1 medium onion, chopped
4 celery ribs, chopped
3 carrots, peeled chopped
2 minced garlic cloves
1/2 teaspoon salt
1/2 teaspoon black pepper
2 cups chopped mushrooms
1 cup cooked chicken breast, chopped
1/2 cup pearl barley, picked over and rinsed
8 cups chicken broth

Steps:

  • Heat the chicken broth and pour into slow cooker.
  • Place chopped vegetables; onions, garlic, celery and carrots in microwave container; microwave 5 minutes.
  • Spoon into Slow cooker and cook on High for 2 hours,.
  • Heat up mushrooms in microwave.
  • Add rinsed barley,chicken and mushrooms, salt and pepper to the Slow Cooker.
  • On high cook another hour.
  • Serve with crackers.

2 medium yellow onions (minced)
6 large garlic cloves (minced)
2 Tablespoons freshly grated ginger
1 Tablespoon vegetable oil
4 cups low-sodium chicken broth
2 14-ounce cans coconut milk
2 stalks lemon grass (bottom 5 inches only, bruised (see pictures above))
2 large carrots (peeled and sliced 1/4 inch thick)
3 Tablespoons fish sauce (divided)
10 cilantro stems (tied together with twine)
1 1/2 pounds boneless (skinless chicken thighs, trimmed)
8 ounces white mushrooms; washed (trimmed, and sliced thin)
3 Tablespoons lime juice
1 Tablespoon sugar
1 Tablespoon Thai red curry paste
Garnishes:
fresh cilantro leaves
green onions (sliced thin)
lime wedges

Steps:

  • In a medium heat-proof bowl, microwave onions, garlic, ginger, and oil. Cook for 5 minutes, stirring occasionally, until the onions are softened.
  • In the slow cooker add the broth, 1 can of coconut milk, lemon grass, carrots, 1 tablespoon fish sauce, and cilantro stems. Give it a quick stir, then add the chicken to the pot, nestling it into place. Cover and cook on low until the chicken is tender, about 4-6 hours.
  • Transfer chicken to cutting board, and let it cool slightly before shredding with 2 forks. Let the soup sit for 5 minutes, then remove the fat from the surface. Remove lemon grass and cilantro and discard.
  • Stir in the mushrooms, cover and cook on high until mushrooms are tender, 10-15 minutes. Microwave the remaining can of coconut milk in a small bowl until warm, about 1-2 minutes. Add it to the pot along with the remaining 2 tablespoons of fish sauce, lime juice, sugar, and curry paste.
  • Add the shredded chicken and let it heat through, about 5 minutes. Season with salt and pepper and serve with garnishes.

3 large carrots, sliced into 1/4-inch-thick chunks
2 large sprigs dill, plus 1/4 cup chopped dill fronds and whole fronds, for serving

1 bay leaf
1/4 small onion, peeled and root end intact
Kosher salt and freshly ground black pepper
2 pounds bone-in, skin-on chicken thighs (about 6 thighs)
8 cups low-sodium chicken broth
2 cups cooked brown rice
1 to 2 tablespoons freshly squeezed lemon juice

Steps:

  • Toss the carrots and celery together in a slow cooker. Add the dill, thyme, bay leaf, onion and 1/2 teaspoon salt.
  • Rub the chicken thighs all over, including under the skin, with 1 teaspoon salt total, and place them on top of the vegetables. Add the chicken broth. Cover and cook on low for 8 hours. During the last 15 minutes of cooking, remove the chicken and stir in the rice. While the rice warms through, remove and discard the chicken skin and bones and shred the chicken (it will mostly fall apart on its own).

This is a classic chicken noodle soup recipe from a recent issue of Good Housekeeping that I'd like to try. Update: I have made this soup and really like it. I did use 3-4 skinless chicken breasts in place of the whole chicken, and I substituted 8 cups of canned chicken broth for the water. If you do this, you might want to add a little less salt unless you use a low-sodium chicken broth. I'm not sure why some reviewers say that their egg noodles dissolve, unless they are using the very fine egg noodles. I use a wide noodle and they are just fine after 20 minutes in the Crock-Pot.

This Mexican-inspired chicken, tomato, and bean soup practically cooks itself. I pile the ingredients into a slow cooker while I'm off doing far more glamorous things (like working, picking up dry cleaning, or dropping off a forgotten lunch at school!). My weekday cheat is to use tortilla chips instead of fresh tortillas. My favorite kind are the better-for-you baked white tortilla chips with a hint of lime, but any kind will do. If I'm feeling fancy, I'll add cubed avocado and sour cream before serving. If you have leftover cooked rice in the fridge, a spoonful in the soup is a nice touch, and for a less spicy flavor remove the jalapeno seeds and ribs.
