2 cups uncooked elbow macaroni (about 8 ounces)
2 tablespoons butter
2 tablespoons all-purpose flour
1-1/2 cups half-and-half cream
3/4 pound process cheese (Velveeta), cubed
Optional toppings: fresh arugula, halved cherry tomatoes and coarsely ground pepper

Steps:

  • Cook macaroni according to package directions; drain., Meanwhile, in a large cast-iron or other heavy skillet, melt butter over medium heat. Stir in flour until smooth; gradually whisk in cream. Bring to a boil, stirring constantly. Cook and stir until thickened, about 2 minutes. Reduce heat; stir in cheese until melted., Add macaroni; cook and stir until heated through. Top as desired.

4 ounces (about 3 to 4 slices) smoky bacon, cut into small dice
Salt, for pasta water
1/2 pound pasta, such as fusilli
2 tablespoons butter
2 ounces American cheese, shredded (about 3/4 cup)
2 ounces aged cheddar, shredded (about 3/4 cup)
2 to 3 tablespoons milk
1/2 teaspoon ground black pepper
1 to 2 tablespoons chopped fresh parsley, optional

Steps:

  • Heat a small skillet over medium heat; add the bacon and cook, stirring, until lightly crisp, 7 to 8 minutes. Drain and set aside; reserve the bacon fat for another use.
  • Bring a 2-quart pot of water to a boil. Salt the water generously; it should taste like light seawater. Add the pasta and cook, stirring occasionally, until just tender to the bite, or al dente. Before draining, use a heavy liquid measuring cup to pull out 3/4 cup of the pasta water; set aside. Drain the pasta and return the pot to the heat.
  • Heat the butter in the pasta pot, then add the cooked pasta. Stir in 1/2 cup of the reserved pasta water. Add the American cheese and stir until smooth. Add the cheddar, milk, pepper and the cooked bacon and mix well. Dribble in extra pasta water as needed to make a soft, creamy sauce. Garnish with parsley if using. Serve immediately.

Bechamel sauce, recipe follows
1 pound dry pasta (recommended: elbow macaroni, shells, penne, etc.)
1 teaspoon dry mustard, or to taste
1/4 teaspoon ground cayenne pepper
2 cups grated sharp Cheddar cheese
1 cup grated Gruyere cheese
1 cup, plus 1/2 cup grated Parmesan cheese
1 cup milk
1/4 cup heavy cream
1 1/2 cups panko (Japanese) bread crumbs
2 tablespoons chopped fresh flat-leaf parsley
6 slices bacon, cooked, reserve 1/4 cup rendered bacon fat
1/4 cup unsalted butter
1/4 cup flour
3 cups hot whole milk
1/4 teaspoon nutmeg
Salt and freshly ground pepper, to taste

Steps:

  • Make the bechamel sauce, recipe follows, in a large 12-inch oven-safe skillet.
  • Bring a pot of salted water to a boil and cook the pasta until nearing al dente, but not fully cooked; drain. Preheat the oven to 400 degrees F.
  • Over low heat, stir the dry mustard and cayenne pepper into the bechamel sauce. Gradually add the Cheddar, Gruyere, and 1 cup Parmesan cheese, stirring constantly until all of the cheese has melted into the bechamel sauce. Add an additional cup of milk and cream. Taste and adjust the seasonings, if needed.
  • In another large skillet, cook the bacon until crispy and golden brown. Remove the cooked bacon from the skillet, reserving 3 tablespoons rendered bacon fat.
  • Add the cooked pasta to the bechamel and stir to coat evenly with the sauce. In a small bowl, combine the bread crumbs, chopped parsley, and reserved bacon fat. Coat the bread crumbs and chopped parsley with bacon fat and sprinkle the mixture over the top of the macaroni. Sprinkle the top with 1/2 cup Parmesan cheese.
  • Bake until the top is browned and the sauce is bubbling, 20 to 25 minutes. Top with crumbled cooked bacon. Let sit 5 minutes before serving.
  • To make the Bechamel:
  • Melt the butter in a heavy-bottomed saucepan or an oven-safe skillet.
  • Whisk in the flour and cook, stirring constantly, until the paste cooks and bubbles a bit, avoid browning, about 2 minutes. Add the hot milk, continuing to stir as the sauce thickens. Bring the sauce to a boil. Add the nutmeg, salt, and pepper, to taste. Reduce the heat, and cook, stirring for 2 to 3 minutes more. Remove from the heat.

1 can (14.5 oz.) Italian-style diced tomatoes, undrained
1-1/2 cups water
1 pkg. (7-1/4 oz.) KRAFT Macaroni & Cheese Dinner
1 cup KRAFT Shredded Cheddar Cheese

Steps:

  • Brown meat in large skillet; drain.
  • Stir in tomatoes and water; cover. Bring to boil. Stir in Macaroni and the Cheese Sauce Mix; simmer, covered, on medium-low heat 10 min. Stir.
  • Top with shredded cheese. Remove from heat. Let stand, covered, 5 min. or until cheese is melted.

Easy Italian Mac & Cheese Skillet image

This is a one pan mess! I love this because it is so easy to make. I must give credit to the Kraft Foods website because this is where I got the idea from. HOWEVER I did modify the recipe a bit, because first off I didn't write down what I needed and thought I could remember so when I got home I had to improvise. I served this to my somewhat picky husband, and parents and they all got up for seconds! So I'm very impressed! Some pointers to keep in mind. Because this website is picky on wordage it's suspposed to say 2 boxes of Kraft Macaroni and Cheese Shells Three Cheese Flavor and not 1 lbs but rather 3 large pieces of boneless skinless chicken breast. I made this in a rather large deep skillet. And will have leftovers for tomorrow. If you're making this for only two people only use one box of mac and cheese, less chicken, less peppers/onions, and less milk/water. Also, what I like to do is have everything chopped up BEFORE putting anything in the pan to start cooking. I didn't really time how long it took me to cook this so I just guessed.

4 tablespoons olive oil
1 lb boneless skinless chicken breast
2 (14 ounce) packages macaroni shells and cheese
1 green bell pepper
1 red bell pepper
1 medium onion
2 cups milk
2 cups water
1 dash of mccormick italian seasoning (optional)
1 dash pepper (optional)

Steps:

  • Chop Chicken into bite size pieces.
  • Chop Onions, and peppers seperately into small pieces.
  • Coat skillet with olive oil to lightly fry the chopped chicken. (You be the judge of how much oil you wish to use to lightly fry the chicken.).
  • While chicken is sizzling, add a dash of Italian seasoning and a dash of.
  • pepper. Stir it up to spread your spices evenly on the cooking chicken.
  • Once chicken has turned white all the way around on the outside add the.
  • onions and peppers. Keep cooking on a medium heat until the veggies are soft.
