1/2 lb ground turkey
1/2 cup onion, chopped
1 (15 ounce) can fat-free chili
1/4 cup celery, chopped
1/4 cup green pepper, chopped
1/2 cup corn (fresh or frozen)
1/2 cup salt-free tomato sauce
1 teaspoon honey
1/8 teaspoon cayenne powder (optional)
1/2 teaspoon paprika
1/2 teaspoon dry mustard
3/4 teaspoon chili powder (depending on taste)

Steps:

  • In large heavy pan, cook turkey 3 to 5 minutes until no longer pink.
  • Add onion and saute 3 to 5 minutes longer until softened.
  • Add chili, celery, green pepper, corn, tomato sauce, honey and seasoning to turkey.
  • Cover and simmer for 30 minutes, stirring occasionally.
  • Serves 4.

1 lb lean ground turkey
2/3 cup onion
1/2 cup green pepper
2 jalapeno peppers
1 cup no-salt-added ketchup
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon garlic powder
2 tablespoons chili powder
1 tablespoon mustard powder
1/4 teaspoon salt substitute
2 tablespoons extra virgin olive oil

Steps:

  • Remove seeds from jalapeno peppers and dice.
  • Dice onion and green pepper.
  • Sauté onion, jalapenos and green pepper in EVO then set aside.
  • Cook ground turkey crumbling into little pieces.
  • Drain and return to pan.
  • Over med-high heat add all of the ingredients into the pan.
  • Stir mixture for 3-5 minute.
  • Lower heat to low and simmer for 5-10 min to fuse flavors.
  • Serve on either crusty rolls or hamburger buns.
  • Leave out the jalapeno if you don't like it hot. If you do throw in 2 more.
  • Additions: Try adding diced tomatoes or olives and top with cheese if you so desire.

2 tablespoons extra-virgin olive oil, 2 turns of the pan
1 package, 1 1/3 pounds, ground turkey breast or lean ground turkey
1/2 red onion
1/2 red bell pepper
1 tablespoon grill seasoning blend (recommended: McCormick Montreal Grill Seasoning or Mrs. Dash seasoning for poultry)
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 cup tomato sauce,( 8- ounce) can
4 crusty sandwich rolls, split
12 celery sticks, available in produce department or Grown Helper can chop
12 carrot sticks, also available in produce department or grown helper can chop
Cheese Fries, recipe follows

Steps:

  • Have a GH (grown helper) place a big skillet over medium high heat for you. Use some kitchen scissors to cut the turkey package open. Add some extra-virgin olive oil, 2 turns of the pan in a nice, slow stream. Have the GH add the ground turkey to the pan, in case it spatters. Break the turkey up with a big wooden spoon as it starts to cook. If anyone touches the raw turkey, they should go wash their hands.
  • If you are a really good chopper, using a small, sharp knife chop up some red onion. Remember when you are chopping to keep the fingers that are not holding the knife all tucked in and curled under. Have a GH help you. You need half a red onion chopped up small. Pull the seeds and white membrane and the top out of a half red bell pepper and chop that up small too. Add the veggies to the cooking meat and stir it all together.
  • Next, mix in a small bowl: grill seasoning blend, brown sugar, Worcestershire sauce and the tomato sauce. This will make your special sauce. When all the ingredients are combined, pour the sauce evenly over the meat and stir everything together really well. Turn the heat down to simmer and cook the sloppy mixture for 10 minutes. Blow on a spoonful until cool and taste it to see if you need to adjust the seasoning.
  • Have the GH help you serve. Place a bun bottom on a plate. Use a big ice cream scoop to get a pile of sloppy meat onto the bun. Put bun top in place and serve with vegetable sticks on the side and Cheese Fries.
  • 1 sack frozen French fries, any brand or shape - crinkle cut, thin cut, steak cut, waffle fries - prepared to package directions
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 2 1/2 cups, (10-ounce) sack shredded yellow Cheddar
  • 3 squirts ketchup, about 1/4 cup
  • Have your GH (Grown Helper) put fries in oven on a cookie sheet. While fries are baking in the oven, have a GH place a sauce pot on the stove and heat it over medium heat. Add butter and melt it. Add the flour and stir. Cook butter and flour together for 1 minute or so. This is called "roux" (like Tiger and Roo with Pooh Bear) and it helps to thicken up sauces. Use a whisk to stir as the milk goes into the pot. Keep stirring until the milk gets thicker. Use a wooden spoon or heat-safe spatula to stir in the cheese. When all of the cheese melts, take the sauce off the heat and stir in 3 squirts of ketchup. This is your SECRET ingredient. When everyone asks what you put in your cheese sauce that makes it taste so good, just say milk and cheese, you can NEVER tell what secret ingredients you add! Tell your GH to keep the secret, too or they can never help you again!
  • Pour the sauce over the fries or serve the sauce on the side if you like to dipping better.
  • Yield: 4 to 6 servings

½ cup chopped green bell pepper

½ teaspoon celery seed
½ teaspoon ground black pepper

  • Heat a nonstick skillet over medium heat; cook and stir turkey, onion, bell pepper, and tomato until turkey is crumbly and no longer pink, about 5 minutes. Stir in ketchup, barbeque sauce, mustard, vinegar, celery seed, black pepper, and red pepper flakes. Reduce heat to low and simmer for 10 minutes, stirring occasionally. Serve turkey mixture on toasted hamburger buns.

I came up with this when I was getting ready to make Sloppy Joes, but was craving some ZING! The ZING! is in the chipotle pepper sauce and I will state again that is it kind of HOT. I enjoy spicy foods and this recipe is a product of that enjoyment. You can freeze the leftover chipotle peppers and sauce for adding zip to mayo or other white sauces or for adding to other dishes. It is neat stuff to experiement with! Hope you like the recipe, it is fast and easy!

1 lb ground beef (beef or turkey)
1/2 chopped onion
1/2 chopped green pepper (optional)
1 tablespoon minced garlic
1/2 tablespoon cumin powder
1 teaspoon adobo sauce, from a can of chipotle peppers (or more, this is HOT use at own risk)
salt and pepper
1 (8 ounce) can tomato sauce
1 cup grated cheddar cheese or 1 cup Mexican blend cheese
chopped green chili (optional)
sliced black olives (optional)
hamburger buns or hispanic roll (optional)

Steps:

  • At medium to medium high heat brown the meat with the onions, green pepper, and garlic.
  • Drain off the fat.
  • Pour in tomato sauce, chipotle sauce (this stuff maybe too hot for some people, if you DO NOT like spicy foods use less or don't use it at all-- start with a small amount and add more according to taste), cumin powder and grated cheese.
  • Stir until cheese is completely melted.
  • Allow sauce to thicken.
  • Reduce heat to low and stir in salt and pepper if desired.
  • You may now add olives or chiles if you desire.
  • Put thickened meat mixture on hamburger buns-- OR if you can find the little bollo or bonito (can't remember the name) rolls at your grocery store use those if you like.

1/2 cup onion, minced
1/2 cup ketchup
1/3 cup corn
1/3 cup black beans

1 teaspoon cumin

1/3 cup low-fat mayonnaise
3 tablespoons honey

1 cup monterey jack cheese
4 cups coleslaw mix

Steps:

  • Pre heat broiler to high; line a baking sheet with parchment paper.
  • Whisk the mayo, honey, lime juice, salt and cayenne together; Toss with coleslaw; chill.
  • Saute turkey and onion for about 5 minutes.
  • Stir in ketchup, corn, beans, chipotles, green chilies, brown sugar, mustard, cumin and salt; simmer 5 minutes.
  • Spoon into each bun bottoms (if using) and top with cheese.
  • Broil top buns cut side up until buns are toasted and cheese is melted.
  • To serve, spoon the slaw onto each sandwich and serve.
  • You can also spoon the mixture into a tortilla, top with cheese and slaw and serve.
  • This can also be made into a freezer meal by freezing the turkey and onions together; the ketchup-cumin together and then the mayo-cayenne together in seperate baggies. Place all in a large freezer bag, label, seal and freeze. Then thaw and follow cooking directions.

1/4 cup carrot (finely diced)
2 tablespoons garlic (diced)
