1 tablespoon vegetable oil
1 (20 ounce) package Simply Potatoes Red Potato Wedges
1 (16 ounce) package smoked kielbasa, diced
1 red bell pepper, sliced
1 yellow bell pepper, sliced

Steps:

  • Heat the oil in a saucepan over medium heat. Place kielbasa and potatoes in the saucepan. Cover, and cook 25 minutes, stirring occasionally, until potatoes are tender.
  • Mix red bell pepper and yellow bell pepper into the saucepan, and continue cooking 5 minutes, until peppers are just tender.

This Turkey Kielbasa Pasta Bake is an easy, lightened-up comfort food that the whole family will love! Turkey kielbasa and penne pasta tossed in a rich, flavorful cream sauce and topped with gooey mozzarella.

¼ cup salted butter
1 small onion
1 teaspoon minced garlic
1 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
¼ cup all purpose flour
2 cups whole milk ((you can use half and half for a richer flavor))
1 cup low sodium vegetable broth
3 cups dry penne pasta ((high fibre if desired) 275 grams)
2 cups turkey kielbasa ((halved and sliced) 280 grams)
1½ cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F if baking right away (optional: you can also cover and refrigerate or freeze for another day). Lightly grease a 9x13" baking dish.
  • Melt the butter in a medium skillet over medium-high heat.
  • Add the onion and cook until softened and translucent. Stir in garlic, Italian seasoning, salt, and pepper and cook 1 minute.
  • Stir in the flour until no white streaks remain. Cook for 1 minute.
  • Whisk in the milk and broth, and cook over medium heat until thickened, stirring constantly. This should take between 5-10 minutes.
  • Meanwhile, cook the penne pasta to al dente in a large pot of boiling, salted water (according to package directions). Drain.
  • Combine cooked pasta, thickened sauce, and sliced kielbasa in baking dish and stir well.
  • Top with shredded cheese and bake until bubbly, about 20-25 minutes. You can also place in the refrigerator to cool, then cover and refrigerate up to 4 days or freeze up to 3 months.

1 lb turkey kielbasa (linked sausage)
Simply Potatoes Diced Potatoes with Onion
0.5 (16 ounce) bag baby carrots (Sliced or Julienned)
1 (16 ounce) bag frozen green beans
1 (4 ounce) can mushrooms, Undrained

Steps:

  • Brown potatoes and carrots in electric skillet (300-325 degrees), use juice from mushrooms if you need to add liquid - this avoids using oil. While potatoes are cooking cut sausage into bite size pieces. Once potato mixture is cooked, add fz green beans, sausage and mushrooms. Make sure to stir so all ingredients are mixed thoroughly. Turn skillet down to low or steam. Put the lid on and vent, steam for 15 minutes or until beans are tender. Season to taste.

  • Cut potatoes into small to medium chunks; place them in skillet with oil. Season potatoes with salt and pepper as desired.
  • Add diced onion and cook on medium heat. Cut sausage into small chunks and place into skillet when potatoes are almost done.
  • When everything in the skillet is hot, open can of corn and stir in with potatoes and sausage. Let all ingredients get hot and serve.

1 (24 ounce) package Simply Potatoes Traditional Mashed Potatoes
1 egg, slightly beaten
3/4 lb polska kielbasa
1 (15 1/2 ounce) can diced tomatoes, drained
1 cup swiss cheese, shredded

Steps:

  • Preheat oven to 350 degrees. Spray a 9" deep dish pie plate with cooking spray. In a medium bowl mix slightly beaten egg into the mashed potatoes; press into the bottom and up the sides of the pie plate as if making a pie crust. Bake in preheated oven for 30 minutes or until slightly browned. Set aside.
  • Meanwhile slice kielbasa into 1/2" slices then cut into quarters; spray large skillet with cooking spray; add kielbasa and drained tomatos and saute until the kielbasa is cooked through and slightly browned. Spoon into the baked mashed potatoe crust and sprinkle with shredded swiss cheese.
  • Bake 30 minutes until cheese is bubbly and browned; let set for 10 minutes before slicing like a pie.

Please try to use fire-roasted tomatoes, I think it really makes it taste good! They carry the Muir Glen brand of fire-roasted tomatoes at Whole Foods and Wal-Mart Supercenter. I really hope you like it!

2 (14 1/2 ounce) cans fire-roasted tomatoes, undrained (I like Muir Glen brand)

1 tablespoon butter
2 teaspoons sugar
1/2 teaspoon pepper
1/2 teaspoon coriander
1/4 teaspoon Lawry's Seasoned Salt

  • Defrost okra.
  • In a large skillet, cook kielbasa and garlic in the butter on medium heat for about 1 to 2 minutes.

  • Wash potatoes, peel and slice into thin slices. Put butter in a medium pan that has a cover, put on medium heat. Take kielbasa out of packages and slice them to about 1/4-inch thick. Take and chop onion in small squares.
  • Put onions in the melted butter and saute. Then add the potatoes and kielbasa and add salt and pepper.
  • Cook on medium heat for about 20-25 minutes or until potatoes are soft enough to be easily cut into with a fork. ENJOY!
