Meaty oxtail and marrow bones are perfect for bone broth, these will produce a jelly-like bone broth that is dark in color and nutritious. Roasting the bones adds a beautiful color and a richer flavor. I tend to go light on the salt so taste and adjust accordingly.

1 ½ pounds beef oxtails
2 pounds beef marrow bones
3 carrots, washed and sliced
3 stalks celery, washed and thickly sliced
1 large unpeeled onion, quartered
8 cloves garlic, halved
1 leek, white and tender green parts only, halved lengthwise and sliced
2 tablespoons apple cider vinegar
½ teaspoon salt
½ teaspoon black peppercorns
4 cups water, or as needed
2 bay leaves
cheese cloth

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with foil and spray lightly with cooking spray.
  • Spread out oxtail, bones, carrots, celery, onion, and garlic on the baking sheet.
  • Bake in the preheated oven until browned, about 30 minutes. Scrape contents of the baking sheet into a slow cooker. Add leek, apple cider vinegar, salt, and peppercorns. Add enough water to cover the contents but not more than 2 inches below the rim.
  • Cook on Low for 22 hours. Add bay leaves and cook for another 2 hours.
  • Strain broth through a fine mesh strainer that is lined with a double layer of cheese cloth. Refrigerate. Skim off the fat before using or freezing.

1 lb bones from chicken or beef
2 cups celery stalks (halved - optional)
1 cup carrots (halved - optional)
1 cup onion (quartered - optional)
sprigs fresh thyme + rosemary (optional)
salt/pepper to taste
8 cups water ((approximately, fill to the top of your crockpot))

Steps:

  • Add all ingredients to a crockpot (bones, scraps, fat, etc). Cover with filtered water and cook on low for at least 12 hours (16-18 is best).
  • You may need to adjust the amount of water depending on the size of your crockpot. You can fill to the top of the crockpot!
  • Allow broth to cool slightly, and run through a fine mesh strainer into a large pot or container. (This will just be easier to do if it is not scalding hot).
  • Storage: Store in airtight containers for up to 4 days, or put in the freezer until ready to use!
  • Optional, but recommended: Carefully remove carrots, onions + celery from the strainer and place into blender. Puree in blender until smooth (You may need to add a little broth to the blender depending on it's power)
  • Stir veggie puree into strained broth and store in the refrigerator or freezer.

Beef, veal bones and or chicken, ask your butcher what they have
2 carrots , roughly chopped
1 leek , roughly chopped
1 celery stick , roughly chopped
juice 1 lemon
1 bay leaf

Steps:

  • Heat oven to 180C/160C fan/gas 4. Spread the bones out on a baking sheet and roast them for an hour, turning them over after 30 mins.
  • Heat the slow cooker if necessary. Pack the veg into the slow cooker, add the bones and enough water to fill the pot to within 2cm of the top. Add the lemon juice and the bay leaves. Cover and cook on Low for 18-36 hours. The longer you cook the broth the darker it will become.
  • Place a colander over a bowl and scoop out all the bones into the colander. Return any broth from the bowl to the pan. Strain all the liquid through a fine sieve. Taste, and season only if you need to. Allow the broth to cool and lift off the fat. Store in the fridge for up to 3 days or transfer to freezer bags once it has cooled.

4 pounds beef bones with marrow
4 carrots, chopped
4 celery stalks, chopped
2 medium onions, peel on, sliced in half lengthwise and quartered
4 garlic cloves, peel on and smashed
1 teaspoon sea salt
1 teaspoon whole peppercorns
2 bay leaves
3 sprigs fresh thyme
6 sprigs parsley
¼ cup apple cider vinegar
20 cups cold water

Steps:

  • Place all ingredients in a 10 quart capacity slow cooker or large stock pot on the stove.
  • Add in water.
  • Turn on the slow cooker and prepare to cook for at least 36 hours, so that might mean 3 cycles on the standard slow cooker that has a maximum 12-hour setting (unless you can set your slow cooker for 36 hours).
  • If cooking on a stovetop, bring the large pot to a boil over high heat; reduce and simmer gently.
  • In slow cooker or pot, skim the fat that rises to the surface occasionally.
  • Simmer for 36 to 48 hours.
  • Remove from heat and allow to cool slightly.
  • Discard solids and strain remainder in a bowl through a colander. Let stock cool to room temperature, cover and chill.
  • Refrigerate and use within a week. Or freeze for up to 3 months.

3-4 lbs of mixed beef bones (oxtail, knuckles, neckbones and/or short ribs)
2 medium carrots (chopped)
3 celery stalks (chopped)
2 medium onions (chopped)
1 tablespoon of olive oil
2-3 tbsp apple cider vinegar
1 bay leaf
Water (between 8-10 cups)

Steps:

  • Preheat oven to 400 F. Place bones in a single layer on a sheet or roasting pan. Drizzle with olive oil to evenly coat.
  • Roast for 30 minutes, then, flip each bone over and roast for an additional 30 minutes.
  • Place chopped vegetables, roasted bones, bay leaf and cider vinegar and place in your slow cooker. Cover completely with water and set your slow cooker to low.
  • Simmer for 24 hours. Throughout simmering, add water as needed to keep all the ingredients submerged.
  • Once the broth has reached a dark rich brown color, turn off slow cooker.
  • Discard the bones, vegetables and bay leaf and strain through a cheesecloth. Cool the broth to room temperature.
  • Pour into jars and let cool in the refrigerator for at least 1 hour.
  • When you are ready to serve, skim the condensed fat off the top of the broth and heat to the desired temperature. Sip in a cup or add to your favorite recipe.

3 cloves of garlic, minced (optional)

Steps:

  • First, add the bones to your slow cooker (or pot). You can add any type of bone, including chicken feet, lamb, duck or turkey necks, chicken frames, beef marrow bones, and so forth. You can use cooked bones, but raw bones are better because they still have all of the nutrients in them.
  • Next, cover the bones with water and add the apple cider vinegar. Cover the pot and cook on low heat for 24 hours. Check the broth occasionally, and add more water if it dips below the top of the bones.
  • When it's finished cooking, strain the broth into a large container. DO NOT feed the cooked bones to your dog. The cooking process makes the bones brittle, which could be very dangerous to your dog's digestive tract.
  • Allow the broth to cool and then refrigerate it for at least 3 hours. A fat layer will congeal on the top of the broth. Scoop the fat and throw it out, and then you are ready to serve the broth to your pup.

Steps:

  • Rinse vegetables and herbs and place into a slow cooker.
  • Add chicken bones and all remaining ingredients to slow cooker and cover with enough water so that all ingredients are submerged.
  • Turn on slow cooker to low heat and let cook for 12-18 hours.
  • Remove from heat and carefully separate the vegetables and bones from the broth.
  • Strain the broth into a bowl through a colander, and strain once more through a cheesecloth to remove any remaining particles.
  • Pour broth into an airtight jar and store in the refrigerator for up to a week, or freeze for up to 3 months.

4 pounds mixed beef bones (marrow bones, oxtail, knuckles, short rib, etc.)
2 medium onions
2 medium carrots
3 stalks celery
1 bay leaf
2 tablespoons apple cider vinegar

Steps:

  • Heat oven to 400°F.
  • Spread the mixed bones on a baking tray in a single layer and place it into the oven. Roast the bones for 30 minutes. Flip bones and roast another 30 minutes.
  • While the bones are roasting, chop the carrots, onions and celery. (You are discarding these later so a rough chop works great!)
  • Place roasted bones, chopped vegetables, bay leaf and apple cider vinegar into a 6-quart crockpot. Cover completely with cold filtered water. (All the ingredients should be submerged by about 1 inch of water.)
  • Cook on low for 24 hours. Add water as needed to keep all the ingredients covered in water, and periodically skim the foam off the top of the pot.
  • After 24 hours, the broth should be a dark brown color. Strain the broth through a fine mesh strainer and discard the bones, vegetables and bay leaf.
  • Before storing, pour into separate containers and cool to room temperature. Once cooled, chill in the refrigerator for 1-2 hours. Skim off the accumulated fat at the top of the container, if there's any. Store in the fridge for up to a week or in the freezer for up to 3 months.

Steps:

  • Preheat the oven to broil. Place the beef bones on a sheet pan. Place the bones under the broiler in the oven. I browned the bones on each side for about 5 minutes each. It depends on how close the bones are to the broiler.
  • Add the bones to the slow cooker. Add the onion, garlic, carrots, celery, bay leaves, apple cider vinegar and water.
  • Cover and cook on low for 12 hours. You can cook longer if desired.
  • Place a strainer over a large bowl. Ladle the broth into the strainer and discard the bones and veggies. I like to push the veggies into the strainer to get the juices out of them.
  • Add grated ginger, lemon juice and salt to taste. Serve immediately or refrigerate or freeze for later. Skim off fat if desired.

3 pounds beef oxtails or short ribs
3 pounds beef bones, such as marrow, knuckle or neck bones
3 tablespoons tomato paste
3 medium carrots, cut into large pieces
3 stalks celery, cut into large pieces
1 onion, quartered
3 cloves garlic, smashed
5 sprigs fresh parsley
3 bay leaves
12 black peppercorns
1/2 cup apple cider vinegar
crushed lemongrass

Steps:

  • Preheat the oven to 400 F.
  • Arrange the oxtails and bones on a baking sheet and rub all of the pieces with the tomato paste. Roast the bones until very brown in spots, about 45 minutes.
  • Transfer the roasted bones to a 7-quart slow cooker. Use a metal spatula to scrape up any of the brown bits from the baking sheet and add them to the slow cooker, too. Nestle in the carrots, celery, onion, garlic, parsley and bay leaves. Toss in the peppercorns. Pour in the vinegar and 8 cups water (the water should just cover the bones and vegetables).
  • Set your slow cooker to low and cook anywhere from 12 to 24 hours, the broth will be deeper and stronger in flavor the longer it cooks.
  • Once you've decided the broth is ready, remove the insert and transfer the bones and pieces of meat to a baking sheet with tongs. Strain the remaining broth through a fine sieve. Let cool to room temperature. Let the bones cool and pick off and reserve any good-looking pieces of meat to add to soups and stews.
  • Store the bone broth in airtight containers for up to 5 days in the refrigerator or up to 3 months in the freezer. Serve hot with desired mix-ins.
