LOW FAT AND DREAMY, CHICKEN STROGANOFF



Low Fat and Dreamy, Chicken Stroganoff image

Traditional Stroganoff is made with thin slices of beef, onions, mushrooms, all sautéed in butter and combined with a rich sour cream sauce. This skinny recipe uses similar ingredients but with many reduced-fat replacements. For example, I've swapped the beef with boneless, skinless chicken breasts. Next, instead of fat-laden regular sour cream, I'm using fat-free. In addition, cooking the mushrooms and onions in the microwave without using any fat at all. This fabulous dish is served over whole grain, fiber rich pasta. Each serving has 392 calories and 5 grams of fat. All you'll need to complete this meal is a side salad or vegetable.

2 cups onions, (chopped)
4 cups mushrooms, (sliced (10 oz.))
4 cups (1 pound) cooked chicken, (diced)
1 cup fat-free sour cream or Non-fat plain Greek yogurt
½ cup white wine
½ tablespoon cornstarch
1 teaspoon paprika
¼ teaspoon salt
¼ teaspoon fresh ground pepper
6 ounces whole grain penne pasta, (cooked (don't add salt or oil while cooking))
Scallions or chives, (chopped for topping (optional))

Steps:

  • Cook pasta. In the meantime, place onions and mushrooms in a microwave safe bowl and cook in microwave for 3-4 minutes or until soft. Drain liquid.
  • In large pan, add the cooked onions and mushrooms, chicken, sour cream, wine, cornstarch, paprika, salt and pepper. Mix well. Bring to a boil. Turn heat down to simmer. Cook uncovered for 10 minutes. Stir often. In the meantime, cook pasta.
  • Spread out on plate cooked pasta among 5 plates. Spoon prepared stroganoff evenly on top of pasta. Top each with a little chopped scallions or chives, if desired.
  • The stroganoff freezes great.

1 small onion, chopped
4 ounces white or cremini mushrooms, sliced (about 2 cups)
1 1/4 pounds skinless, boneless chicken thighs, cut into chunks

1 teaspoon paprika, plus more for topping
Freshly ground pepper
1 cup fat-free low-sodium chicken or mushroom broth
1 tablespoon Worcestershire sauce
1/2 cup sour cream, plus more for topping
2 tablespoons chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the noodles and cook as the label directs, then drain. Meanwhile, melt 2 tablespoons butter in a large skillet over medium-high heat. Add the onion and cook until slightly soft, about 2 minutes. Add the mushrooms and cook, stirring, until they begin to brown, about 2 minutes. Add the remaining 1 tablespoon butter, the chicken, flour, paprika, 1 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring, until the chicken browns, about 3 minutes. Add the chicken broth and Worcestershire sauce and bring to a gentle simmer; cook until thickened, about 5 minutes. Stir in the sour cream and season with salt and pepper. Continue simmering gently until the chicken is cooked through, about 2 more minutes. Divide the noodles among plates. Top with the chicken mixture, parsley, some sour cream and paprika.

I wanted something like the traditional beef stroganoff and threw this one together, writing down everything as I went so I wouldn't forget. I served with noodles, but rice would be great, too. Asparagus for a vegetable and a green or fruit salad is great! Nutmeg seems to be the secret ingredient of many Stroganoff recipes.

2 cups all-purpose flour for coating
salt and pepper to taste
1 tablespoon butter
1 (10.75 ounce) can condensed cream of chicken soup
1 ¼ cups half-and-half cream

2 tablespoons chopped fresh parsley
2 cloves garlic, minced
2 cups fresh sliced mushrooms

Steps:

  • In a shallow dish or bowl, season flour with salt and pepper to taste. Dredge chicken in seasoned flour to coat. In a large skillet, brown coated chicken in melted butter or margarine until golden.
  • In a medium bowl combine the soup, half-and-half, dry onion soup mix, parsley, garlic, mushrooms, nutmeg and browning sauce. Mix all together and pour mixture over chicken in skillet. Reduce heat to low and let simmer, covered, for 1 hour.
  • Stir in sour cream and heat through, but DO NOT BOIL! Top with chopped green onion and serve over noodles or rice, if desired.

6 ounces cholesterol-free egg noodles (uncooked weight)
1 teaspoon vegetable oil
1 lb boneless skinless chicken breast, cut into 1/4-inch strips

1 garlic clove, minced
3/4 cup low-fat sour cream
1/4 cup flour

Steps:

  • Fry bacon; crumble and set aside. ( I layer the slices with paper towels and microwave a couple of minutes until crisp).
  • Cook noodles according to package directions. Drain and keep warm. (or to save time - multitask by cooking the noodles as you finish off the remaining steps.).
  • Heat oil in a skillet over medium-high heat. Add chicken; cook and stir till chicken is no longer pink, about 5 minutes. Remove from skillet.

I used 95%-lean ground beef and sauteed it with fresh mushrooms and onion with garlic and mustard powder. You'll want to be sure to drain off any fat and the liquid from the mushrooms. Came up with this one night when my boyfriend was tired of our usual meals...he asked for beef stroganoff, chicken was what was defrosted so I made it with that. Has become a favorite! I like to make it with shells cause they really hold the sauce.

1 lb chicken breast, cut into chunks
1 tablespoon olive oil
1 lb pasta, any variety
1 medium sweet onion, diced
2 garlic cloves, minced
3 cups low sodium chicken broth

2 tablespoons flour

Steps:

  • Put a large pot of water on high heat to boil. Add pasta and cook to box's directions once boiling.

4 boneless skinless chicken breasts
3 tablespoons olive oil
1 large onion, thinly sliced
8 ounces mushrooms, sliced
1 1/4 cups sour cream
1 dash salt
1 dash pepper
1 tablespoon fresh parsley, chopped, to garnish

Steps:

  • Place chicken breasts, one at a time, between two sheets of plastic wrap & flatten each to a thickness of 1/4 inch with a rolling pin.
  • Cut into 1-inch strips diagonally across the fillets.
  • In large frying pan, heat 2 tablespoons of oil, & cook sliced onion slowly until soft but not colored.
  • Add mushrooms & cook until golden brown, then remove & keep warm.

1 onion, cut into thin wedges
1 garlic clove, crushed
2 cups sliced mushrooms
1/3 cup chicken stock
2 cups cubed cooked chicken

1 cup light sour cream
1/4 teaspoon nutmeg
1/4 teaspoon black pepper (more is better in stroganoff I reckon)

Steps:

  • In a large frying pan, heat oil over medium heat until hot but not smoking.
