Excellent soup for cold nights; goes very well with cornbread.

Steps:
- Place the potatoes, onion, butter, chicken bouillon cubes, parsley and water into a slow cooker. Set on low and let cook for 6 to 8 hours.
- At least half an hour before serving, stir together the milk and flour until no lumps remain, and mix into the soup. Cook for 30 minutes or until the soup is thickened.

Steps:
- Place all the ingredients except the milk into a slow cooker for 4-6 hours on low.
- Add warm milk 30 minutes before serving. Cold milk will stop the cooking process and delay meal. Do not add sooner because the milk may curdle.
- To thicken soup, add instant potato flakes to taste. You may use potato pearls but you will have to stir the soup a lot more to get the pearls to desolve.

- Place potatoes, soups and 1 soup can full of water into a slow cooker; heat on high setting until potatoes are tender, about 2-3 hours. Add 1 soup can full of milk and enough instant mashed potatoes to reach desired consistency, stirring constantly.
- Heat 2-3 hours longer; spoon into bowls to serve. Top with garnishes.

- In a large slow cooker, combine all ingredients except for the cream cheese and flour.
- Cook on low for 8 hours or until potatoes are done.
- About an hour before you serve the soup, add the cream cheese, stirring well until melted.
- After cream cheese is melted, take out about 2 cups of the soup broth and pour into a medium bowl; add the flour and whisk until smooth and no lumps remain.
- Pour the 2 cups of soup broth back into the crock pot and stir to combine.
- Replace lid and cook for about 30 minutes more.

- Cook and stir bacon in large Skillet on medium heat until crisp. Remove bacon from Skillet with slotted spoon, reserving 2 Tbsp. drippings in Skillet. Drain bacon on paper towels; refrigerate until ready to use.
- Add onions to drippings in Skillet; cook and stir 5 min. or until crisp-tender. Stir in flour; cook and stir 1 min. Add 1 cup broth; cook and stir 2 min. or until sauce comes to boil and thickens. Pour into Slow Cooker. Stir in remaining broth. Add potatoes; cover with lid. Cook on LOW 4 to 5 hours (or HIGH 2 to 3 hours).
- Use slotted spoon to transfer 4 cups potatoes to medium bowl; mash until smooth. Add 1-1/2 cups cheese to remaining mixture in Slow Cooker; stir until melted. Stir in mashed potatoes and milk; cook, covered, 5 min. or until heated through.
- Place bacon on paper towel-covered microwaveable plate. Microwave on HIGH 20 to 30 sec. or until heated through. Serve soup topped with bacon, remaining cheese, sour cream and chives.
