6 cups Simply Potatoes Homestyle Slices
1 cup heavy cream
1/2 teaspoon salt
1/2 cup chicken broth
1 1/2 cups shredded cheddar cheese

Steps:

  • Arrange layer over potatoes in greased casserole dish.
  • Sprinkle with salt.
  • Repeat layering, ending in potatoes.
  • Mix cream and broth, pour over potatoes.
  • Sprinkle cheese over top and cover dish with foil.
  • Preheat oven to 400 degrees and bake for 30 minutes.
  • Remove foil and continue baking for another 10 minutes.

4 tablespoons extra virgin olive oil
1/2 small onion, grated
0.5 (20 ounce) package Simply Potatoes® Shredded Hash Browns
2 large eggs, beaten
3/4 teaspoon kosher salt

Steps:

  • Preheat oven to 425 degrees F. Place 1 TBSP olive oil in each of 4 (6 oz) glass custard or baking cups and swirl to coat. Place baking dishes on a cookie sheet and place in the heating oven while while you prepare the rest of the ingredients.
  • Combine Simply Potatoes Shredded Hash Browns, Grated Onion, Eggs and Salt in a mixing bowl. Divide potato mixture evenly among the preheated prepared baking cups.
  • Bake at 425 degrees F for approximately 45 minutes until golden brown and crispy. Remove from oven and allow to rest for one or two minutes. Run a knife around each cup and invert on a serving plate. Serve warm.

2 -3 tablespoons olive oil
1 small onion, diced
2 garlic cloves, diced
2 tablespoons capers, drained
1 tablespoon hot pepper flakes

Steps:

  • Put olive oil in medium fry pan.
  • Add onion, cook on low heat till translucent.
  • Add garlic, cook for few minutes.
  • Add hot pepper flakes, mix well.
  • Add capers, mix well.
  • Add Simply Potatoes, mix and cook on low heat till hot.
  • Serve with chicken or any type of meat. Delicious!

  • Combine all the ingredients.

3 tablespoons olive oil
4 shallots, sliced
1 pound tart apples, cored and cut into 1/4-inch pieces
2 tablespoons grated fresh ginger
1 lime, zested and juiced
¼ teaspoon red pepper flakes, or more to taste
¼ teaspoon ground cayenne pepper, or more to taste
2 quarts chicken broth
2 (15 ounce) cans sweet potatoes, drained
½ teaspoon salt, or to taste
1 lime, cut into wedges

Steps:

  • Heat olive oil in a large soup pot over medium heat; cook and stir shallots in the hot oil until soft, about 3 minutes. Stir apples, ginger, zest from 1 lime, red pepper flakes, and cayenne pepper into the pot. Reserve lime juice. Cook and stir mixture until apples are very soft, about 15 minutes.
  • Pour chicken broth into pot; add sweet potatoes and salt. Cover and bring to a boil. Reduce heat to low and simmer for 10 minutes. Puree soup with an immersion blender until smooth. Stir reserved lime juice into soup. Garnish with lime wedges to serve.

1 lb small shrimp
1 medium yellow onion
1 tablespoon minced garlic
1 tablespoon butter

Steps:

  • 1. Step 1: Chop onion (not finely).
  • 2. Step 2: Melt butter in frying pan.
  • 3. Step 3: Add onions saute until soft (not browned), then add garlic and continue to saute.
  • 4. Step:4 Add Simply Diced Potatoes and cook as directed on package add shrimp after 8 minutes. Cook dish an additional 6-8 minutes until shrimp is cooked thoroughly.
  • 5. You can also add your favorite marinara or spaghetti sauce for a different flair. Not to much that it makes it soupy but enough to coat the dish or sauté some green peppers too.

2 large eggs, beaten
3/4 cup shredded parmesan cheese
24 fresh basil leaves
1 cup diced roma tomato

Steps:

  • Preheat oven to 425 degrees F.
  • In a medium bowl, combine potatoes and beaten eggs. Using a tablespoon, spoon into 12 potato cakes on a non-stick cookie sheet. Bake at 425 degrees F. for 8 minutes.
  • Remove from oven. Turn potato cakes. Return pan to oven and bake for 4 minutes. Remove from oven.
  • Preheat oven to broil.
  • Mound one tablespoon Parmesan cheese on each potato cake. Place under the broiler and broil for 3 minutes. Remove from oven. Cool on pan for 3 minutes.
  • Place 2 basil leaves over the cheese on each potato cake, then top with diced tomatoes. Place on serving platter and enjoy!
