TURKEY SLIDERS WITH SWEET POTATO "BUNS"

- In a large skillet, cook bacon over medium heat until crisp; drain on paper towels. Discard all but 2 tablespoons drippings. Set skillet aside. Combine bacon with next 8 ingredients until well mixed; cover and refrigerate at least 30 minutes., Preheat oven to 425°. Cut sweet potatoes into 20 slices about 1/2 in. thick. Place slices on an ungreased baking sheet; bake until sweet potatoes are tender but not mushy, 30-35 minutes. Remove slices; cool on a wire rack., Heat skillet with reserved drippings over medium-high heat. Shape turkey mixture into slider-sized patties. Cook sliders in batches, 3-4 minutes on each side, taking care not to crowd skillet. Add a pinch of shredded cheddar after flipping each slider the first time. Cook until a thermometer reads 165° and juices run clear., To serve, place each slider on a sweet potato slice; dab with honey Dijon mustard. Cover with a second sweet potato slice. Pierce with toothpick.

Steps:
- Mix together in a bowl one 20 oz. package of Simply Potatoes Southwestern Style Shredded Hash Browns, one 16 oz of package of ground turkey, and one egg in a mixing bowl. Mix by hand and form into 10 round balls, and then flatten into patties for grilling or frying in a non-stick pan.
- Preheat grill or non stick pan on medium high heat. Cook 5 to 8 minutes on each side until golden brown, top each pattie with one slice of favorite sliced cheese,( i use swiss or cheddar cheese) let cheese slightly melt, remove from pan and place on bun and serve.
- Use the Simply Potato Southwestern Shredded Potato, Turkey & Cheese Slider as either appetizer, as a great addition to tailgate food or as a main dish for a meal.

LEFTOVER THANKSGIVING PULL-APART SLIDERS

- Combine the gravy and turkey in a medium saucepan and set over medium heat. Cook, stirring occasionally, until the gravy is hot and bubbling, 3 to 5 minutes. Turn off the heat, cover and set aside.
- Put a rack in the center of the oven and preheat the broiler.
- Split the attached dinner rolls in half horizontally, keeping them attached. Put the top and bottom halves cut-side up on a baking sheet. Cover the bottom half with the stuffing. Broil until toasted, 1 to 3 minutes.
- Preheat the oven to 400 degrees F.
- Spread the cut side of the roll tops with cranberry sauce. Cover the stuffing with mashed potatoes, then use the back of a small spoon to make 12 wells (1 for each slider) in the potatoes. Spoon the turkey and gravy into the wells (it will spill over the wells but this is okay) then cover with overlapping slices of provolone. Cover with the roll tops, then brush the tops with the melted butter. Sprinkle with flaky sea salt.
- Bake until the bread is toasted and the cheese is melted, 10 to 12 minutes. Serve immediately.

- Measure potatoes into a medium mixing bowl. Add pancake mix and mix well. Add beaten eggs and dill and stir to combine thoroughly. Allow to sit for 5 to 10 minutes. Measure one teaspoon of cream cheese and roll into a ball about the size of a marble. Using hands, scoop about a tablespoon of potato mixture and coat cream cheese ball so that it is completely covered with potato mixture. Form into a ball using gentle pressure just so potatoes stick together. This is a little messy, but kind of fun! Gently drop a few at a time into hot oil (350 degrees) with a slotted spoon and fry until golden, about 3 or 4 minutes each batch. Drain on paper towels. Allow to cool a little as cheese inside gets very hot!

- Preheat oven to 400 degrees.
- In a flat microwave safe dish put Simply Potato Shredded Hash Browns. Cover and microwave for 5 minutes. Stir and continue microwaving UNcovered another 3 minutes. Remove from microwave and stir in 1/3 cup of the Sundried Tomato Dressing. Toss until well blended. Set aside to cool.
- Into a 9x13 in.baking dish pour 1/3 cup Sun Dried Tomato Dressing and spread to cover the bottom.
- On a cutting board lay one piece of the steak. Lay 2 ½ to 3 slices of the cheese end to end on the meat, cutting cheese to fit. Spread one fourth of the potato mixture over cheese. Roll up steak and secure with toothpicks. Slice rollup with a sharp knife into 4 equal portions (about 1 ¼ inch each). If necessary add more toothpicks to secure. Carefully lay each rollup into the prepared pan. Repeat with remaining steaks. Spread or brush 1 teaspoon or more of the remaining dressing over top of each rollup.
- Bake for 10 minutes. While meat is baking cut remaining four slices of cheese into fourths making 16 quarters. After 10 minutes remove pan from the oven. Place a piece of the cut cheese on top of each rollup. Return to the oven for 5 minutes or more until cheese is melted.
- Remove pan from the oven and let cool a few minutes. Carefully remove toothpicks. Slide a spatula under each rollup and put on a warm platter. Scrape up any potatoes and drippings from pan and add to the serving platter or over tops of the rollups. Sprinkle fresh chopped parsley over tops of rollups. Serve warm. Makes 16 rollups or 4-5 servings.

- Heat oven to 400 degrees.
- Cook bacon, cool, and crumble. To a 12-cup muffin pan, add equal amounts of bacon grease to each muffin cup.
- To a medium bowl, add the hash browns and gently blend in 1 1/2 cups of the shredded cheese. Press about 2 tablespoons of the hash brown and cheese mixture into each muffin cup. Bake in oven for 18 - 20 minutes or edges are crispy.
- While hash brown cups bake, peel film at corner of mashed potatoes and heat on high for 3 minutes in microwave. Remove from microwave and stir.
- Remove hash brown cups from the oven. Spoon in equal amounts of mashed potatoes. Top with equal amounts of remaining cheese and place under broiler for 5 minutes or bake in the oven until cheese is melted.
- Top each cup with green onions and bacon and serve. Enjoy!

- Spray a 12x17 baking sheet with oil spray. Spread the shredded potatoes evenly on baking sheet. Bake for 10 minutes. Using a flat spatula flatten potatoes firmly against sheet and bake for 10 more minutes. Then broil on low for 5 minutes or until hash browns are lightly browned and crispy.
- Make 12 thin square pork patties. Season both sides of the patty with seasoned pepper. Using a griddle or non-stick pan, brown patties over medium heat for about 4 minutes on each side. Place cooked patties on paper towels and top each with two small squares of Havarti cheese.
