3 tbsp avocado oil
2 cups diced yellow onion
3 cloves garlic (minced)
2 pounds Honeysuckle White Lean Ground Turkey
2 tsp kosher salt
1 tsp black pepper
2 teaspoons ground cumin
1 teaspoon ground coriander
1 ½ teaspoons chili powder
1 ½ teaspoons dried oregano
¼ teaspoon cayenne pepper
2 [4-ounce] cans mild diced green chiles (undrained)
2 [15-ounce] cans cannellini or great northern beans (undrained)
2 cups low-sodium chicken broth
2 bay leaves
Shredded monterey jack cheese
Pico de gallo
Pickled jalapenos
Fresh cilantro leaves
Sour cream
Lime wedges

Steps:

  • Heat the oil in a large pot or dutch oven over medium heat. When hot, add the onion and garlic and cook, stirring, until the onion is translucent, about 5 minutes.
  • Add the ground turkey, salt, and pepper and cook, breaking up the meat with the edge of a spoon into smaller pieces and the turkey is cooked through, or no longer pink, about 5 minutes.
  • Add the cumin, coriander, chili powder, oregano, cayenne tossing until the spices are well combined with the meat. Cook, toasting the spices, for about 2 more minutes.
  • Add the green chiles, beans, broth and bay leaves and bring the pot to a boil. Reduce the heat to a simmer and cook, lightly simmering, uncovered, and stirring occasionally to allow the flavors to meld and the chili to thicken, about 25 minutes.
  • Ladle the chili into bowls and top with desired toppings! Enjoy!

1/2 pound dried navy beans, picked over
Sour cream, for serving
2 tablespoons olive oil
Grated Cheddar or Monterey Jack cheese, for serving
2 cups chopped yellow onion
Chopped green onions, for serving
2 tablespoons minced jalapeno
2 tablespoons minced garlic
2 1/2 pounds ground turkey
2 tablespoons Emeril's Southwest Essence, recipe follows
1 2/3 tablespoons chili powder
2 teaspoons kosher salt
1/2 teaspoon ground cumin
1/4 teaspoon dried oregano, crumbled
1 bay leaf
3 tablespoons cornmeal
3 cups low-sodium chicken broth
2 (10-ounce) cans Ro'tel Diced Tomatoes and Green Chiles (original), undrained
2 (4-ounce) cans diced green chiles, undrained
1 tablespoon finely chopped fresh cilantro stems
1/4 cup heavy cream
2 tablespoons finely chopped fresh cilantro leaves
1 tablespoon ground coriander
2 tablespoons chili powder
1 teaspoon cayenne pepper
2 teaspoons ground cumin
2 tablespoons paprika
1 tablespoon garlic powder
1 teaspoon crushed red pepper
1 tablespoon salt
1 tablespoon dried oregano
1 teaspoon black pepper

Steps:

  • In a large kettle, soak beans in cold water to cover by 2 inches overnight. Drain beans in a colander and return to kettle with enough water to cover by 2 inches. Cook beans at a bare simmer until just tender, about 1 hour, and drain in a colander.
  • In a skillet, heat the oil and saute the onion and jalapeno until soft and beginning to caramelize, 4 minutes. Add the garlic and cook, stirring, for 2 minutes. Add the ground turkey, Southwest Essence, chili powder, salt, cumin, oregano, and bay leaf and cook, stirring occasionally, until turkey is browned and cooked through, 6 minutes. Add the cornmeal and cook, stirring, for 2 minutes. Add the chicken broth, canned tomatoes, canned chiles, and cilantro stems and stir to combine. Bring to a boil, reduce heat to a simmer, and cook, uncovered, for 45 minutes, stirring occasionally. After it has cooked for 30 minutes, add the cooked beans. Add the heavy cream and cilantro leaves and cook, stirring occasionally, for 15 minutes longer.
  • Serve the chili in deep bowls, garnished with dollops of sour cream, grated Cheddar cheese, and green onions to taste.
  • Combine all ingredients thoroughly.

1-1/2 pounds lean ground turkey
2 medium onions, chopped
1-1/2 teaspoons dried oregano
1-1/2 teaspoons ground cumin
1 can (28 ounces) diced tomatoes, undrained
3 cups beef broth
1 can (8 ounces) tomato sauce
1 tablespoon chili powder
1 tablespoon baking cocoa
2 bay leaves
1 teaspoon salt
1/4 teaspoon ground cinnamon
3 cans (15 ounces each) cannellini beans, rinsed and drained

Steps:

  • In a Dutch oven or large soup kettle, cook the turkey and onions over medium heat until meat is no longer pink; drain. Add oregano and cumin; cook and stir 1 minute longer. Stir in tomatoes, broth, tomato sauce, chili powder, cocoa, bay leaves, salt and cinnamon. Bring to a boil. Reduce heat; cover and simmer for 45 minutes. Add beans; heat through. Discard bay leaves.

Healthy White Bean Turkey Chili image

I decided to get back on Weight Watchers and was googling recipes. I found one for white bean turkey chili, but decided to put my own spin on it. It is so good, hearty, and has a nice creamy and smoky taste. I only used one teaspoon of red pepper flakes because I was going to be serving it to my 2.5 year old. I was shocked she actually had like 4 hearty bites and was dipping her spoon in the liquid and slurping it up. This is a huge feat for my very picky eater. My hubby said it was a keeper. Also, I used two pounds regular ground turkey and one pound extra lean ground turkey. This recipe can also be OAMC and you could probably get 2 or 3 dinners out of it, depending on your family size. You could also use your slow cooker, just brown the turkey and your spices in a skillet, then transfer the rest of the ingredients into the slowcooker for the exception of the half and half. I would add that 30 minutes before serving. Enjoy! If you are counting points, there is 12 servings. We had hearty helpings, so I would say 6 to 8 servings if you are not restricting your portions.

2 medium yellow onions, chopped
5 garlic cloves, chopped
3 lbs ground turkey
1 tablespoon chili powder

4 (15 ounce) cans of white cannellini beans, drained and rinsed
2 cups chicken stock
1 cup fat-free half-and-half

Steps:

  • Heat a large heavy bottom pot over medium heat.
  • Add oil after pot is hot.
  • Cook onions until soft, about 5 minutes.
  • Add the garlic and cook an additional 2 minutes.
  • Add the spices and cook for another 2 minutes. (If using fresh sage, do not add until the very end.).
  • Add the ground turkey and cook all the way through, until meat is white.
  • Stir in the chicken stock and half and half.
  • If you are using fresh sage, add it at this point.
  • Lower the heat to low, and let the flavor incorporate, about 30 to 45 minutes, stirring occasionally.
  • Serve with low fat cheddar or Mexican style cheese, low fat sour cream, chopped onion, and/or chopped fresh cilantro for garnish.

2 medium onions, chopped
1 1/2 teaspoons dried oregano
1 1/2 teaspoons ground cumin
1 1/2 lbs lean ground turkey
1/4 cup chili powder
2 bay leaves
1 tablespoon unsweetened cocoa powder
1 1/2 teaspoons salt
1/4 teaspoon ground cinnamon
1 (28 ounce) can whole tomatoes
3 cups beef stock or 3 cups canned beef broth
1 (8 ounce) can tomato sauce
3 (15 ounce) cans small white beans, rinsed and drained
chopped red onion
chopped fresh cilantro
plain low-fat yogurt or light sour cream

Steps:

  • Heat oil in heavy large pot over medium heat. Add onions; sauté until light brown and tender, about 10 minutes.
  • Add oregano and cumin; stir 1 minute.
  • Increase heat to medium-high.
  • Add turkey; stir until no longer pink, breaking up with back of spoon.
  • Stir in chili powder, bay leaves, cocoa powder, salt and cinnamon. Add tomatoes with their juices, breaking up with back of spoon. Mix in stock and tomato sauce. Bring to boil.
  • Reduce heat; simmer 45 minutes, stirring occasionally.
  • Add beans to chili and simmer until flavors blend, about 10 minutes longer.
  • Discard bay leaves. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium-low heat before continuing.).
  • Ladle chili into bowls. Pass red onion, cilantro and yogurt separately.
  • Notes: I usually decrease the chili powder slightly because my DH prefers things mild.
  • We've always skipped the red onion and cilantro, but, it sounds interesting.
  • I'm estimating the active and passive work times.
