1 lb sweet Italian sausage
3 cups sliced fresh mushrooms
1 large onion, chopped
2 cups converted white rice
4 cups chicken broth
4 tablespoons grated parmesan cheese
1/2 teaspoon ground black pepper

Steps:

  • Slice open and remove the casings from sausage.
  • Spray a large nonstick saucepan with nonstick spray, heat over medium-high heat.
  • Add the sausage, mushrooms, and onion, breaking up the sausage with a fork.
  • Cook until sausage is browned and the mushrooms and onion are tender, about 8 minutes.
  • Add the rice and broth, stirring well, bring to a boil.
  • Cover, reduce the heat, and simmer until broth has evaporated and rice is tender (about 20 minutes).
  • Stir in Parmesan cheese and pepper.

Garnish: chopped fresh parsley

Steps:

  • Cut sausage into 1/2-inch slices. Sauté in a large nonstick skillet over medium-high heat 8 to 10 minutes or until lightly browned. Remove sausage slices, and drain on paper towels, reserving 1 Tbsp. drippings in skillet.
  • Add bell pepper, onion, and garlic to skillet, and sauté over medium-high heat 4 minutes or until tender. Add chicken broth, stirring to loosen particles from bottom of skillet, and bring to a boil. Remove rice from cooking bag; add rice, sausage, salt, and pepper to skillet. Reduce heat to medium-low, cover, and cook 5 minutes or until rice is tender. Garnish, if desired.

I was inspired by another recipe on this site that called for peas & mushrooms. Hubby is phobic to both of those ingredients so I came up with this recipe as a way around it. It draws more on my cooking background with the addition of onions, bell peppers, and celery. **NOTE** You can substitue Turkey sausage to lower the fat and also substitute low sodium soup to bring down the sodium in the recipe.

1 cup onion, finely chopped
1/2 cup celery, finely chopped
1/2 cup green bell pepper, finely chopped
2 tablespoons olive oil or 2 tablespoons canola oil
1 lb fresh sausage (I use bratwurst)
3/4 cup uncooked long grain rice
1 cup water
1/2 cup chicken stock or 1/2 cup chicken broth
1 (10 3/4 ounce) can condensed cream of celery soup
4 ounces extra-sharp cheddar cheese, shredded

Steps:

  • Heat oil in a skillet and add the celery. Cook for 2-3 minutes then add the bell pepper. Cook for an additional 2-3 minutes then add the onion. Cook this until onion is starting to turn translucent or become soft.
  • Remove casings from sausages and add the ground pork/sausage to the skillet with the onion mixture and cook until no longer pink.
  • Add the rice, mixing thoroughly into the sausage mixture and then add in the soup, chicken stock, & water.
  • Bring to boil, then reduce heat to low and allow rice to cook. This should take around 15-20 minutes.
  • Sprinkle with 3/4 of cheese and mix all together. Sprinkle remaining 1/4 of cheese on top let stand for 5 minutes.
  • NOTE: I've only made this with Cream of Celery soup. From what I understand Cream of Mushroom will not work per original recipe's author. The Cream of Celery soup is essential to the flavor.

1 (16 ounce) package bulk pork sausage
1 medium onion, coarsely chopped
2 stalks celery, trimmed and sliced
1 (6.9 ounce) package chicken-flavored rice and vermicelli mix
1 tablespoon butter, or to taste
2 ½ cups water

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Add onion and celery; cook until vegetables have softened, about 5 minutes. Remove from the pan; set aside and keep warm.
  • Brown rice and vermicelli mix in the sausage drippings, adding butter if needed. Slowly add water and seasoning package; bring to a boil. Cover and reduce heat to low. Simmer until rice is tender, 15 to 20 minutes. Just before rice is finished, add sausage-vegetable mixture. Stir well and let sit for 5 minutes before serving.

She always served it as an entree but I make it as a side dish because it's not enough for my meat and potatoes man. You can spice it up by using hot sausage. Try it, you will not be disappointed.

1/3 cup green pepper, chopped
1/3 cup onion, chopped

2 tablespoons butter or 2 tablespoons margarine
1 cup onion, chopped
1 (4 ounce) can mushrooms
2 (3 1/2 ounce) bags boil-in-the-bag rice
1 (14 1/2 ounce) can chicken broth
1 (14 1/2 ounce) can stewed tomatoes
2 tablespoons cajun seasoning
1 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
1 dash of texas pete hot sauce (optional)

Steps:

  • Melt butter or margarine in large skillet.
  • Cut raw sausage into 1/2" pieces.
  • Add sausage to skillet and fry on medium-high heat for 10 minutes, turning occasionally.

This is a lost and found recipe. I originally found it in 1988, on the back of a package of smoked sausage. I made it quite often for my husband and me, with leftovers for the next days lunch. Then we moved, again, and the recipe got lost. I looked everywhere. I had tried to make it a few times, but couldn't remember everything that went in it, and it was wrong. Just wrong. In 1999, my husband's mother gave me a promotional copy of Quick Cooking magazine that she had received in the mail. I was so excited to find what appeared to be the exact recipe that I had lost, submitted by one of their contributors! After preparing it for my family, I knew I was right -- I had found our long-lost favorite! The original recipe merely specified cheddar cheese, but I find we like it better, and can use less, if I use extra sharp cheddar.

1 1/2 cups water
1 tablespoon butter (I omit this)

  • Reduce heat; cover and simmer about 18 minutes or until rice is almost tender.
  • Stir in peas and mushrooms.
  • Cover and simmer 15 minutes more, or until rice is tender and peas are heated through.
  • Sprinkle with cheese and cover.
  • Let stand about 5 minutes, until cheese melts.
  • NOTE: I've tried this with Cream of Mushroom soup and nobody liked it-- the Cream of Celery is essential to the flavor.

  • Place a large skillet over medium heat and add the olive oil. When the oil is hot toss in the sausage and cook for 2 to 3 minutes until the sausage begins to brown.
  • Add the onion snd bell pepper. Saute for 5 to 8 minutes until soft. Add the garlic, tomato paste, paprika, spice blend, salt, pepper and red pepper. Stir for about 1 minute until the garlic and spices are fragrant.
  • Add the rice, chicken broth, diced tomatoes (along with the juices) and tomato sauce. Use a wooden spoon or spatula to scrape the bottom of the skillet and loosen anything that may be stuck to the bottom. Stir well to coat all the rice grains.
  • Bring to a simmer then turn the heat down to medium-low and cover with a lid. Cook on medium-low heat for 25 minutes.
