stirring occasionally for 5 minutes or until onions and peppers just start to soften.
  • Add ground beef, chili powder, cumin, smoked paprika, salt, and black pepper. Use a large spoon to spatula to break up the meat. Cook, stirring occasionally until beef is almost cooked through.
  • Transfer beef mixture to a 6-quart slow cooker. Add all remaining ingredients. Stir to combine. Place the lid on the slow cooker and cook on low for 8 hours (or high for 4-5 hours).
  • Taste and adjust seasonings as desired. Serve with desired toppings.

1 pound bulk Italian sausage
1 large onion, diced
1 tablespoon minced garlic

2 ribs celery, chopped

1/4 cup cider vinegar
3 chipotle peppers in adobo sauce

1 cup reduced-sodium chicken broth

Steps:

  • Place the first 9 ingredients in a blender; cover and process until smooth. Add broth; pulse to combine., Place roast and bay leaves in a 4- or 5-qt. slow cooker; pour sauce over top. Cook, covered, on low until meat is tender, 7-9 hours., Prepare rice about 30 minutes before serving. In a large saucepan, combine water, rice, butter and salt; bring to a boil. 3 tbsp olive oil
500g beef mince
1 onion , finely chopped
1 celery stick , finely chopped
1 large red pepper , thickly sliced
2 garlic cloves , finely grated
2 tsp ground cumin
1 tsp smoked paprika
2 tsp dried oregano
2-3 tbsp chipotle chilli paste
3 tbsp tomato purée
400g can chopped tomatoes
400ml beef stock
2 x 400g can black beans , drained
4 small squares dark chocolate
tortilla chips or cooked rice and soured cream, to serve

Steps:

  • Set the slow cooker to low. Heat 1½ tbsp oil in a large, non-stick pan over a high heat and fry the mince for 10-12 mins or until evenly browned. Tip into the slow cooker.
  • Heat the remaining oil in the pan. Fry the onion, celery and pepper for 10 mins or until softened. Add the garlic, cumin and paprika and fry for 1 min. Tip into the slow cooker.
  • Stir in the oregano, chipotle paste, tomato purée, tomatoes and stock. Season. Cover and cook for 6-8 hrs.
  • Stir in the beans and chocolate during the final 30 mins of cooking. Serve with a bowl of rice or tortilla chips and a dollop of soured cream.

3 (15 ounce) cans black beans, rinsed and drained
1 (14 1/2 ounce) can diced tomatoes
1 medium chipotle chile in adobo, plus
2 tablespoons adobo sauce (from a can of chipotles in adobo sauce)
2 tablespoons extra virgin olive oil
1 lb 85% lean ground beef
kosher salt
1 large red onion, finely diced
1 1/2 tablespoons chili powder
2 teaspoons ground cumin
1 lime, juiced
1/2 cup chopped fresh cilantro
fresh ground black pepper

Steps:

  • Put one-third of the beans into the bowl of a food processor, along with the tomatoes and their juices, chipotle, and adobo sauce. Process until smooth and set aside.
  • Heat the oil in a 5- to 6-quart Dutch oven or similar heavy-duty pot over medium-high heat until it's shimmering hot, about 2 minute Add the beef, season with 1/2 teaspoons salt, and cook, using a wooden spoon to break up the meat, until it loses its raw color, about 3 minutes. Transfer the beef to a large plate using a slotted spoon. Add half of the onion and 1/4 teaspoons salt, and cook, stirring, until it begins to brown and soften, about 3 minute Reduce the heat to medium. Add the chili powder and cumin and cook for 20 seconds. Add the remaining black beans, the puréed bean mixture, and the beef to the pot and simmer for 10 min., stirring frequently. Add half of the lime juice, half of the cilantro, and salt and pepper to taste. If the chili is thicker than you like, it may be thinned with water.
