SLOPPY JOE SHEPHERD'S PIE
Double-up two favorites, with sloppy Joe flavor from prepared sauce jazzing up ground beef and instant mashed potatoes adding a crowning touch.

Steps:
- Heat oven to 350°F. In large nonstick skillet, cook ground beef and onion over medium-high heat for 5 to 7 minutes or until beef is thoroughly cooked, stirring frequently. Drain.
- Add mixed vegetables and sandwich sauce; mix well. Bring to a boil. Reduce heat; simmer 5 minutes or until vegetables are tender, stirring occasionally. Spoon into ungreased 8-inch square (2-quart) glass baking dish.
- Meanwhile, cook mashed potatoes as directed on package, using hot water, milk and margarine. Let stand 5 minutes. Spoon or pipe potatoes around edges of hot beef mixture. Sprinkle paprika over potatoes.
- Bake at 350°F. for 25 to 30 minutes or until bubbly and thoroughly heated.

SLOPPY JOE MASHED POTATO PIE
An easy sloppy joe mashed potato pie recipe that kids love.

Steps:
- Preheat the oven to 375º F.
- Peel the potatoes, chop them, and add them to a pot of water. Bring to a boil until the potatoes are soft.
- Drain the potatoes. Add cream and cheddar to the pot and use an electric mixer to whip the potatoes.
- In a skillet add the olive oil and brown the onion, scallion, and garlic. Cook for 3 minutes.
- Add the meat and cook until the meat is browned.
- While the meat is cooking, add the ingredients for the sauce in a bowl. Pour onto the cooking meat and simmer for 10 minutes.
- Add the mashed potatoes to the springform pan. Press it up against the sides to make an indentation for the meat.
- Spoon in the meat mixture onto the potato crust.
- Bake for 25 minutes until the meat is bubbly.
- Serve hot.

SLOPPY JOE BAKED POTATOES

- Pierce the potatoes in a few places with a fork; place on a microwave-safe plate and microwave until tender, turning once, about 15 minutes. Set aside.
- Meanwhile, melt 1 tablespoon butter in a large skillet over medium heat. Add the onion, carrot and celery and cook, stirring occasionally, until the vegetables are tender, about 7 minutes. Add the turkey and 1/4 teaspoon each salt and pepper; cook, breaking up the meat with a wooden spoon, until no longer pink on the surface, about 5 minutes. Stir in the ketchup, chili sauce, 1/2 cup water, the chili powder and garlic powder; continue cooking until the meat is cooked through, 3 to 5 more minutes.
- Split the baked potatoes open lengthwise, dot with the remaining 1 tablespoon butter and gently fluff the flesh with a fork. Top with the turkey mixture and sprinkle with the cheese while still hot.

- Preheat oven to 400 degrees.
- In large deep frying pan, add lean ground beef and sauté over medium heat breaking up as you go. When enough grease releases, add potatoes & onions. Sauté until meat is done and potatoes are lightly browned. Drain grease well.
- Stir in cans of Manwich and cheddar cheese. Set aside to cool.
- Line 9" pie plate with pie pastry. Fill prepared pie dish with cooled filling. Top with second pie sheet in any way desired. Tuck top edge under bottom edge and flute to seal. If not doing a lattice top, poke top several times with a knife to vent.
- Pop into 400 degree oven and bake for 15 minutes. Reduce heat to 350 degrees and continue baking for 35-40 minutes until crust is golden brown and pie is just starting to bubble. Let rest for at least 20 minutes before serving.

- Heat oven to 325°F
- In large skillet, brown ground beef, onion and bell pepper over medium-high heat until beef is thoroughly cooked, stirring frequently. Drain.
- Add sandwich sauce and corn; mix well. Reduce heat; simmer 4 to 6 minutes or until thoroughly heated and corn is crisp-tender, stirring occasionally.
- Meanwhile***, in medium saucepan, bring water and garlic salt to a boil.
- Remove saucepan from heat; stir in potato flakes until well blended.

- You could use leftover mashed potatoes here.
- Add sour cream and egg; mix well.

I don't know where this recipe originated, but it has been an old stand by on my mom's dinner party tables for years. It actually bakes up to look quite impressive. Please don't try to substitute fresh mashed potatoes (believe me I have tried) the instant box stuff provides the perfect texture.

- Make mashed potatoes according to package directions for 7-8 servings.
- Stir garlic powder, eggs, Parmesan and one cup of the mozzarella into prepared potatoes.
- Pile mixture into a 9-inch deep dish pie plate.
- Sprinkle top with 1/4 cup of mozzarella and a sprinkle of paprika for color.
- Bake at 350°F until golden on top and puffy about 45 minutes.
