2 cups parsley, fresh
2 cups cilantro, fresh
1 cup mint leaf, fresh
8 garlic cloves, chopped
1 3/4 teaspoons kosher salt, divided
1/2 teaspoon plus 3/4 teaspoon ground pepper, divided
2 cups olive oil
2/3 cup red wine vinegar
2 tablespoons lemon juice
1/2 teaspoon crushed red pepper flakes
4 lbs flat iron steaks (or top sirloin steaks, 1 inch thick)

Steps:

  • Place herbs, garlic, 1 teaspoon of salt and 1/2 teaspoon of pepper in food processor.
  • Pulse until herbs are chopped.
  • Gradually add oil, vinegar, lemon juice and pepper flakes, processing just until blended.
  • Sprinkle steaks with remaining salt and pepper.
  • Grill, covered, over medium heat for 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare - thermometer should read 145, medium 106, well-done 170).
  • Cut steaks into 1/4 inch slices
  • Serve with sauce.

1 1/4 lbs boneless beef top sirloin steaks, well trimmed, cut 1 inch thick
3 tablespoons soy sauce
2 teaspoons olive oil
1/2 teaspoon chili oil
2 tablespoons garlic powder or 2 tablespoons fresh garlic, crushed
3/4 teaspoon pepper
1/3 cilantro, finely chopped
1 tablespoon fresh lime juice
1 tablespoon soy sauce
1/2 teaspoon brown sugar, packed
1/4 teaspoon pepper
to taste lime slice
to taste fresh cilantro leaves

Steps:

  • In small bowl, combine 3 tablespoons soy sauce, olive oil and hot chili oil; whisk until blended.
  • In second small bowl, combine garlic powder and 3/4 teaspoon pepper.
  • Place beef steak in large shallow dish.
  • Pour 1/2 of soy sauce mixture over one side of steak; sprinkle with 1/2 of garlic powder mixture and 1/2 of chopped cilantro.
  • Rub mixture firmly into beef.
  • Turn steak over and repeat on second side. Cover and marinate in refrigerator 20 minutes.
  • Place steak on grid over medium, ash-covered coals.
  • Grill, uncovered, 17 to 21 minutes for medium rare to medium doneness, turning once. When steak is almost done, in small saucepan, combine sauce ingredients.
  • Place on grid near edge of grill to heat until hot. Carve steak crosswise into thin slices; arrange on heated platter.
  • Spoon sauce over beef; garnish with lime slices and cilantro sprigs.
  • Serve immediately.
  • Tip: To broil, place steak on rack in broiler pan so surface of meat is 3 to 4 inches from heat. Broil 16 to 21 minutes, turning once.

6 garlic cloves
1/2 red onion, chopped
2 limes, juiced
1 jalapeno pepper
2 tablespoons thyme leaves, fresh
1 cup cilantro leaf, loosely packed
3/4 cup corn oil
2 tablespoons honey
3 lbs flank steaks
kosher salt, to taste

Steps:

  • Puree the garlic, onion, lime juice, jalapeno, thyme, cilantro, corn oil, and honey into the bowl of a blender or food processor until the ingredients are well incorporated. Marinate the flank steak with 1/2 cup of the puree in a resealable bag overnight in the refrigerator. Reserve the rest of the puree to use later as a sauce.
  • Preheat a grill for medium-high heat.
  • While grill is warming, remove the meat from the refrigerator and let sit at room temperature for at least 30 minutes. Discard any marinade left in the bag. Liberally season the steak with the kosher salt, and cook to desired doneness, approximately 4 minutes per side for medium-rare.
  • To serve, slice the steak against the grain into 1/8 to 1/4 inch slices, and drizzle the remaining marinade over the meat.

2 roasted poblano chiles, thinly sliced
2 tablespoons olive oil
1 medium onion, halved and thinly sliced
1 red bell pepper, ribs and seeds removed, thinly sliced
kosher salt
3 garlic cloves, minced
2 plum tomatoes, chopped
1 tablespoon fresh lime juice
1 teaspoon ground dried ancho chile powder
1 1/2 lbs sirloin steaks

Steps:

  • To roast your own poblano peppers: place on an aluminum foil-lined sheet pan 4 inches below a broiler. Turn regularly until blistered and blackened all over, 5 to 10 minutes. Place in a bowl, cover with a kitchen towel, and let cool for 10 minutes. Rub the blackened skin off and remove stems and seeds. Rinse chiles to remove skin and seeds, if necessary.
  • Sauce: In a large skillet, heat 1 tablespoon oil over medium heat. Add onion and red peppers; season with salt. Cook, stirring often, until golden-brown, about 10 minutes. Add garlic; cook until fragrant, about 1 minute. Add tomato, poblano peppers, and 1/2 cup water. Reduce heat; simmer until thickened, about 10 minutes. Remove from heat; add lime juice and season to taste with salt.
  • Meat:Meanwhile, prepare steaks: Rub with remaining tablespoon oil and chile powder; season generously with salt. Heat a charcoal or gas grill to medium-high heat. Grill until medium-rare (130 degrees), 2 to 3 minutes per side. Let rest, covered, for 5 to 10 minutes. Cut steak into 4 serving portions; spoon pepper sauce over each.

Steps:

  • Heat the grill to medium-high and lightly grease the grates.
  • Rub the steaks all over with 1½ teaspoons of salt and 1 teaspoon of black pepper.
  • Make the cilantro sauce: Add the cilantro, parsley, scallions, garlic, and jalapeño to a food processor and pulse until the herbs are coarsely chopped. Add the remaining ½ teaspoon salt, remaining ¼ teaspoon pepper, the red pepper flakes, ¼ cup olive oil, the red wine vinegar, and lime juice and puree on high speed for 20-30 seconds, until the herbs are evenly chopped. Transfer the sauce to a medium bowl and stir in the remaining ¼ cup olive oil. Season with more salt to taste.
  • Place the steaks on the preheated grill and cook, uncovered, for 4½-5 minutes per side for medium, or until the steaks are cooked to your liking/depending on the thickness of the steaks. Let the steaks rest for 5-7 minutes, then slice against the grain.
  • Fan the steak slices on a serving platter and spoon the cilantro scallion sauce on top.

1 1/4 lbs boneless beef chuck steaks, 1 inch thick (about 4)
3 tablespoons fresh lime juice
3 tablespoons water
1 tablespoon fresh cilantro leaves, chopped
1 small jalapeno pepper, chopped (seeded if desired to reduce fire)
1 garlic clove, mince (or more to taste)
1/4 teaspoon ground cumin
salt and pepper, to taste

Steps:

  • Combine lime juice, cilantro, water, jalapeño pepper, garlic and cumin and pour into a large zip-top plastic bag.
  • Add steaks, seal and shake bag to coat meat.
  • Let marinate in refrigerator 1-2 hours,shaking bag every now and then.
  • Toss marinade when ready to grill steaks.
  • Grill steaks over medium heated (preheated) until cooked to your liking, turning once (about 15-20 minutes for rare to medium).
  • Once cooked, season to taste with salt and pepper.

1/2 teaspoon chili powder
1 1 1/4-pound top sirloin steak, about 1 inch thick
3 tablespoons olive oil
4 large garlic cloves, thinly sliced
3/4 pound plum tomatoes, seeded, diced
1 cup chopped fresh cilantro leaves

Steps:

  • Rub cumin and chili powder onto both sides of steak, then sprinkle with salt and pepper. Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add steak to skillet and sauté until cooked to desired doneness, about 4 minutes per side for medium-rare. Transfer steak to plate. Add remaining 1 tablespoon oil to skillet. 2 tablespoons mustard powder
1/4 cup fresh chopped oregano

2 tablespoons thin sliced fresh ginger
1 tablespoon lite olive oil
1 teaspoon lemon pepper
1 teaspoon grated fresh lemon rind

  • Sprinkle both sides of the steaks with mustard powder.
  • Mix remaining ingredients and stir well.
  • Put steaks in a shallow pyrex dish (or other non metallic dish).
