Steps:
- Stir the ingredients together. Press into an ungreased pie or springform pan. Optional: For a crispier crust, bake at 350ºF for 5 minutes. Cool before filling.
CARLA'S CLASSIC PIE DOUGH
My go-to formula will give you a buttery no-fail crust. For the flakiest results, make sure all the ingredients are cold.

Steps:
- Dissolve the sugar and salt in 1/3 cup water and chill until cold.
- Pulse the flour and butter in a stand mixer until the mixture looks like coarse meal with some pea-size pieces. Add the water all at once and mix until the dough almost forms a ball. Divide the dough in half and flatten into two disks.
- Wrap each disk tightly in plastic wrap and chill until firm, at least 30 minutes or up to 3 days. You can freeze the dough for up to 3 months. Thaw overnight in the refrigerator before rolling.
COOKIE PIE CRUST
This looks good; haven't tried it yet, but it looks good! This is from the Inn and Shadow Lawn Bed and Breakfast in Rhode Island.

- Cut in butter.
- Stir in egg yolk and vanilla; mix till blended.
- Press evenly into pie pan.
- Bake at 400 degrees F about 10 minutes, or until golden brown.

CHOCOLATE CREAM PIE WITH COOKIE CRUMB CRUST
A little more complicated than my usual chocolate pie but so good! Originally found in Woman's Day magazine many years ago.

Steps:
- Heat oven to 350ºF.
- Have a 9 inch pie plate ready.
- Crust: Mix cookie crumbs, sugar and vanilla in a bowl.
- Stir in melted butter until crumbs are evenly coated.
- Press evenly over bottom and up sides of pie plate.
- Bake 8 minutes or until set.
- Cool completely on a wire rack.
- Filling: Mix sugar, flour, cornstarch and salt in a medium size saucepan.
- Whisk in 1 cup of the milk until smooth.
- (Make sure whisk reaches inside bottom edges of saucepan.) Whisk in remaining 2 cups milk.
- Bring to a gentle boil and cook over medium heat, whisking constantly, 9-10 minutes until thick.
- Remove from heat.
- Whisk egg yolks in a medium size bowl.
- Whisking constantly, gradually add about 2 cups hot-milk mixture to yolks.
- Pour this back into saucepan and simmer 2 to 3 minutes, whisking constantly, until slightly thicker.
- Remove from heat.
- Add chocolate, butter and vanilla and stir until chocolate and butter melt.
- Pour into a bowl.
- Place plastic wrap or waxed paper directly on surface to prevent skin from forming.
- Let cool about 30 minutes.
- Stir filling, then pour into prepared crust.
- Cover as before and refrigerate until set, at least 2 hours or up to 3 days.
- Just before serving, garnish with whipped cream and sprinkle by stirring it through a strainer.

YUMMY CHOCOLATE OR GINGERSNAP COOKIE CRUMB PIE CRUST
Very easy pie crust to put together. Use either chocolate wafers or gingersnaps, depending on your need.

- Preheat oven, 350 degrees.
- Process cookies in food processor until crumbed. (Can use blender or rolling pin filled with cookies in Ziploc bag.).
- Mix crumbs, sugar, vanilla, and butter.
- If desired, reserve 2 tablespoons of crumb mixture for garnish.
- Press mixture firmly and evenly against bottom and side of 9-inch pie pan.
- Bake 10 minutes. Cool.

- 1. In a small sauce pan heat milk up , just to the point of boiling but DON'T BOIL.
- 2. Beat the eggs in the top of a double boiler pan. To the beaten egg yolks , beat in the sugar , salt , cornstarch and butter and scalded milk.
- 3. Cook over boiling water in a double broiler pan until thick ; stirring constantly ; remove from the heat and add the vanilla and sliced banana's.

GINGERSNAP COOKIE CRUMB PIE CRUST
This cookie crumb pie crust is for pie fillings that don't require baking. Jell-O offers a plethora of recipes that are simply folded into a crust, chilled, and served. The crust is excellent for pumpkin, sweet potato, and key lime pies. Recipe #401203, is awesome served as a pie in this crust. Just double the dip recipe, fold it into this baked and cooled crust, and serve immediately.

- Preheat the oven to 375 degrees.
- Pulverize the ginger snap cookies in a food processor if you have one, if not, you can crush them with a rolling pin.
- Combine the first three ingredients and mix well.
- Using your fingers, press the mixture into the bottom and up the sides of a 9 inch pie pan.
- To smooth and pack the crust, place another 9-inch pie pan down into the crust (as if you are stacking the pans) and press firmly.
- Brush the crust with egg white. (optional).
- Bake about 10 minutes at 375° or less. Watch closely as you do NOT want to overcook this crust.
- Remove from the oven and cool before filling.
- Goes great with my Super Easy Pumpkin Spice Dip recipe, or any pumpkin, sweet potato, or key lime pie that does not require baking.
