6 slices bacon, diced
1/2 lb fully cooked Polish sausage or 1/2 lb kielbasa, chopped
4 (16 ounce) cans kidney beans, rinsed and drained
1 (28 ounce) can diced tomatoes, drained
2 medium red bell peppers, chopped
1 large onion, chopped
1 cup ketchup
1/2 cup packed brown sugar
1/4 cup honey
1/4 cup molasses
1 tablespoon Worcestershire sauce
1 teaspoon kosher salt
1 teaspoon ground mustard
2 medium red apples, cored and cut into 1/2-inch pieces (do not peel)

Steps:

  • In a skillet, cook bacon until crisp. Remove with a slotted spoon to paper towels.
  • Add sausage to drippings; fry for 5 minutes, stirring often. Drain and set aside.
  • In an 5-qt. slow cooker, combine the beans, tomatoes, red peppers, onion, ketchup, brown sugar, honey, molasses, Worcestershire sauce, salt and mustard. Stir in the bacon and sausage. Cover and cook on low for 4-6 hours, or on high 2-3 hours.
  • Stir in apples. Cover and cook on low 2 hours longer, or on high 1 hour longer.

1/2 pound smoked Polish sausage or kielbasa, sliced

2 medium sweet red peppers, chopped
1 large onion, chopped
1 cup ketchup
1/2 cup packed brown sugar
1/4 cup honey
1/4 cup molasses
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon ground mustard
2 medium unpeeled red apples, cubed

Steps:

  • In a large skillet, cook bacon until crisp. Remove with a slotted spoon to paper towels. Add sausage to drippings; cook and stir for 5 minutes. Drain and set aside., In a 6-qt. slow cooker, combine the beans, tomatoes, red peppers, onion, ketchup, brown sugar, honey, molasses, Worcestershire sauce, salt and mustard. Stir in the bacon and sausage. Cover and cook on low for 4-6 hours. Stir in apples. Cover and cook 2 hours longer or until bubbly.

New England Baked Kidney Beans in the Crock Pot image

If you like Kidney Beans, then this is a recipe not to be missed! Rich in flavor and absolutely delicious! Serve with Boston Brown Bread and you have one fabulous meal! I use my 6 qt. crock pot and there is plenty of room. Preparation time does not include soaking beans overnight. The cooking time is approximate, so check your beans periodically.

2 lbs kidney beans, cleaned
1/2 cup sugar
2/3 cup molasses
6 teaspoons dry mustard
2 teaspoons salt
1/4 teaspoon pepper
1 large onions, cut in 1/2 or 1 large onion, diced small
1/4 lb salt pork, cut into 1-inch chunks
4 1/2 cups water, boiling

Steps:

  • Rinse dry beans in cold water. Place in a lg. bowl, and cover with 2" of cold water. Let soak overnight in refrigerator. Drain, and rinse beans.
  • Put beans in a lg. crock pot with the rest of the ingredients. Cook on high 12-14 hours or on low for 24 hrs., or until beans are soft, and juice is thick. Stir occasionally.
  • Check water occasionally to make sure there is enough water in the beans, so they don't boil dry.
  • Note:.
  • If you use a smaller size crock pot cut the recipe in 1/2, and cook until beans are done. I always use my large crock pot, so I'm not sure how long it takes.

This recipe is a traditional and classic North Indian dish that you would find in every home, but not in restaurants. Comfort food for Punjabis, this is the dish her family requests the most.

3 cups dried red kidney beans, sorted and washed
1 medium yellow onions or 1 medium red onion, roughly chopped
2 medium tomatoes, diced
2 inches piece ginger, peeled and minced
3 garlic cloves, chopped
4 -6 serrano chilies or 4 -6 cayenne chilies, chopped
3 whole cloves
1 cinnamon stick, 2 to 4 inches
1 tablespoon whole cumin seed
1 tablespoon red chili powder
2 tablespoons kosher salt
1 teaspoon ground turmeric
1 teaspoon garam masala
9 cups water (if you soak overnight, use less water, see note)
1/2 cup chopped cilantro
hot cooked brown rice or hot cooked basmati rice
1 cup plain yogurt (optional)

Steps:

  • Safety note: This is not part of the recipe, but it is information that has recently been highlighted in various places. Dry beans, especially dry red kidney beans, contain a toxin called Phytohaemagglutinin, which can cause nausea, vomiting, diarrhea and abdominal pain. Soaking and boiling dry beans helps remove this toxin to make beans safe to eat -- in a slow cooker, the temperature never gets hot enough to heat up dry beans sufficiently [source: U.S. Food and Drug Administration]. They recommend that you first soak them for a minimum of 12 hours, rinse them, and then boil them for 10 minutes. Singla has said that the long cooking here has the same effect, but if you have any concerns, please use these instructions, and expect the beans to finish cooking more quickly. Use less water if you start with soaked beans.
  • Put all ingredients except the cilantro and the rice into a 5 to 6 quart slow cooker. Cook on High for 11 hours, until the beans break down and the whole is somewhat creamy. (Several people have mentioned that it seems watery, so you might want to try less water - definitely less water if beans were pre-soaked).
  • If you can find them, remove the cloves and the cinnamon stick. If the beans are not as creamy as you want them, stick your immersion blender in there and whir a bit. (Or remove about one cup of the beans and process in blender or food processor). Most of the beans should remain whole.
  • Stir in cilantro and serve over rice.
  • Optional: Stir in 1 cup yogurt, cover and let sit for 10 minutes, for a tangy twist.
  • Use a 3 1/2 quart slow cooker if making half the quantity.
