This slow cooker chicken marsala is tender chicken breasts cooked in a mushroom and marsala wine sauce. It's a delicious meal option that the whole family is sure to love!

6 boneless skinless chicken breasts
1 tablespoon olive oil
salt and pepper to taste
2 teaspoons minced garlic
1/2 cup marsala wine
1/2 cup chicken broth
1 1/2 cups sliced mushrooms
1/4 cup cornstarch
1/4 cup heavy cream
2 tablespoons chopped parsley

Steps:

  • Heat the olive oil in a large pan over medium high heat. Season the chicken breasts on both sides with salt and pepper.
  • Place the chicken in the pan and cook for 4-5 minutes on each side or until golden brown.
  • Place the chicken breasts, garlic, wine, chicken broth and mushrooms in the slow cooker.
  • Cook on LOW for 5 hours.
  • Remove the chicken from the slow cooker. Whisk together the cornstarch with 1/3 cup cold water. Pour the cornstarch into the slow cooker and stir to combine.
  • Add the chicken back to the slow cooker, turn the heat to HIGH and cook for 30 minutes or until sauce has thickened.
  • Stir in the heavy cream and season the sauce with salt and pepper to taste. Sprinkle with parsley and serve.

I use boneless chicken breast for this healthy, flavorful dish. Serve over rice or potatoes to soak up all the delicious sauce! I like to serve this with rice and sauteed spinach. If you're cooking for two, you might be tempted to halve the recipe, but don't; you'll be happy to have leftovers!

1 tablespoon olive oil
2 cloves garlic cloves, minced
¼ cup all-purpose flour
salt and ground black pepper to taste
3 pounds skinless, boneless chicken breast, cut into 2-inch cubes
12 ounces sliced white mushrooms
1 cup Marsala wine
2 tablespoons water
1 tablespoon cornstarch
1 tablespoon chopped fresh parsley for garnish

Steps:

  • Stir olive oil and garlic into the bowl of a slow cooker.
  • Mix flour, salt, and pepper in a bowl. Pour flour mixture into a large resealable plastic bag; add chicken to bag, seal, and shake to coat chicken with flour mixture. Pour coated chicken and sliced mushrooms into slow cooker.
  • Heat Marsala wine in a small frying pan over medium-high heat until reduced, 2 to 3 minutes; pour into slow cooker and cover.
  • Cook in slow cooker set to Low until sauce thickens and chicken is cooked through, 4 to 5 hours. If sauce is too thin, mix water and cornstarch together in a small bowl and pour slowly into chicken mixture. Cook in slow cooker set to High until thickened, 15 minutes. Adjust seasonings to taste, garnish with parsley, and serve.

2 lbs. boneless skinless chicken breasts (about 3-4 chicken breasts)
1 1/2 tsp. sea salt
1/2 tsp. ground black pepper
1 tsp. oregano
3 cloves garlic (minced)
1/4 cup shallot (minced)
1 white onion (sliced)
2 cups mushrooms (sliced)
6 slices bacon (sliced, cooked and drained)
1/2 cup Marsala wine
1 1/4 cup beef broth
2/3 cup heavy whipping cream
2 tbsp chopped parsley (for garnish (optional))

Steps:

  • Add the chicken breasts to the slow cooker.
  • Sprinkle over the salt, pepper, and oregano.
  • Add the garlic, shallot, onion and mushrooms over the chicken.
  • Sprinkle over the bacon.
  • Pour over the Marsala wine and beef broth.
  • Place the lid on the slow cooker. Cook on HIGH for 4 hours or LOW for 6-8.
  • When the cooking time is done. Add the heavy cream and mix it into the broth.
  • Turn the slow cooker to HIGH for 30 minutes more and leave the LID OFF. To help thicken the sauce a bit.
  • Serve and enjoy! I serve half of a chicken breast for a serving. Alternately you can shred the chicken before serving.

I wanted to make chicken marsala one night, but didn't want the hassle of cleaning up the pan from frying. This creation turned out to be an easy alternative and tasty too!

4 (5 ounce) boneless skinless chicken breasts
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dried basil
3/4 cup marsala wine
3/4 cup low sodium chicken broth
2 tablespoons butter, broken into small pieces (margarine is ok)
8 ounces fresh mushrooms, sliced

Steps:

  • Put the chicken breasts in a 5 quart crock pot. They can go in frozen, but make sure they don't overlap as much as possible.
  • Mix the flour, salt, pepper, and basil, and sprinkle over the chicken.
  • Pour the wine and broth into the crockpot.
  • Dot the butter over the chicken and dump the mushrooms on top.
  • Cook LOW for 6 hours.
  • When the 6 hours are up, take the chicken out and place on the serving dish. Stir the sauce a little, and spoon the sauce over the chicken.
  • Serve over pasta or rice.

4 boneless skinless chicken breast halves, boneless, skinless
1/4 cup all-purpose flour (for coating)
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon dried oregano
1/4 cup olive oil
1/4 cup butter
1 cup fresh mushrooms, sliced
1/2 cup marsala wine
1/4 cup cream sherry

Steps:

  • Pound chicken breasts until flat and thin.
  • Set aside.
  • Mix together the flour, salt, pepper, and oregano in a pie pan.
  • Melt oil and butter in a large skillet and bring to a low boil.
  • Dredge chicken until thoroughly coated through the flour mixture, shake off excess and lightly brown in skillet about 2 minutes.
  • Turn over chicken pieces and add mushrooms.
  • Cook until lightly browned.
  • Add wine and sherry.
  • Cover skillet and simmer for 10 minutes, turning chicken pieces once.

1 Tbsp. KRAFT Classic Balsamic Vinaigrette Dressing made with Extra Virgin Olive Oil
1 pkg. (8 oz.) sliced fresh mushrooms
1 onion, chopped
2 cloves garlic, minced
1 Tbsp. chopped fresh thyme
2/3 cup fat-free reduced-sodium chicken broth
1/3 cup Marsala wine
2 Tbsp. LEA & PERRINS Reduced Sodium Worcestershire Sauce
1/4 cup water
3 Tbsp. cornstarch

Steps:

  • Sprinkle chicken with pepper; place in slow cooker sprayed with cooking spray. Heat dressing in large skillet on medium heat. Add mushrooms, onions, garlic and thyme; cook and stir 3 min. or until mushrooms and onions are tender.
  • Spoon mushroom mixture over chicken. Top with broth, wine and Worcestershire sauce. Cover with lid. Cook on LOW 5 to 6 hours (or on HIGH 2-1/2 to 3 hours).
  • Remove chicken from slow cooker; cover to keep warm. Mix water and cornstarch until blended. Add to liquid in slow cooker. Cook on HIGH 10 min. or until slightly thickened. Return chicken to slow cooker; cook 2 min. or until heated through.
