Going out to restaurants got to be expensive for our family, so I came up with this homemade beef gyro. Usually, I set out the fixings so everyone can assemble their own. My husband and our two busy teens request them often. -Sheri Scheerhorn, Hills, Minnesota

1 cup ranch salad dressing
1/2 cup chopped seeded peeled cucumber
1 pound beef top sirloin steak, cut into thin strips
2 tablespoons olive oil
5 whole pita breads, warmed
1 medium tomato, chopped
1 can (2-1/4 ounces) sliced ripe olives, drained
1/2 small onion, thinly sliced
1 cup crumbled feta cheese
2-1/2 cups shredded lettuce

Steps:

  • In a small bowl, combine salad dressing and cucumber; set aside. In a large skillet, cook beef in oil over medium heat until no longer pink. , Layer half of each pita with steak, tomato, olives, onion, cheese, lettuce and dressing mixture. Fold each pita over filling; secure with toothpicks.

Easy and tasty flank steak gyros with tzatziki cucumber sauce are bursting with hearty flavor. A simple marinade and quick-sear yields super juicy and flavorful beef for the best homemade gyros!

1 pound flank steak
⅓ cup olive oil
3 teaspoons minced garlic
2 teaspoons dried oregano (or 1 tablespoon finely chopped fresh oregano)
1 teaspoon salt
¼ teaspoon black pepper
juice of ½ lemon (plus additional wedges for squeezing)
4 white or wheat pitas
½ red onion (thinly sliced)
1 tomato (thinly sliced)
romaine lettuce
1 medium cucumber + ½ teaspoon salt (peeled and sliced )
2 cups cold plain Greek yogurt
4 teaspoons minced garlic
⅓ cup chopped dill (fresh or frozen, (may sub 2 tablespoons dried dill))
1 ½ tablespoons freshly squeezed lemon juice
½ teaspoon salt (or to taste)
⅛ teaspoon black pepper (or to taste)

Steps:

  • Place steak, olive oil, garlic, oregano, salt, pepper, and juice from 1/2 lemon in a large resealable bag. Press excess air out and seal bag. Refrigerate for 1-8 hours.
  • Spread cucumber slices out on a paper towel. Sprinkle generously with salt on both sides and allow to rest for 5 minutes. Wrap cucumber slices in paper towels, squeeze excess liquid out, and transfer to a food processor or blender.
  • Add remaining sauce ingredients to blender and pulse until smooth and creamy. Cover and chill until ready to use.
  • Preheat grill, grill pan, or cast iron skillet, to medium-high heat. Use tongs to transfer steak to grill and discard excess marinade. Cook steak for 6-8 minutes on each side until desired doneness (I recommend leaving just a hint of pink in the center for super juicy, tender meat with lots of flavor!)
  • Transfer steak to a cutting board and allow meat to rest for a few minutes before slicing very thinly across the grain.
  • Assemble gyros with lettuce, sliced onions and cucumbers, and steak. Drizzle with tzatziki sauce, top with black pepper and fresh squeezed lemon and serve immediately.

.75oz - 1lb new york strip steak
1 teaspoon Mediterranean Spice Blend
1 tablespoon avocado oil
½ cup plain greek yogurt
¼ cup grated cucumber
1 tablespoon lemon juice
½ teaspoon dry dill
½ teaspoon garlic powder
salt to taste
4 flatbreads
1/4 cup thinly sliced red onion
3/4 cup sliced cucumber
1/2 cup halved cherry tomatoes

Steps:

  • Heat grill to medium high heat, approximately 375-400 degrees F.
  • Season both sides of the steak with Mediterranean Spice Blend and avocado oil. Rub in to the steak.
  • Make sure grill grates are clean and rub down with olive oil soaked rag or spray with cooking spray.
  • Place seasoned steak on the grill. Grill each side for 4-6 minutes depending on the thickness of the steak and your desired doneness. Remove steak from grill and let sit for 10 minutes.
  • While the steak is resting to a bowl add yogurt, grated cucumber, lemon juice, dry dill, garlic powder and salt. Stir together and set aside.
  • Slice the steak and start to assemble gyros. Evenly distribute steak, sliced red onion, cucumber, cherry tomatoes and tzatziki sauce on each flatbread.
  • Serve.

½ cup olive oil
1 tablespoon dried oregano
1 tablespoon red wine vinegar
2 garlic cloves (grated)
1 ½ pounds flank or skirt steak (trimmed)
salt and pepper (to taste)
4 pocketless small pitas (warmed)
romaine lettuce (shredded)
½ red onion (thinly sliced)
1 tomato (thinly sliced)
Tzatziki

Steps:

  • In a large, shallow bowl, mix oil, oregano, vinegar, and garlic. Add steak and toss to fully coat. Cover with plastic wrap and marinate at least 30 minutes or up to 4 hours, flipping the steak halfway through. Remove from fridge at least 1 hour prior to cooking.
  • Preheat grill, grill pan, or large cast iron skillet, to medium-high heat. Season both sides of steak generously with salt and pepper. Let excess marinade drip off steak and transfer steak to pan. Cook until golden brown, 5-7 minutes per side for medium rare.
  • Transfer steak to a cutting board and allow meat to rest for 5 minutes. Slice steak into 1/2-inch pieces across the grain.
  • Assemble gyros by stuffing pita halves with lettuce, onions, tomatoes, and steak. Drizzle with tzatziki sauce and serve immediately.

My version of a greek gyro, a simple way to get the same sort of flavor as a traditional gyro.

Steps:

  • 1. Brown up some sliced red onions and add cut up pieces of sirloin steak and cook til cooked thru. Salt and pepper. Place the meat and onion mixture on a flat whole wheat pita bread. Top with golden raisins, lettuce, tomato, cucumber, minced green onions, sliced black olives and feta cheese. Layer/pile it all up. Make a dressing using a little Ranch powder dressing mix and mayonnaise and lite sour cream, thinned down with a little milk. To the dressing add cut up pieces of cucumber and pour that over the top of the gyro. Traditional gyros are folded up like a soft taco and eaten by hand, but this version of a gyro needs to be cut into and eaten with a knife and fork.

1/2 cup freshly squeezed lemon juice
1/2 cup olive oil
8 cloves garlic
Zest of 1 lemon
Leaves from 3 large sprigs oregano, plus more for serving

1 boneless leg of lamb (about 4 pounds)
Kosher salt
Flatbread or pita pockets, warmed on the grill, for serving
Grilled Plum Tomatoes, recipe follows
1 cup Vinaigrette, recipe follows
Radish Tzatziki, recipe follows
8 plum tomatoes, ends removed, sliced into very thick rounds
Canola oil, for grilling
Salt and freshly ground black pepper
6 tablespoons red wine vinegar
2 tablespoons freshly squeezed lemon juice
2 tablespoons Dijon mustard
1 tablespoon clover honey
Salt and freshly ground black pepper
1 cup extra-virgin Greek olive oil, plus more for drizzling
3/4 cup finely grated radish
1/4 small red onion, finely grated
3/4 cup Greek yogurt
3 cloves garlic, finely chopped
2 tablespoons chopped fresh dill
1 teaspoon lemon zest
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • For the lamb: Combine the wine, lemon juice, olive oil, garlic, lemon zest, oregano, rosemary and pepper in a blender and blend until smooth. Pour half the mixture over the lamb and turn to coat completely. Cover and marinate in the refrigerator for at least 8 hours and up to 24 hours. Refrigerate the remaining mixture to use for basting while the meat cooks.
  • One hour before grilling, remove the lamb from the refrigerator and the marinade and let sit at room temperature.
  • Preheat a gas or charcoal grill with a rotisserie attachment to high heat.
  • Sprinkle the entire lamb with salt and pepper and attach the lamb to the rotisserie according the manufacturer's directions. Roll up and tie with butcher's twine at 1-inch intervals. Grill until the lamb reaches an internal temperature on a meat thermometer of 170 degrees F, 1 hour 15 minutes to 1 hour 30 minutes for the gas grill, and 1 hour 45 minutes to 2 hours for the charcoal grill. The cooking time will depend on the type of grill and how hot your charcoal is. Baste the meat frequently with the reserved wine mixture. Remove from the rotisserie, put on a large cutting board and rest for 15 minutes.
  • Slice the lamb across the grain into paper thin slices. Place several slices of lamb in the center of each flatbread, top with a few Grilled Plum Tomatoes, drizzle with the Vinaigrette, scatter fresh oregano on top, and top with Radish Tzatziki.
  • Heat a grill to medium-high. Brush the tomatoes with oil and season with salt and pepper on both sides. Grill until slightly charred and soft. Flip and grill the other side until slightly charred and soft.
  • Whisk the vinegar, lemon juice, mustard, honey and salt and pepper. Slowly whisk in the olive oil until emulsified.
  • Place the radishes and onions in a medium strainer. Place a small plate on top and let sit over a bowl for 30 minutes to drain the liquid.
  • Transfer the drained radish mixture to a medium bowl and add the yogurt, garlic, dill, lemon zest, salt and pepper. Cover and refrigerate for at least 30 minutes and up to 1 day before serving.
