3 cups water
12 ounces uncooked whole wheat rotini pasta
1 cup shredded part-skim mozzarella cheese (about 4 oz.)

Steps:

  • 1. Brown ground beef in 12-inch skillet; drain.
  • 2. Stir in Pasta Sauce and water. Bring to a boil over high heat. Stir in uncooked rotini and return to a boil. Reduce heat to medium and cook covered, stirring occasionally, 14 minutes or until rotini is tender. Remove from heat, then sprinkle with cheese. Cover and let stand 5 minutes or until cheese is melted.

Steps:

  • Cook onion & garlic until soft. Add ground beef, brown & drain.
  • Stir in water, tomatoes (including juice in can), & seasoning. Cook until mixture comes to a boil.
  • Add pasta and return mixture to a boil. Reduce heat to low & cover. Cook stirring occasionally for 15 minutes.
  • Remove from heat & stir in evaporated milk & 1/4 cup cheese. Sprinkle remaining cheese on top.

1 cup chopped red, yellow, orange, or green bell pepper
1 cup chopped peeled carrots
1 cup chopped onion

1 teaspoon dried basil
2 teaspoons dried oregano
2 (28-ounce) cans crushed tomatoes in juice
2 cups water
1 tablespoon Worcestershire sauce
2 teaspoons chili powder (optional but recommended)
Kosher or coarse salt and freshly ground pepper (to taste)
¾ pound dried elbow macaroni
2 cups grated cheddar cheese ((8 ounces))

Steps:

  • Heat a very large skillet (for this full recipe, it should be a deep 12-inch pan) over medium high heat and brown the beef, stirring until no pink remains, about 5 minutes. Drain the beef and set aside.
  • Wipe out the skillet, add the oil, and heat it over medium heat. Add the peppers, carrots, onion and garlic and sauté until almost tender, about 5 minutes.
  • Add the ground beef back to the skillet, as well as the basil, oregano, tomatoes with their juice, water, Worcestershire sauce, and chili powder if using. Season with salt and pepper, turn the heat to high, and bring to a simmer. Add the pasta, stir and cover. Lower the heat to medium and simmer covered, stirring occasionally, until the pasta is tender, and most of the liquid is absorbed, 8 to 10 minutes. Taste and season again if needed.
  • Sprinkle the cheese over the casserole then cover for just 1 more minute until the cheese is melty, and serve. Serve this right out of the pan.

1 pound ground beef
1 cup finely chopped onion
1/2 teaspoon ground cumin
1/4 teaspoon chili powder

1 1/2 cups cooked frozen or fresh corn (2 to 3 ears)

Steps:

  • Bring a medium pot of water to a boil. Add macaroni, and cook until tender according to package instructions. Drain in a colander, and set aside.
  • Meanwhile, heat a large saute pan over medium-high heat. Add ground beef and onion; cook, stirring frequently with a wooden spoon, until meat is no longer pink and onion is soft and translucent, 4 to 5 minutes. Add cumin, chili powder, salt, and pepper; stir to combine.

  • Heat a large saute pan over medium heat. Crumble ground beef into pan and add onion. Cook until beef is browned. Drain excess grease from pan if needed.
  • Add paprika, chili powder, garlic powder, oregano, pepper, beef broth, milk, crushed tomatoes, and macaroni. Stir to combine. Bring to a boil, cover, and reduce heat to low. Simmer for 8 minutes, or until macaroni is al dente (refer to macaroni package directions). Stir once halfway through to scrape the bottom and catch any macaroni that may be sticking.
  • Remove lid. Add shredded cheese and stir until melted. Remove from heat and allow to set for 5 minutes to allow sauce to thicken. Serve and enjoy.

  • Add chili powder, cumin, and paprika and sauté for another minute. Add the beefless ground round to the pan and continue to stir frequently until it starts to brown and cook through. If the pan starts to get dry and the beefless ground is sticking at all, take a ladle full of the pasta water and add it into the pan.
  • Once the pasta is cooked to al dente, drain it and add it into the skillet and toss with the nacho cheese sauce as well as ground black pepper. You may want to reserve a small amount of cheese sauce for reheating leftovers or to serve extra at the table.
