CHICKEN AND LENTIL SOUP
Steps:
- In a large pot combine lentils, chicken, water and chicken bullion.
- Bring to a boil, covered over medium-low heat until chicken is cooked, about 20 minutes.
- Remove the chicken and shred, return to the pot
- Meanwhile, in a chopper or by hand, mince the onions, scallions, cilantro, garlic, and tomato.
- Add to the lentils with garlic powder, cumin, oregano and annato and cook, covered until the lentils are soft, about 25 more minutes, adding more water as needed if too thick.
- Adjust salt to taste as needed.

- In a large soup pot over high heat, bring the water, stock, lentils, onions, celery, carrots, salt, paprika, oregano, and pepper to a boil.
- Decrease heat to med-low and simmer, covered, for 45 minutes, stirring occasionally.
- Add in the chicken, zucchini, and parsley; simmer, covered, until the vegetables are tender and the flavors are blended, 15-20 minutes; taste and adjust seasoning.
- Ladle into bowls and sprinkle feta on top.

- Melt the butter in a large saucepan.
- Add the carrot, onion, leek, celery and mushrooms; cook 3 to 5 minutes, or until softened.
- Stir in the wine and chicken broth.
- Bring to a boil.
- Add the thyme and bay leaf; reduce heat, cover and simmer 30 minutes.
- Add the lentils and continue cooking, covered, for another 30 to 40 minutes, or until the lentils are just tender, stirring the soup from time to time.
- Stir in the diced chicken and season to taste with salt and pepper.
- Cook until just heated through.
- Ladle the soup into bowls and serve hot, garnished with freshly chopped thyme.
HEARTY LENTIL AND TOMATO SOUP
This recipe is a quick to make and substantial to eat. Just the job for Winter days. It is based on a recipe published long ago by the english Cranks restaurants. If you like a chunky soup then serve as cooked, but if you like your soups smoother then blitz it in a blender or food processor.

- Chop the onion Heat the oil in a saucepan and sauté the onion until transparent.
- Add the remaining ingredients and stir.
- Cover and simmer for 30 minutes, stirring occasionally.

- Heat oil in a large heavy based pot or stock pot and gently cook finely chopped onions, garlic and celery till transulscent, but not browned.
- Add lentils, canned tomatoes, bayleaf, mixed herbs, tomato paste and vegetable stock, bring to the boil, then reduce heatand simmer, stirring occasionally, for an hour or until the lentils are tender.

LENTIL TOMATO SOUP
Lentil Tomato Soup is delicious and filling and very easy to make. Green vegetables make this soup a powerhouse of nutrition. Be sure not to overcook the lentils, as they can get rather mushy. After you stir in the tomatoes, let the soup simmer for 20 minutes if you have time in order to allow the flavors to blend a little more. And feel free to double the recipe and keep some in the fridge for a day or two, as the soup will get even better over this time.

- Heat a large soup pan on medium heat. Add the olive oil and saute the onions and garlic until translucent (not browned).
- Pour in the wine and allow it to bubble to deglaze the pot and burn off the alcohol.
- If using dried herbs, stir them in now, followed by the lentils. Pour in the water and boil for 30 minutes or until the lentils are softened.
- Stir in the tomatoes and sea salt and leave for 10 or preferably 20 minutes.
- Stir in the greens a few minutes before serving so they wilt. If using fresh herbs, stir them in now.

- Sort and rinse lentils.
- In a large saucepan, combine rinsed lentils and water.
- In a small frying pan, or skillet, saute onion and garlic in the butter until onion is tender but not browned.
- Add onion and garlic to lentils.
- Stir in salt, pepper, sugar, Oregano, basil and parsley.
- Bring to a boil; reduce heat.
