1 pound linguine noodles (, white or wheat)
4 Tablespoons unsalted butter
3 Tablespoons olive oil
5 cloves garlic (, minced)
1 pound large shrimp (, about 20 shrimp, peeled and deveined)
salt and freshly ground black pepper (, to taste)
1/2 cup fresh parsley leaves (, chopped)
zest from 1/2 of a large lemon
1/4 cup fresh lemon juice (, about 2 lemons)
1/2 lemon (, thinly sliced in half-rounds)
crushed red pepper flakes (, to taste)
1/2 cup freshly grated parmesan cheese

Steps:

  • Bring a large pot of water to boil. Add a little bit of oil and salt to the boiling water and cook the linguine according to package instructions.
  • Meanwhile, season the shrimp with salt and pepper and set aside.
  • Add the butter and olive oil to an extra-large skillet over medium-low. Once the butter has melted, add the garlic and sauté for 1 minute, being careful not to burn it.
  • Add the shrimp and sauté just until they turn pink, about 4-5 minutes, tossing often.
  • Remove from the heat and add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes.
  • Toss to combine. Season with additional salt and pepper, if needed.
  • When the pasta is cooked, drain the water and add the noodles to the sauté pan.
  • Top with fresh parmesan cheese and toss everything gently to combine. Serve.

1 pound dry pasta (I'm using spaghetti)
1/4 cup olive oil
1 stick (8 tablespoons) unsalted butter
12 cloves garlic, sliced
2 pounds shrimp, peeled and deveined
1 cup liquid (I'm using white wine)
2 lemons, juiced
2 tablespoons chile flakes, optional
2 tablespoons chopped fresh parsley, optional

Steps:

  • Bring a pot of water to a boil and add 2 tablespoons salt . Add the spaghetti, give it a stir and cook until al dente according to the package instructions.
  • Meanwhile, heat a large saute pan over medium heat. Add the oil, butter, garlic and a pinch of salt and sweat the garlic for 2 minutes. Add the shrimp, season with salt and pepper and cook, stirring, 1 minute. Add the wine, lemon juice and chile flakes if using and cook until the shrimp are just cooked through, 3 to 5 minutes.
  • Reserve some of the pasta water, then drain the spaghetti. Add the spaghetti and a little of the reserved pasta water to the pan with the shrimp and toss to combine. Toss in the parsley if using and serve.

12 large sea scallops, tough foot muscles removed

3 1/2 tablespoons unsalted butter

1/2 cup dry white wine
1/4 cup torn fresh basil
2 tablespoons chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the linguine and cook as the label directs.
  • Meanwhile, heat a large skillet over medium-high heat. Pat the shrimp and scallops dry, then season with salt and pepper. Add 1 1/2 tablespoons butter to the pan and cook the shrimp until golden on one side, about 3 minutes. Turn the shrimp and add half of the garlic; cook until the garlic is fragrant but the shrimp are still translucent, 1 to 2 more minutes. Transfer the shrimp to a plate.
  • Add the scallops to the skillet and cook until golden on one side, about 3 minutes. Turn the scallops, add the remaining garlic and cook 1 to 2 more minutes. Add the lemon juice and wine and bring to a boil, scraping up any browned bits with a wooden spoon. Cook until the sauce is reduced by half, about 3 minutes. Return the shrimp to the pan, then add the basil and the remaining 2 tablespoons butter; season with salt and pepper.
  • Drain the pasta and transfer to a large serving bowl. Toss with the shrimp, scallops and sauce; garnish with parsley and lemon.

Add shrimp, season to taste with salt and pepper, and cook, stirring occasionally, until shrimp is just pink but completely cooked through, 2-3 minutes. Transfer shrimp to a plate and set aside.
  • Return skillet to medium-high heat. Add wine and cook, stirring ans scraping bottom of skillet to release any browned bits, until sauce has thickened, 8-10 minutes.
  • Return shrimp to skillet along with cooked linguine and 1/2 cup reserved pasta water; toss well. Add remaining butter, parsley, lemon zest and juice, and reserved pasta water. Cook until sauce has thickened slightly, 1-2 minutes more. Serve immediately.
