1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
1 medium yellow onion, finely chopped
4 tablespoons olive oil, divided
1/3 cup thousand island dressing
3 slices American cheese

Steps:

  • First, start caramelizing the onions: heat 2 tablespoons oil in a large skillet over medium heat for 1-2 minutes. Place the onions in the skillet and let cook, without stirring, for 5-8 minutes, until the bottom sides have started to brown. Once the bottom sides have started to brown, reduce the heat to low and continue cooking, stirring occasionally, until the onions are thoroughly browned, about 20 minutes.
  • After the onions have been cooking for about 15 minutes, start cooking the potatoes. Heat remaining 2 tablespoons oil in a separate skillet over medium heat for 1-2 minutes. Add potatoes and cook, covered, until the potatoes are easily pierced with a fork, about 15 minutes. Stir occasionally.
  • Stir the Thousand Island dressing into the potatoes and stir gently to coat. Tear each slice of cheese into four pieces and place on top of the potatoes. Place the lid on the skillet and cook 1-2 minutes, until the cheese has melted.
  • Top with caramelized onions and serve.

½-1 tsp chilli flakes
1 tsp turmeric
1 tbsp coriander seeds
1 tbsp cumin seeds
4 tbsp vegetable oil

Steps:

  • Heat oven to 220C/200C fan/gas 7. Boil the potatoes for 5 mins. Drain well, place back in the pan, cover with a lid and shake vigorously to lightly roughen up the edges.
  • Meanwhile, grind the spices using a pestle and mortar until lightly crushed, then mix with the oil. Put the spice mix in a roasting tin and place in the oven to heat up. 2 cups water
2 cups granulated sugar
3 lemons, zested then juiced (save roughly 1 cup lemon juice)
1/2 cup freshly chopped mint

Steps:

  • Combine water and sugar in a medium sauce pan over medium-high heat until mixture comes to a full boil, stirring occasionally.
  • Remove from heat and let cool, at least 10 minutes.

8 ounces chopped baby carrots
32 ounces low-sodium low-fat beef broth
1 (6 ounce) can tomato paste (add more for thicker base)

Steps:

  • The first step to making this delicious stew is to chop the carrots into bite-sized pieces. The next step is browning the bit-sized cubed beef until cooked all the way through in a skillet on medium heat; don't drain any of the grease, you will use this to brown the Simply Potatoes. After the meat is brown, you will then place it in a container to the side, then put the Simply Potatoes Diced with onions in the skillet and cook until brown, on medium heat.
