1 pound bacon, chopped
1 onion, chopped
2 medium green bell peppers, chopped
2 (16 ounce) packages frozen corn
salt and pepper to taste

Steps:

  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown, but still soft. Stir in onion and green bell peppers, and cook until tender, about 10 minutes.
  • Reduce heat to low. Stir corn into skillet, and cook until tender, about 15 minutes. Salt and pepper to taste. Do not drain grease from bacon - that is the secret to the flavor.

4 tablespoons butter
One 16-ounce bag frozen corn, defrosted
3 tablespoons white sugar or honey
1/3 cup heavy cream
Salt
1/2 teaspoon black pepper

Steps:

  • In a large skillet over medium-high heat, melt 4 tablespoons butter. When butter is foamy add the corn stirring to coat with the butter. Cook stirring frequently for 1 minute. Add sugar or honey and cook for 2 minutes more. Increase heat to high and add heavy cream-continue to stir so corn won't stick to pan. Add salt and pepper. Cook corn until most all of the cream has absorbed about 5 minutes more. Remove add serve hot.

2 tablespoons olive oil
1 tablespoon minced garlic
4 cups corn kernels, from about 5 ears corn
2 cups Damn Hot Peppers alla padella, recipe follows
2 tablespoons unsalted butter
1/4 cup thinly sliced fresh chives
Sea salt, preferably gray salt, and freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 pound green bell peppers, halved, seeded and cut into pieces that are 1-inch
2 jalapenos, cut into 1/8-inch slices
2 teaspoons gray salt, and more if needed
1 cup fresh tomato puree (peel, seed and puree one pound ripe tomatoes in a food processor)

Steps:

  • Heat a large skillet over high heat. Add the olive oil, then the garlic. Saute until the garlic is lightly browned. Add the chiles and saute briefly to release their character. Add the corn and cook briskly, stirring often, until partially cooked, about 3 minutes. Add the damn hot peppers then simmer, stirring, until the corn is just tender, about 2 minutes.
  • Remove from the heat, whisk in the butter, and stir in the chives. Season with salt and pepper. Transfer to a serving bowl and serve immediately.
  • In a non-reactive saucepan, heat the oil. When the oil is hot add the bell peppers, jalapenos, and gray salt. Cook over medium-high heat for about 15 minutes or until the peppers are partially tender. Stir from the bottom from time to time, adjusting the heat as necessary so that they don't brown. There will still be some liquid left in the pot.
  • Add the tomatoes, lower the heat to simmer and continue to cook for about 30 minutes to reduce the tomato juice and finish cooking the peppers. Add additional salt if needed. Serve warm or room temperature.

This is a family favorite, we make ours a little more spicy than the recipe calls for. Created this when I was just wanted a little something more out of the can of corn. Turns out that everyone loved it and it can be taken in a crock pot to pot lucks.

3 tablespoons sour cream
1/4 white onion
1/4 cup real butter
salt and pepper
1 pinch Mexican chili powder (optional)

  • Just melt the butter in a skillet and add the onions, after about 5 minutes dump in both cans of corn, salt and pepper and chili powder. Let that "fry" for about 10 minutes and then add your sour cream, stir well and continue on medium heat for about 20 minutes, give a good stir and serve.

1 1/3 cups heavy cream
Kosher salt and freshly ground black pepper

Steps:

  • Cut the corn from the cobs into a bowl, then use the blunt side of the knife to press and scrape the cob all the way down to get all the bits of kernel and creamy milk inside.
  • Add butter to a very large skillet over medium-high heat and melt. Add the corn and toss. Add the cream and some salt and pepper to taste, then simmer for 20 minutes. Garnish with more fresh pepper.

  • In a medium saute pan, saute peppers in 1/4 cup butter. Add corn, sugar, milk, salt, and pepper and bring to a boil. Meanwhile, in a small saucepan, make a roux with the remaining 1/4 cup butter and the flour by cooking it over low heat for a couple minutes until a pale yellow color. Add roux to corn mixture. Cook until thickened and then serve.

3 slices bacon
2/3 cup water
2 tablespoons sugar
1/4 cup milk
2 teaspoons cornstarch
1 tablespoon butter
salt

Steps:

  • Scrape kernels of corn off the cob using a sharp knife. Be sure to get as much liquid from the cob as possible. Set aside.
  • In a heavy skillet cook the bacon until crisp; remove from skillet and crumble. Set aside.
  • Stir corn into hot bacon drippings. Add water and sugar.
  • Cook, stirring constantly, until mixture begins to thicken.
  • Gradually stir milk into cornstarch until smooth. Add to corn.
  • Cook over low heat until thickened.
  • Stir in butter and salt.
  • Top with crumbled bacon before serving.

4 ears sweet corn, shucked and kernels cut off
¼ cup chopped cilantro
3 tablespoons cotija cheese

Steps:

  • Whisk mayonnaise, lime juice, and chili powder together in a bowl until evenly combined. Set aside.
  • Heat a large cast iron skillet over medium-high heat. Add corn and cook for 5 minutes without stirring. Toss around with a spatula and cook until corn has started to brown, about 3 minutes more. Remove from heat.
  • Add reserved mayonnaise mixture and stir until evenly combined. Add cilantro and stir again. Transfer to serving plates and sprinkle cotija cheese over the top.

1 cup self-rising cornmeal mix
2/3 cup water
1 cup vegetable oil (for frying)

Steps:

  • Mix first two ingredients to make a batter --- add more or less water depending on how thick or thin you want your cornbread patties. The best way would be to mix in small amounts of water at a time to get the consistency you want.
  • In a skillet or frying pan bring oil up to medium heat and test 1/2 teaspoon drop of batter, You do not want it to fry too fast. I normally cook mine on #6 and then furn down to #5 on my stove. Drop by tablespoons full and pat out with back of spoon to make a pattie. Turn over when bottom is light brown.
  • Serve and enjoy this tasty bread!

2/3 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1/4 cup butter or 1/4 cup margarine, melted
1 egg, beaten
1 cup sharp cheddar cheese, shredded or 1/2 lb bulk sausage, browned and drained can be used in place of the cheese

Steps:

  • Combine cornmeal, flour, baking powder and salt.
  • In separate bowl, mix milk, butter, and egg.
  • Add milk mixture to the dry ingredients, mixing just until combined.
  • Stir in the cheese.
  • Pour approximately 1/4 cup batter onto a lightly greased griddle or skillet; flatten batter slightly.
  • Cook until lightly browned on both sides.
  • If batter becomes too thick add a small amount of milk.
