CREAM CHEESE COFFEE CAKE

Cream Cheese Coffee Cake image

Cream Cheese Coffee Cake is swirled with a ribbon of sweet and tangy cream cheese filling and topped with a buttery, cinnamon streusel topping, making it a perfect breakfast, brunch, or coffee time treat!

Provided by Samantha Skaggs

Categories     Breakfast

Time 1h10m

Number Of Ingredients 17

2 (8-ounce) packages cream cheese (at room temperature)
½ cup sugar
2 teaspoons pure vanilla extract
1 egg
1/3 cup flour
1/3 cup brown sugar (packed)
1 tablespoon cinnamon
4 tablespoons butter (chilled and diced)
3 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup (1 stick) unsalted butter (at room temperature)
1 cup sugar
4 eggs
2 teaspoons pure vanilla extract
1 cup sour cream

Steps:

  • Position oven rack in center of oven and preheat to 350. Grease and flour a 9- by 13-inch baking pan.
  • Prepare the filing by using an electric mixer to beat the cream cheese. Mix in the sugar, vanilla, and egg; beat until smooth and creamy. Set aside.
  • Prepare the streusel by mixing the flour, brown sugar, and cinnamon in a food processor until combined. Pulse in the chilled butter until the mixture is the texture of coarse sand. Alternatively, you may cut the ingredients together in a bowl using a fork or pastry blender.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a large bowl, use an electric mixer to beat the softened butter until smooth. Mix in the sugar and beat at high speed until light and fluffy. Blend in the eggs, one at a time, and then the vanilla. Slowly mix in the flour mixture, alternating with the sour cream, until just combined.
  • Pour half of the batter into the prepared pan and smooth into an even layer. Pour the cream cheese filling on top. Dollop the surface with the remaining cake batter, smoothing the batter over the top of the cream cheese filling. Then use a butter knife to gently swirl through the batter and filling.
  • Evenly sprinkle the top of the cake with the streusel mixture. Bake for 40 to 45 minutes or until no longer jiggly and a toothpick inserted in the center of the cake comes out clean. Place on a rack to cool; serve warm or at room temperature.

FANTASTIC BUTTERY CREAM CHEESE COFFEE CAKE

Fantastic Buttery Cream Cheese Coffee Cake image

This cake is buttery delicious, it has a cream cheese layer in the middle and topped with a crumb topping, I always double the topping! You can also bake this cake in an 11 x 7-inch baking pan --- top baked cake with sweetened whipped cream or vanilla ice cream if desired :)

Provided by Kittencalrecipezazz

Categories     Breads

Time 1h15m

Yield 12 serving(s)

Number Of Ingredients 14

1 cup butter (no substitutes)
1 cup sugar
2 eggs
1/4 cup sour cream
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
2 (8 ounce) packages cream cheese, softened
1 egg yolk
1 cup sugar
1 teaspoon vanilla
1/4 cup sugar
1/2 cup flour
1/4 cup butter (semi-soft)

Steps:

  • Preheat oven to 350 degrees (oven rack set to second-lowest position).
  • Grease a 13 x 9-inch (or an 11 x 7-inch, baking time will need to be increased slightly).
  • Cream butter with sugar (about 3-4 minutes), add in eggs and sour cream; beat well (about another 3 minutes).
  • In a bowl, sift together flour, baking powder and salt.
  • Add the flour mixture to the creamed mixture; beat well until combined (batter will be thick).
  • Spread more than half of the batter in the prepared baking pan.
  • In another bowl, cream together all filling ingredients, then carefully spread over the cake batter.
  • Spoon the remaining cake batter over the top of the cheese mixture (it doesn't have to cover the cake batter completely, I just dot tablespoonfuls over the batter).
  • For the topping (I most always double the ingredients) mix all ingredients, and sprinkle over cake.
  • Bake for about 50-55 minutes or until middle feels set and not jiggly.

COFFEE CHEESECAKE IN 4 EASY STEPS

Coffee Cheesecake in 4 Easy Steps image

Coffee cheesecake in 4 easy steps is a delicious no bake recipe. This simple dessert will satisfy both coffee and cheesecake lovers alike!

Provided by Neil

Categories     Dessert

Number Of Ingredients 10

180 g reduced fat digestive biscuits*
80 g butter
30 ml hot water
3 tbsp instant coffee
2 tbsp granulated sugar
300 g reduced fat soft cream cheese
80 g icing sugar
1 tsp vanilla extract
250 ml reduced fat double cream
Walnut halves to decorate

Steps:

  • Grease a round loose bottom cake tin and place a piece of greaseproof paper around the bottom. Crush the biscuits by placing them all in a bag and bashing them up to a breadcrumb consistency using a rolling pin or use a food processor. Gently melt the butter in a small saucepan over a low heat and stir in the crushed biscuits, ensuring they absorb all the melted butter. Spoon the biscuit crumbs into the cake tin. Use a metal spoon and your fingers to press the biscuit crumbs down firmly and evenly. Chill in the refrigerator for about 1 hour until set.
  • Combine the hot water with the coffee and granulated sugar in a small bowl. Stirring to remove any lumps, then allow to cool. Do this as soon as you've put the cheesecake base in the fridge.
  • Place the cream cheese, icing sugar and vanilla extract in a stand mixer bowl then whisk until smooth. Pour in the double cream and continue beating until the mixture is completely combined. Then fold in the cooled coffee mixture. Spoon the cream cheese mixture over the biscuit base. Make sure that there are no air bubbles by smoothing the top of the cheesecake with a palette knife or metal spoon. Place the cheesecake into the fridge to chill for 4 to 6 hours. If you can make this the day before and chill overnight, then even better.
  • Before serving, remove from fridge for 10 minutes or so to allow the cheesecake to return to room temperature. To remove it from the tin, place the base on top of a can, and gradually pull the sides of the tin down. Slip the cake onto a serving plate, removing the lining paper and base. Decorate with the walnut halves.
