2 lb lean (at least 80%) ground beef
1 large onion, chopped (1 cup)
2 cloves garlic, finely chopped
1 can (28 oz) Muir Glen™ organic diced tomatoes
1 can (16 oz) chili beans in sauce, undrained
1 can (15 oz) Muir Glen™ organic tomato sauce
2 tablespoons chili powder
1 1/2 teaspoons ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In 12-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain.
  • In 4- to 5-quart slow cooker, mix beef mixture and remaining ingredients.
  • Cover and cook on Low heat setting 6 to 8 hours.

Use whichever beans you have in the cupboard for this richly spiced beef and chipotle slow cooker chilli. It's a perfect meal to prepare for busy weeknights

3 tbsp olive oil
500g beef mince
1 onion , finely chopped
1 celery stick , finely chopped
1 large red pepper , thickly sliced
2 garlic cloves , finely grated
2 tsp ground cumin
1 tsp smoked paprika
2 tsp dried oregano
2-3 tbsp chipotle chilli paste
3 tbsp tomato purée
400g can chopped tomatoes
400ml beef stock
2 x 400g can black beans , drained
4 small squares dark chocolate
tortilla chips or cooked rice and soured cream, to serve

Steps:

  • Set the slow cooker to low. Heat 1½ tbsp oil in a large, non-stick pan over a high heat and fry the mince for 10-12 mins or until evenly browned. Tip into the slow cooker.
  • Heat the remaining oil in the pan. Fry the onion, celery and pepper for 10 mins or until softened. Add the garlic, cumin and paprika and fry for 1 min. Tip into the slow cooker.
  • Stir in the oregano, chipotle paste, tomato purée, tomatoes and stock. Season. Cover and cook for 6-8 hrs.
  • Stir in the beans and chocolate during the final 30 mins of cooking. Serve with a bowl of rice or tortilla chips and a dollop of soured cream.

I've since learned this is not a true Chile con Carne, but that's what my mom always called it. She made this recipe while I was growing up, and I still make it today for my hubby or family. The heat in this can be adjusted by using more or less Chile powder or adding some cayenne pepper for bigger kids with spicier taste buds.

1 1/2 lbs ground beef
1/2 onion (chopped)
2 (15 ounce) cans reduced-sodium diced tomatoes
2 (15 ounce) cans low-sodium kidney beans
1 -2 tablespoon chili powder
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon celery salt
1/4 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon oregano

Steps:

  • Cook ground beef and onions over medium heat in a large sauce pan or dutch oven until beef is browned and onions are tender. Drain and return to pan.
  • Add tomatoes and kidney beans (do not drain off juce).
  • Add spices and stir until blended.
  • Bring to boil, then reduce to low heat, cover and simmer for 30-45 minutes.
  • You can taste and adjust spices after 20-30 minutes - add more chile powder or a bit of cayenne pepper if you like it spicier - let it simmer another 20 minutes to blend flavors.
  • Serve in bowls with shredded cheese, onions, sour cream or crackers if desired. I like it with saltines broken into the chile with a little cheese on it.

1 tbsp rapeseed oil
1 large onion, finely chopped
2 garlic cloves, crushed
2 tsp ground cumin
1 ½ tsp sweet smoked paprika
1 tsp mild chilli powder (optional)
2 carrots , diced
2 sticks celery, diced
1 courgette, diced
1 red pepper, diced
400g lean beef mince
3 x 400g cans chopped tomatoes
1 beef stock cube
1 tbsp tomato purée
1 x 400g can green lentils, drained and rinsed
1 x 400g can flageolet beans, drained and rinsed
a selection of the following to serve: rice or tacos, soured cream, grated cheese and sliced avocado

Steps:

  • Heat the oil in a heavy-based pan. Cook the onion for 10 mins until softened and starting to caramelise. Add the garlic and spices and cook for a further 1-2 mins.
  • Transfer to a slow cooker, along with the diced vegetables, mince, chopped tomatoes, stock cube and tomato purée. Stir well. Cook on low for 6-7 hours. About half an hour before serving, take off the lid and use a stick blender to blend in the vegetables (if your children aren't keen to eat veg) or leave chunky. Stir through the lentils and flageolet beans. Replace the lid and heat through for a further half hour. Stir and serve with rice or tacos, soured cream, grated cheese and sliced avocado.
