10 lbs lean ground beef
2 lbs onions, chopped ¼ inch dice
1 lb green bell pepper, diced small
10 eggs, lightly beaten
5 tablespoons salt
1 1/2 tablespoons pepper
1 1/2 quarts canned diced tomatoes
2 1/4 cups cracker crumbs
1 1/2 cups ketchup

Steps:

  • Place all ingredients in a very large bowl and mix thoroughly.
  • Place in 3 loaf pans and press down with spoon.
  • Bake at 300°F for 60 minutes.
  • Remove from oven and invert each loaf over 8-inch wire rack to drain grease and juice.
  • Spread ½ cup of ketchup over each loaf.
  • For a delicious variation, use my Banana Ketchup - Recipezaar recipe ID# 24945.
  • Cut into portions 5 to 6 ounces each and keep warm.

2 pounds lean ground beef
1 small finely diced onion
1/2 cup finely diced bell pepper (optional)
1 1/2 sleeves of crushed Ritz crackers (48 crackers total)
4 oz. shredded sharp cheddar or Colby cheese
3 eggs
1/2 cup milk
1 tsp. salt
1/4 tsp. black pepper
1/2 to 3/4 cup ketchup
2 tbsp. brown sugar
1 tsp. mustard

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • In a small bowl, combine the ketchup, brown sugar, and mustard. Place to the side. This will be used later as the topping.
  • In a large bowl, combine the eggs, crushed Ritz crackers, cheese, milk, onion, bell pepper, salt and black pepper. Mix well.
  • Add in the ground beef. Mix well just to combine. Do not over mix.
  • Form into a loaf and place inside a baking pan or baking sheet lined with foil or parchment paper.
  • Bake at 350 degrees Fahrenheit for 30 minutes.
  • Remove from the oven and spread the topping over the meatloaf.
  • Bake for an additional 30 to 40 minutes or until the center is 160 degrees Fahrenheit.
  • Let it cool for 15 minutes before serving.
  • Enjoy!

My savory and satisfying Cracker Barrel meatloaf is the best meatloaf recipe you'll make all year! The meatloaf is perfectly seasoned, super tender from the addition of shredded cheese, and topped with a delicious glaze that'll knock your socks off!

1 1/2 lbs ground beef ((lean 85%))
1/2 cup yellow onion ((finely diced))
1/4 cup green bell pepper ((finely diced))
3 eggs
4 oz sharp cheddar cheese
1/4 cup whole milk
Ritz crackers ((2 sleeves))
1 tsp each, salt & pepper
1/2 cup ketchup
1/2 cup brown sugar
1 Tbsp yellow mustard
1 tsp Worcestershire sauce

Steps:

  • Preheat your oven to 350°F (176°C).
  • In a small bowl combine the glaze ingredients, whisk till smooth. Set aside for later.
  • In a large mixing bowl add the ground beef, onion, green pepper, eggs, cheese, milk, crushed Ritz crackers, salt, and pepper. Using your clean hands thoroughly combine all ingredients.
  • Place meatloaf mixture onto a baking sheet lined with parchment paper and form it into a loaf shape.
  • Bake at 350°F (176°C) for 30 minutes, remove from the oven and apply the glaze over the top of the meatloaf.
  • Return your meatloaf to the oven and continue baking for 30 minutes or until the meatloaf is 160°F (72°C) when the temperature is checked in the center of the loaf.
  • Remove from oven and allow to rest for 10 minutes. Slice, serve, and enjoy!

1/2 teaspoon dried thyme
1/2 teaspoon black pepper
Mustard Glaze, recipe follows
1/2 cup mustard
1 tablespoon brown sugar
1/4 teaspoon cider vinegar

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Combine all ingredients in large mixing bowl and mix for about ten minutes. Place meatloaf into loaf pan and cover with Mustard Glaze. Cook for 1 1/2 hours.
  • In a small bowl, mix all the ingredients together.
