1 lb pork tenderloin, cut into 1-inch pieces
1/4 cup all-purpose flour
1 tablespoon vegetable oil
2 cans (10 oz each) tomatoes with green chiles, undrained
1 can (15 to 16 oz) pinto beans, undrained
1 can (12 oz) beer or nonalcoholic beer
1/2 cup chopped red onion
2 tablespoons chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/8 teaspoon ground cinnamon
Sliced green onions, if desired

Steps:

  • In large bowl, mix beef, pork and flour until meats are evenly coated. In 12-inch skillet, heat oil over medium-high heat. Add meats; cook 8 to 10 minutes, stirring frequently, until browned on all sides (if necessary, cook meats in batches).
  • Spray 4- to 5-quart slow cooker with cooking spray. In cooker, mix browned meats and remaining ingredients except green onions.
  • Cover; cook on Low heat setting 7 to 9 hours. Before serving, skim off fat; sprinkle with green onions.

¾ pound cubed beef stew meat

  • Add diced tomatoes, black beans, kidney beans, 1 1/2 cups beef broth, onion, bell pepper, parsley, barbecue sauce, brown sugar, garlic, and salt to the slow cooker; stir until well combined.

1 teaspoon salt
1 teaspoon ground black pepper
2 tablespoons olive oil
1 large onion, chopped
1 ¼ cups diced green chile pepper
1 teaspoon chili powder

1 (5 ounce) bottle hot pepper sauce
1 teaspoon garlic powder

Steps:

  • Trim the roast of any excess fat, and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Place the beef in the hot skillet, and brown it quickly on all sides.
  • Transfer the roast to a slow cooker and top it with the chopped onion. Season with chile peppers, chili powder, cayenne pepper, hot pepper sauce, and garlic powder. Add enough water to cover 1/3 of the roast.
  • Cover, and cook on High for 6 hours, checking to make sure there is always at least a small amount of liquid in the bottom of the cooker. Reduce heat to Low, and continue cooking for 2 to 4 hours, or until meat is totally tender and falls apart.
  • Transfer the roast to a bowl and shred it using two forks (reserve 2 cups of cooking liquid, if desired). Serve in tacos or burritos (see Cook's Note).

2 tablespoons oil ((avocado, olive, or vegetable))
3 pounds beef chuck, cut into bite-sized cubes
2 1/2 cups diced yellow onions (about 3-4 small to medium yellow onions)
2 cups diced celery (about 6-7 stalks of celery)
2 jalapeños, diced ( (remove seeds for less spicy chili))
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
2 cloves garlic, minced
1 full recipe of chili seasoning ( (see recipe below))
2 teaspoons dark or light brown sugar
1 teaspoon oregano
2 tablespoons tomato paste
1 bottle (12 oz.) dark beer, (such as Negra Modelo)
1 can (28 oz.) crushed tomatoes
1 can (14.5 oz.) diced tomatoes, undrained
1 bay leaf
1/2 cup minced fresh parsley
1/2 cup minced fresh cilantro
2 tablespoons masa harina, more if desired/needed ( (see notes))
Optional toppings: jalapeño, cilantro, sour cream or Greek yogurt, cheese

Steps:

  • In a large skillet, heat oil over medium-high heat. When hot, add meat in a single layer (you'll need to cook it in batches). Brown for 1-2 minutes on each side and then move to slow cooker. Continue this process, adding more oil to pan if needed, until all meat is browned and in slow cooker.
  • In the same pan, add onions, celery, jalapeño, salt, and pepper. Saute until celery is softened and onion is translucent. Add garlic and continue to cook for 1-2 minutes or until fragrant.
  • Add chili seasoning, brown sugar, and oregano and continue to cook, stirring, until fragrant (1-2 minutes). Add tomato paste and stir to coat vegetables with tomato paste. Keep stirring to prevent burning. Add beer and cook for 4-5 minutes or until slightly reduced. Add this mixture to the slow cooker.
  • Add crushed tomatoes, diced tomatoes, and bay leaf. Stir to combine all ingredients. Cover and cook on low for 6-8 hours or until meat is tender.
  • Remove bay leaf and stir in parsley and cilantro. Sprinkle masa on top and stir in. If needed, add more (1 tablespoon at a time) to thicken chili further. Keep in mind it will thicken slightly if it continues to cook, and also as it cools.
  • Serve with your desired toppings.

2-1/2 pounds boneless beef chuck roast, cut into 1-inch cubes
1/4 cup all-purpose flour
1 teaspoon salt

2 dried pasilla chiles
1 medium onion, finely chopped

1 lb. ground beef
1 small onion, chopped
2 cans chili beans
1 28 oz. can pureed tomatoes
1 can Rotel tomatoes
1 cup beef broth
Seasonings:
1 Tbsp cumin
1 Tbsp chili powder
1/2 Tbsp dried parsley
1/2 Tbsp dried, minced onion
1/2 Tbsp dried, minced garlic
1 tsp dried cilantro
1 tsp coriander
1/2 tsp red pepper flakes (optional)
Salt & pepper to taste

Steps:

  • Select the SAUTE function on the Ninja Foodi and set temperature setting to 3. Add the ground beef and chopped onion to the cooking pot. Break up the beef with a wooden spoon. Saute for about 10 minutes, stirring frequently.
  • While the ground beef and onions cook, open the cans of tomatoes and beans, and measure out the spices into a ramekin and set aside.
  • When the ground beef is cooked through, add all the remaining ingredients and stir until well mixed. Make sure you do not exceed the MAX line on the cooking pot.
  • Press STOP to turn off the SAUTE function. Install the pressure cooker lid, and move the pressure release valve to the VENT position.
  • Press SLOW COOK, then press the TEMP down arrow to select the LO setting. The TIME setting should default to 6 hours. If it doesn't, use the arrows to set to 6. Press START. When the time is up, the Ninja Foodi will switch to the KEEP WARM setting.
