SLOW COOKER AU JUS POT ROAST
I've never found a recipe I really liked for a savory, au jus-style pot roast without mushy veggies and a weird sweetness. So after some experimenting, this is the way I make it every time now. The tomato sauce disappears and will not make a tomato-flavored gravy. Quick and easy. The roast size and cut can vary, and it will still turn out great. Good for those who don't like onions, although they can be added if you like. I love to make homemade mashed potatoes and dill carrot slices for sides. Cook roast on top of sliced onion rings if desired.

Steps:
- Rub chuck roast with 1 tablespoon Worcestershire sauce and sprinkle on all sides with steak seasoning.
- Heat olive oil in a large skillet over medium-high heat. Sear the roast in the hot oil until browned, about 5 minutes per side. Transfer roast to a slow cooker.
- Dissolve beef bouillon cube in the coffee and pour the mixture over the roast. Pour tomato sauce over meat and season with oregano; drizzle meat with 2 teaspoons Worcestershire sauce.
- Set cooker to Low and cook until meat is tender, 8 to 10 hours.

- Generously season each side of the roast with salt and pepper. In a large skillet add the olive oil and turn to medium high heat. Sear each side of the roast for 3-4 minutes until it gets a golden brown crust.
- Place the roast into the slow cooker. Add the beef consommé, beef broth, onion, soy sauce, And Worcestershire sauce.
- Cook on low heat for 8-10 hours or on high for 5-7 hours. Remove the roast from the slow cooker and shred with a fork and place on hoagies with a slice of cheese. Broil the tops in the oven to melt the cheese and serve.

- Place onion slices and broth in a 3 to 4 quart crock pot. Coat beef roast with vinegar. Put beef roast on top of onions in crock pot. Dust with dressing mix, salt, and pepper.
- Cover. Cook on low 8 to 10 hours. Can cook longer if not to your desired doneness.
- Before serving, take beef roast out of pot and cut into thin slices. Return the slices to the crock pot and mix well.

- Put beef roast in slow cooker.
- In a medium bowl, combine Beef broth, Onion soup mix, Au Jus seasoning and water and stir until combined. Pour mixture over beef, put cover on slow cooker and cook on low for about 8 hours.
- An hour before serving, shred meat with two forks or take it out and slice thinly. Place meat back in the slow cooker for another hour.
- When ready to serve, place several slices of beef on roll, add sliced mozzarella cheese and place under the broiler (or use broil option on toaster oven).
- Watch carefully, broil for just a couple of minutes until cheese is melted and roll is just slightly toasted.
- Serve sandwich with a bit of Au Jus from the slow cooker (you may want to strain it first). Also, I added just a bit more beef broth to our Au Jus.

- Liberally salt and pepper the beef chuck roast. Heat a pan to medium high heat and add olive oil. Get it good and hot. Then add roast and sear on all sides. This will help the roast hold in the juices.
