One-Skillet Sesame Chicken Thighs image

This is a very good recipe for sesame chicken thighs. Serve with rice and a green vegetable.

¾ cup chicken broth
⅓ cup soy sauce
¼ cup balsamic vinegar
2 tablespoons honey
2 tablespoons white sugar
2 cloves garlic, minced
1 (1 inch) piece fresh ginger root, minced
1 teaspoon sesame oil
1 teaspoon red pepper flakes
6 (5 ounce) skinless, boneless chicken thighs, cut in half
2 medium green onions, chopped
1 tablespoon toasted sesame seeds

Steps:

  • Mix chicken broth, soy sauce, vinegar, honey, sugar, garlic, ginger, sesame oil, and red pepper flakes together in a large skillet over medium heat. When mixture starts to sizzle, add chicken and bring to a boil.
  • Turn down the heat and let simmer until chicken is no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer chicken to a serving platter, leaving remaining sauce in the skillet.
  • Turn heat to high and cook until sauce becomes a thick glaze. Remove from heat and pour over chicken. Sprinkle with green onions and sesame seeds.

This is my all-time favorite low-fat, low-cal recipe. I got it from a great cookbook, More Healthy Homestyle Cooking, and I have to say that this recipe is worth the price of the book! For more crunch and color, you can cook some red pepper and trimmed snow peas for 4 minutes in the skillet before adding the chicken. I like it just the way it is, though, served over rice. Enjoy!

1/4 cup unbleached flour or 1/4 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon ground black pepper
4 boneless skinless chicken breast halves, cut into 2 inch 4 inch strips
1/4 cup reduced sodium soy sauce
1/4 cup sugar
1/2 teaspoon dark sesame oil
2 tablespoons sesame seeds, toasted
1/4 cup chopped fresh chives (optional)

Steps:

  • In a gallon-size plastic bag, combine flour, salt and pepper.
  • Add chicken, seal bag, and shake well to coat.
  • Coat a large nonstick skillet with nonstick spray and warm over medium-high heat.
  • Add chicken to skillet and cook, stirring, for 3 to 4 minutes, or until no longer pink.
  • Transfer to a plate.
  • Reduce heat to medium.
  • Combine soy sauce and sugar in the skillet.
  • Cook, stirring occasionally, until the sugar dissolves.
  • Add oil and sesame seeds.
  • Add chicken and chives.
  • Toss and serve immediatedly.

1/3 cup flour
1/2 teaspoon salt
1 dash black pepper
1 lb boneless skinless chicken breast, cut into 1/4-inch slices
2 tablespoons sesame oil
1 tablespoon minced garlic
8 ounces fresh mushrooms, sliced or 1 (4 ounce) can sliced mushrooms, drained
1 -1 1/2 cup chicken broth
3/4 cup refrigerated sesame ginger salad dressing (see NOTE)
1 -2 tablespoon toasted sesame seeds

Steps:

  • Combine flour, salt, and pepper; toss chicken with flour mixture to coat evenly.
  • Heat a non-stick skillet then coat it with sesame oil; add garlic and chicken; fry until browned, stirring only infrequently; to keep chicken from sticking to skillet add a little broth as needed; place mushrooms on top of chicken and add 1/4 cup chicken broth; reduce heat to low, cover and simmer 10-12 minutes, adding chicken broth and stirring every few minutes as needed to keep chicken from drying and sticking to pan.
  • At end of the 10-12 minutes braising time, stir in 1-3 tablespoons additional broth until sauce is preferred consistency; stir in Sesame Ginger dressing; serve over cooked rice; sprinkle each serving with toasted sesame seeds.
  • NOTE: Sesame Ginger dressing may be found in the refrigerated salad dressing section of your grocery store ~ I found Litehouse brand Sesame Ginger Dressing & Sauce next to my store's fresh produce.

3/4 lb boneless skinless chicken breast, cut into 1 ",x 2 ",pieces
3 tablespoons flour, seasoned with salt &,pepper
2 tablespoons roasted sesame seeds
2 tablespoons soy sauce
2 tablespoons dry sherry
1/2 teaspoon peanut oil
2 tablespoons pure maple syrup
2 teaspoons fresh ginger, grated
pepper
1 teaspoon Chinese five spice powder (optional)

Steps:

  • Mix, soy, maple syrup, Sherry, ginger& Chinese 5 spice.
  • Reserve apprx half of the marinade.
  • Add chicken to remaining marinade and marinate in the fridgre for apprz 1/2 hour Drain Chicken and discard the marinade.
  • Dredge chicken the the flour.
  • Heat oil in a skillet, add chicken and brown, apprx 1 minute per side.
  • Spoon reserved marinade over the chicken, reduce heat and cook another 2 minutes or until the chicken is cooked Remove from heat and roll the chicken in the sesame seeds.
  • Serve.

This recipe really satisfies my craving for Chinese food. I serve it over rice with a side of steamed vegetables. The sauce makes just enough to glaze the chicken. I usually double or even triple the sauce recipe to have enough to pour over our rice and veggies. It is a nice low-fat alternative to the restaurant-style Sesame Chicken.

6 boneless skinless chicken breast halves, pat dry with paper towels
1/2 cup honey
1/2 cup low sodium soy sauce
1 cup water
2 tablespoons cornstarch
1/2-1 teaspoon ground ginger (fresh is better)
1/2-1 teaspoon red pepper flakes (optional)
1 tablespoon toasted sesame seeds

Steps:

  • Cut chicken breast into 1 inch strips or bite size pieces.
  • Heat a large non-stick skillet that has been sprayed with Pam, over medium-high heat.
  • Cook chicken for about 6 minutes or until no longer pink.
  • Mix together honey, soy sauce, water, corn starch, ginger and red pepper flakes.
  • Whisk until no corn starch lumps appear.
  • Pour sauce mixture into skillet with chicken.
  • Cook until sauce thickens slightly.
  • You can add more water if sauce is too thick.
  • Sprinkle with sesame seeds.
  • Cover and simmer for 10 minutes or until chicken starts to soak up the sauce.
  • Note: Since originally posting this recipe, I have tried some of the suggestions others have made. I do like it with a bit of sesame oil (be careful not to get too much, just a few drops at the end of cooking is good enough for me, but you might like more), fresh ginger is also good if you have it on hand. I have tried it with garlic and it is good that way also. I have also found that it is good with shrimp and pork. Basically what I am trying to say is, the original recipe is just a simple, quick and healthy meal I came up with when I was craving Chinese food. I thought it turned out really great and wanted to share it. I'm happy that so many of you have enjoyed it. For those of you that didn't care for it, I hope you can find one that suits your fancy some where else.
