SLICED POACHED CHICKEN WITH LIGHT AND LEMONY GRAVY



Sliced Poached Chicken with Light and Lemony Gravy image

4 small boneless, skinless chicken breasts
1 onion, quartered
2 ribs celery, halved
1 carrot, peeled and halved
2 bay leaves
3 tablespoons butter
1 shallot, finely chopped
2 cloves garlic, minced or pasted
3 tablespoons flour
A few sprigs fresh thyme, finely chopped
1/2 cup white wine
1 lemon, zested
2 lemons, juiced
1/3 cup light cream, optional
Bread, for serving, optional
A few leaves fresh basil, torn or shredded, for garnish

Steps:

  • Place the chicken in a deep skillet or pot with the onion, celery, carrot, and bay leaves. Cover with just enough water to come to the top of the meat. Bring to a boil, reduce the heat, and then simmer until cooked through, about 12 to 15 minutes. Remove the chicken to a plate with tongs and tent with foil. Strain the poaching liquid and reserve 1 cup.
  • Return the skillet to medium heat and add the butter to melt. Add the shallot and garlic and stir for 2 minutes. Sprinkle in the flour and stir another minute. Stir in the thyme and wine. Add lemon zest and juice, the reserved poaching liquid, and simmer to reduce the sauce and thicken a bit. Stir in the cream, if desired. Slice the chicken and add to the sauce to warm. Serve with bread or a simple pasta dish such as Egg Pasta with Leeks. Garnish with basil and serve.

Pan-fried chicken with a zesty lemon-garlic pan gravy. I created this when my husband requested "some kind of garlicy, lemony, chicken thing" using what was on hand.

1/2 cup flour (approximate, I used four generous tablespoons)
1 tablespoon lemon pepper
1 tablespoon granulated garlic
1 teaspoon oregano
1 teaspoon poultry seasoning
1 teaspoon paprika
1 teaspoon parsley
2 eggs
1 tablespoon milk
6 thin-cut chicken breasts
4 tablespoons canola oil
1 cup chicken broth
1 lemon, juice of
2 garlic cloves, crushed and diced

Steps:

  • Heat 2 tablespoons oil in a deep skillet on medium, just until it spits when a drop of water is added.
  • Combine flour, lemon pepper, granulated garlic, oregano, poultry seasoning, paprika, and parsley in a shallow bowl. Mix well. Reserve two tablespoons for pan gravy.
  • Beat together eggs and milk in another shallow bowl.
  • Dip chicken in egg mixture then dredge in flour mixture.
  • Fry chicken in oil until cooked, about 4 minutes each side. Do not crowd pan. Use multiple batches if necessary, adding oil for each batch.
  • Remove cooked chicken to a plate lined with a double layer of paper towel to absorb any left-over oil.
  • When all chicken is cooked, reduce heat to low, add chicken broth and garlic, lemon juice, scrape up any brown bits in the pan, and whisk in the reserved flour mixture.
  • Cook on low for five minutes, whisking continuously, or until mixture begins to form a gravy.
  • Remove from heat.
  • Serve gravy over chicken.

1 tablespoon butter
1 tablespoon olive oil
2 boneless chicken breast halves
1/2 pound mushrooms, thinly sliced
4 garlic cloves, chopped
8 paper-thin slices lemon
1/2 cup dry white wine
2 tablespoons fresh lemon juice
Chopped fresh parsley

Steps:

  • Melt butter with olive oil in heavy medium skillet over high heat. Season chicken with salt and pepper. Add chicken to skillet and sauté until brown, about 2 minutes per side. Using tongs, transfer chicken to plate. Add mushrooms and garlic to skillet. Sauté until mushrooms are tender, about 4 minutes. Return chicken to skillet. Overlap 4 lemon slices on each piece of chicken. Pour white wine and lemon juice around chicken. Reduce heat to low. Cover skillet and simmer until chicken is cooked through, about 5 minutes. Season with salt and pepper.
  • Transfer chicken to plates. Spoon sauce around chicken. Garnish with parsley and serve.

Poached chicken with lemon in a deliciously creamy tarragon sauce - serve simply with rice or potatoes

300ml dry white wine
1 small fennel , sliced or 2 sticks celery, sliced
1 large carrot , cut in sticks
2 sprigs each thyme , rosemary and tarragon
2 large bay leaves
about 100g/4oz smoked bacon pieces or rinds
½ tsp whole black peppercorns
1 tbsp bouillon powder or 2 stock cubes
1 whole chicken , about 2kg/4lb 8 oz
1 onion , quartered
2 egg yolks
142ml pot double cream
handful fresh tarragon , chopped
1 tsp cornflour
juice of 1 lemon

Steps:

  • Put the wine, vegetables, herb sprigs, bay leaves, bacon, peppercorns and stock powder or cubes in a large pan. Bring to the boil, then simmer for 10 mins.
  • Remove any excess fat from the chicken and push it into the liquor.
  • Return the liquor to the boil, then turn heat down. Cover and cook for 11⁄4 hrs until chicken legs feel tender when pierced. Remove from heat, stand for 15 mins, then lift onto a plate. Strain the liquor into a bowl and pour 500ml into a pan. Boil to reduce by half.
  • Pull and cut the bird into neat portions, discarding skin, wing tips and backbone. Put on a plate and cover.
  • Beat together the yolks, cream and tarragon in a jug. Ladle in a quarter of the liquor, mix, then pour back into the stock and turn the heat down. Mix the cornflour with a little water and add. With a wooden spoon, stir for 3-5 mins until it begins to thicken.6 Remove from the heat, then stir in lemon juice to taste. Pour some sauce over the chicken and put the rest in a jug. Serve with boiled long grain rice.
