olive oil
2 racks of higher-welfare pork loin back ribs (about 1.6kg)
MARINADE
1 fresh red chilli
1 thumb-sized piece of ginger
2 cloves of garlic
150 ml unsweetened apple juice
100 ml white wine vinegar
2 heaped tablespoons tomato ketchup
1 tablespoon Dijon mustard
100 ml low-salt soy sauce
100 g soft brown sugar

Steps:

  • Preheat the oven to 200ºC/gas 6. Preheat your barbecue.
  • Drizzle a little oil over the ribs, season with sea salt and black pepper and rub all over to coat.
  • Make the marinade. Deseed and finely chop the chilli, peel and grate the ginger and garlic then place them all in a medium pan along with the apple juice, white wine vinegar, tomato ketchup, mustard, soy sauce and brown sugar.
  • Whisk the ingredients together and place the pan over a medium heat. Stir until the sugar dissolves, then simmer for 10 to 15 minutes, or until the sauce has thickened.
  • Put the ribs in a large roasting pan, brush with the marinade and cover with foil.
  • Cook in the oven for 1 hour 15 minutes, or until the meat pulls away from the bone easily. Baste the ribs with the marinade after 30 minutes. After 1 hour of cooking time remove the foil, baste and cook, uncovered, for the final 15 minutes, basting halfway through.
  • Once your barbecue is hot, transfer the ribs to it. Cook over a medium-low heat for 5 to 10 minutes.
  • Transfer the ribs to a board and cut them up. Serve with handfuls of rocket and watercress, if you like.

2 racks pork baby back ribs (our favorite are baby back ribs, but this works well with St. Louis style ribs too)
1 cup barbecue sauce

Steps:

  • Preheat oven to 225 degrees.
  • Season your ribs with Dale's marinade, your favorite rib rub, grill seasoning, or simply salt and pepper.
  • Place ribs, meat side down, in baking dishes.
  • Cover the baking dishes with aluminum foil and place in the oven.
  • If you are using small baby back ribs, take out after 3.5 hours. If you are using regular baby back or St. Louis style ribs, then take out after 4 hours.
  • Drain off the drippings. Flip the ribs over using two spatulas (and an extra set of hands if you have them) so the meat side is up. Be careful, as they may be so tender they fall apart.
  • Put a layer of BBQ sauce on the ribs and return to the oven uncovered for an additional 20-30 minutes.
  • Remove from oven and serve them up with a side of potato salad and some baked beans.

1 cup Roasted Garlic Rub, recipe follows
One 6-pound boneless pork shoulder or butt roast (not tied)
2 cups roasted minced garlic
5 tablespoons salt
1/4 cup coriander seeds, ground and toasted
2 tablespoons mustard powder
4 tablespoons dried chipotle pepper, ground
2 tablespoons dried thyme
5 tablespoons dried rosemary, finely chopped
5 tablespoons lemon zest
2 1/2 teaspoons black pepper

Steps:

  • Preheat oven to 275 degrees F. If necessary, trim fat from top of pork, leaving a 1/8-inch thick layer of fat. Spread Roasted Garlic Rub all over pork and inside any cavities, concentrating on boned side.Put pork, fat side up, in a roasting pan and roast in middle of oven 6 to 8 hours. Transfer roast to cutting board and let stand 15 minutes. Pull shreds apart with tongs into chunks. Serve.
  • Combine all ingredients in a food processor. Can also be mixed by hand in a bowl, but make sure to combine well.

½ onion, sliced

  • Pour water into slow cooker. Layer the ribs into the slow cooker. Top the ribs with onion and garlic.

1 rack spare ribs (full rack of spare or back ribs)
3 tablespoons fresh lemon juice (1 large lemon)
1 tablespoon kosher salt
1 tablespoon Dijon Mustard
6 cloves garlic (smashed and minced)
2 teaspoons onion powder
1 teaspoon dried thyme
1/2 teaspoon black pepper
1/4 cup water
1/3 cup balsamic vinegar
1/4 cup honey

Steps:

  • In a 6-quart or larger slow cooker that has not been turned on, add the ribs. Cut and layer as necessary to get them to fit.
  • In a small bowl, combine the lemon juice, salt, mustard, garlic, onion powder, thyme, and black pepper.
  • Use your hands to rub the mixture into the ribs, top and bottom and all over.
  • Place the lid on the turned off crockpot and let the ribs sit at room temperature for 30 minutes.
  • After 30 minutes, add 1/4 cup water to the bottom of the slow cooker. Try not to wash the rub off of the ribs, add the water near the edge.
  • Turn the crock pot on and turn the heat to low. Cook for 5-6 hours. The meat should be tender and shred easily with a fork.
  • Line a large rimmed baking sheet with aluminum foil or parchment paper. Transfer the ribs to the baking sheet.
  • Make the glaze: Pour 1 and 1/4 cups of the cooking juices from the crock pot into a small saucepan and set over medium high heat. Add the balsamic vinegar and honey. Bring to a boil, then reduce to a simmer. Let simmer and bubble actively for 6-8 minutes, until the glaze has thickened and looks syrupy. It should coat the back of a spoon.
  • Preheat your broiler to high heat and move the oven rack to the top, so that it's just a few inches away from the heat source.
  • Brush some of the glaze over the ribs. Broil in the oven for 2-3 minutes. Brush the ribs again with the glaze, rotate the pan, and return to the broiler. Broil for another 2-3 minutes. Don't walk away! Set a timer! Can you imagine burning your ribs at this point after waiting this long??? All the tears.
  • Serve ribs hot with the extra glaze!
  • I served these with My Favorite Coleslaw and Literally the Best Mac and Cheese I've Ever Had. Soooo good.

1 bottle barbecue sauce (350g approx)
2 pork stock cubes
2 bay leaves
1 tsp coriander seed
1 tsp mustard seed

  • Put 4 tbsp of barbecue sauce along with the rest of the ingredients into your slow cooker. Top up with enough water to cover (roughly 1.5l). Slow cook on Low for 8 - 9 hours until very tender but not completely falling off the bone.

temperature about 200 degrees, smoke and patience. A full rack of ribs can be smoked in about 4 hours but do take the time and go the distance. The longer you smoke the more flavor you will get. I'm using a mustard rub to form a nice crust. Remember that you need to hit an internal temperature of 165 F before they can be served. Have a meat thermometer ready.

8 lbs pork loin baby back ribs
1/4 cup yellow honey mustard
1/4 cup brown sugar
1/3 cup paprika
1/4 cup onion powder
1/4 cup granulated garlic powder
2 tablespoons dried parsley flakes
1 -2 tablespoon chipotle chili pepper flakes
1 tablespoon black pepper
2 tablespoons chili powder

Steps:

  • Prepare ribs:.
  • Let the ribs come up to room temperature, rinse off in cold water and remove the silver membrane from the back. You don`t have to remove it but I find the membrane blocks the uptake of smoke and creates a barrier to your rubs.
  • To remove the membrane, lay the ribs on a flat surface meat side down. Take a sharp knife and begin peeling the membrane from one corner near the bone. Once you have a good piece peeled back, grab it with a paper towel to get a good grip and begin pulling. Once the membrane is removed rinse off the ribs again and pat dry with some paper towels.
  • Mustard Rub:.
  • Mix rub mixture together.
  • Then rub the mustard rub mixture over the entire surface of the ribs.
  • Once the pork ribs are seasoned and the smoker is ready then you are set to go. Using a blend of oak, hickory and a little mesquite in the firebox,or what you prefer.
  • Place the ribs in the smoker and let it go. You want the good smoking temperature in the area about 200 degrees. You can go lower if you plan on doing a long smoke, but I don't go higher.
  • After smoking for 2 hours. Then wrap the ribs in heavy duty foil and keep going for 2 more hours. Creating fall off the bone ribs! Then unwrap for one hour.
  • To serve I cut the ribs inIf you want crispy ribs blast the heat on the grill and char them.
  • If you want extra sweet, spicy, sticky goodness dip into your favorite BBQ sauce. Apply the sauce when the foil comes off, but for crispy ribs apply after crisping. If you want extra smoke go ahead and add more wood when unwrapping the ribs.
  • Let ribs sit for 10 minutes before cutting into servings.

1 large onion (chopped)
3 tablespoons Worcestershire sauce
1/2 cup red wine
1 cup beef broth
3 tablespoons Kosher salt

2 tablespoons brown sugar
2 teaspoons smoked paprika
3 teaspoons chili powder
2 teaspoons garlic powder

5 to 6 corn cobs

1 cup sweet & smoky barbecue sauce
2 tablespoons cilantro

Steps:

  • In a small bowl, combine the dry rub seasonings: salt, pepper, brown sugar, chili powder, smoked paprika, cumin, garlic powder. Set aside about 2 tablespoons of the seasoning to use for the corn. Cut the slab of pork ribs into 4 smaller sections; season the ribs well on all sides.
  • Drop the chopped onion into the bottom of a slow cooker and arrange the ribs over the onions. Combine the red wine, Worcestershire and broth in a large measuring cup, then pour over the ribs. Cover the slow cooker and cook on 'High' heat for 4 to 5 hours, until the rib meat pulls away easily from the bone.
  • Approximately 30 minutes before the pork ribs are ready, prepare the corn. Bring a large pot of water to a rolling boil and season with salt. Add the corn cobs and boil for 10 minutes. Remove the corn onto a large platter and coat generously in butter. Season with the remaining dry rub mixture; set aside.
  • Preheat grill to 475F (medium-heat). Remove the ribs from the slow cooker and grill for 3 to 5 minutes per side with the grill closed, allowing the ribs to get some smoky flavor. At this time, also place the corn cobs on the grill and rotate along with the ribs. Using a rubber pastry brush, coat the ribs generously in barbecue sauce and grill for 1 more minute per side.

Your favorite BBQ sauce

Steps:

  • Preheat your oven to 300°F. Salt and pepper both sides of your ribs and place in a single layer in your pan, fattier side up.
  • Cover the pan tightly with foil and bake for 2 hours. Carefully (steam and liquid in the tray will be hot!) remove ribs from the oven and check the meat. They should be starting to become tender. If they still feel tough, re-cover them and place them back in the oven for 15 to 30 minutes.
  • Transfer ribs to a plate and drain liquid from the pan. Return ribs to tray and brush with a generous coating of BBQ sauce.

2 racks baby back pork ribs (3-4 pounds)
4 teaspoons paprika
2 teaspoons garlic powder
1½ teaspoons onion powder
1 teaspoon chili powder
1½ teaspoons salt
1 teaspoon black pepper
1½ cups BBQ sauce (divided, plus more for serving if desired)

Steps:

  • If the ribs have the thin white membrane along the back, remove it. It is usually easy to pull off with your fingers, but if not you can run a butter knife under the membrane and then use a paper towel to grip it and pull it off.
  • Cut each rack of ribs into 2 pieces or as needed to fit all of the ribs in your slow cooker.
  • Combine the paprika, garlic powder, onion powder, chili powder, salt and pepper in a small bowl. Rub this dry rub mixture over the ribs.
  • Place ribs in slow cooker, meaty side up.
  • Pour 1 cup of the BBQ sauce evenly over the ribs, reserving the remaining 1/2 cup for after slow cooking.
  • Cover and cook on low for 8 hours or high for 4 hours, or until ribs are tender.

Rustic country-style pork ribs are easy to prepare and will reward you will melt-in-your-mouth tenderness and rich flavors.

4 lbs country-style pork ribs
2 Tbsp cooking oil
3 yellow onions ((quartered and sliced about 1/4-inch thick))
4 garlic cloves ((finely chopped))
1 1/2 tsp kosher salt ((plus more to taste))
1/2 tsp ground black pepper
1/2 tsp ground ginger
A pinch of ground allspice
1/4 tsp ground nutmeg
1/2 tsp dried marjoram
3 cups water
3 Tbsp cornstarch
3 Tbsp cold water

Steps:

  • Trim excess fat from the ribs if necessary. Season with a little bit of salt and pepper and set aside.
  • Heat cooking oil in a non-stick pan over medium-high heat. Add half of the ribs and sear for 4 minutes. Flip and continue searing for another 4 minutes, or until nicely browned. Transfer the browned ribs to the slow cooker and continue browning the other half of the ribs. Transfer to the slow cooker.
  • Add the onions to the same the skillet. There should be plenty of oil and fat left in the pan, but if not, add another tablespoon of oil. Saute until deep golden brown, constantly stirring, about 3-5 minutes.
  • Add the garlic and continue cooking for another 30 seconds.
  • Add the water, salt, pepper and the rest of the seasonings. Bring to a simmer. Taste and adjust for salt. The liquid should be salted just right.
  • Pour the contents of the pan into the slow cooker over the ribs. Stir to distribute the ingredients evenly.
  • Set the slow cooker to low and cook for about 4-5 hours or until the pork ribs are fork-tender. You can also cook the meat on high for 2-3 hours.
  • Once the meat is tender, check for salt and seasonings again and adjust if needed.
  • If you want the liquid thickened, now is the time to do it. Carefully remove the ribs from the slow cooker and set aside. Dissolve three tablespoons of cornstarch in three tablespoons of cold water. Add the cornstarch to the slow cooker and stir well. Let simmer for about 20 minutes until desired thickness is achieved. If needed, add more cornstarch.
  • Return the ribs to the slow cooker and keep on 'warm' until ready to serve.
  • Serve with with rice, mashed potatoes, potato pancakes, pasta or other favorite side dish.
